Just thought I would post here to keep things a bit more organized and carve out my little area just for me. Started today to clean up my eating. I am following South Beach / Protein Power with a TINY hint of Atkins. Just eliminating white flour and white sugar all the way around though.
I have been doing a lot of reading in my South Beach book and it really makes a lot of sense. I think that good carb to low carb diets are the way to go.
* WHOLE FOODS * NO WHITE SUGAR * NO WHITE FLOUR *
Low fat/high carbohydrate makes me feel so hungry. Yes, you can probably lose some weight starving but REALLY that is not what I want to do long term. I want to learn to eat for the rest of my life!
Breakfast: Eggs cooked in Pam, 1 slice cheese, 3 orange pepper sticks, salsa
Snack: Sugar Free French Vanilla non-fat latte with tons of ice
Lunch: 1 Small chicken breast sliced w/hot wing sauce (zero sugar), 6 pepper sticks, 1 Tbsp. of SB friendly Kraft Blue Cheese Dressing, 1 piece of cheese

Dinner tonight will be either Salmon Burgers from Costco or Crabcakes made with egg, seasoning, green onion, green pepper diced and MAYBE a bit of smashed pork rinds. I have some in the pantry but not sure if I want to eat those since they are not a good choice. I think what I will do is try the crab cake WITHOUT and see if they hold together - if not I will add no more than 1/4 cup crushed pork rinds for all of them.
Cauliflower or green beans will be the veggie on the menu tonight!
Going to be creative with making the meals this week since we are not going grocery shopping until this weekend.
Since we are going this weekend that will give me some time to look at some recipes. I want to get some good crock pot recipes. Possibly some quiches and maybe some soups - I want to see what the options are with South Beach since that is the direction I am leaning the closest to for my plan.
