Good morning, wanna. Thanks for the welcome.
I really love what I do. There are days that are just like any other day, go in and do your job without much happening---but then there are the other days that are WOW! Yesterday was definitely a WOW day! I spent a lot of time looking around here last night. There's a lot of good stuff on here. I went into the recipes section and realized that a co-worker who is also following Atkins uses this site, for recipes anyway. She gave me a few of the recipes I saw. I couldn't get into some of the sections and not sure why. I was looking at the FAQ and went into the PM section, but said the administrator has disabled it. Also, the who's online. Not sure why. Well, time to go get some breakfast. I'll be back later.

Thanks...I'm sure I'll be posting away. It's not even 24hrs yet and I already have 22 posts.
Just realized this AM that I've been making a recipe from here for breakfast every now and then. Better Than McGriddles is on the recipe board here. I kind of changed it a bit. Left out the splenda and this AM added a tsp of pumpkin and some pumpkin pie spice to it. Came out really good. Topped it with a little heavy cream whipped with some pumpkin pie spice and a little SF maple syrup....mmmmmm. And now I have breakfast for 2 more days. I freeze what's left over and take them out when I want. Going to see what's going on around here. |

It is so great to get to know more about you! You know, so many times we post together, but I never get the 'origins' of people, and I don't know as much about them as I would like to. Your post in the main forum is wonderful, and lets me know even more about a person who I already knew was pretty special.

No problem...I've got a great recipe for Cauliflower Au Gratin that I made at Christmas. The family members who were eating it thought it was scallped potatoes! Let me know if you want that, I'll post it for you.

Here it is:
Cauliflower-Goat Cheese Gratin 1 head cauliflower, cut into florets 2 Cups heavy cream ½ lb Monterey Jack cheese, coarsely grated 2 Cups grated Parmesan 6 ounces goat cheese cut into small pieces Salt and pepper to taste Preheat oven to 400 degrees F Layer the cauliflower, heavy cream, and the 3 cheeses in a medium casserole dish. Season with salt and pepper. Roast for 20 – 30 minutes or until the cauliflower is soft and the sauce has thickened slightly. Remove from oven and let rest for 10 minutes before serving. I've also added some chopped onion. It's really good. Enjoy! |

We usually have snow on the ground by this time of the year, so this is great! I'm really happy that it's this warm. I don't like the cold weather at all.

Well, went to Wal-Mart to get some food for the pooches and saw some coffee that sounded sooooooo good. It's Carmel Truffle---and they had decaf
so I had to buy some. Just got home and made a cup...yes...it is as good as it sounds! Had dinner out tonight. Went to a local restaurant. Had the grilled chicken, mixed veggies and a salad. Not too bad...best part is we didn't have to cook or clean up. Have to get my workout in. I've got to wait a bit. I'm supposed to do Cardio Party 2 from Turbo Jam tonight so better let my dinner digest first or I'm sure there will be trouble . Drank all of my water today, eating was on track, exercise will be in about 40 minutes or so. Going to go look around and see what's going on here. I'll check in later.
