Moonchild's "Low carb Journey through a deep fried world"
This will be my first real journal. I plan to be very open and honest here so it may be brutal. But I think this will be great for me for my own accountability. I hope to be able to include some pix soon and perhaps I will write a few poems.
I would dearly love it if some of you would read my journal and have a looksee occasionally at my fitday entries so you can give me tips regarding what I may need to change. After I finish writing this, I will change my signature so it will have my fitday link in it. Here it seems everything is breaded, deep fried, and smothered in gravy! As if fried chicken isn't bad enough for you, us southerners take it further and make smothered fried chicken (fried chicken with a lot of starchy, greasy, brown gravy on top. Delicious ... but deadly! I recall years ago when a doctor told me to eat more veggies. I told him I eat a lot of veggies ... my prob is that I want half a hog mixed in them. LOL ... so funny that now it turns out I do better if I eat that hog and leave out those veggies. I finally got some keto sticks today. I am in dark purple!!!! I was getting depressed because my scales show no loss after 2 weeks with this woe. But I guess since it is dark purple ... I should be burning fat. (God I hope so). I have noticed a bit more energy lately. That is a great thing because I usually have very, very little due to some health issues. I have actually gotten up and down all day with way less pain than I usually have. That is saying a lot because just yesterday I wet myself trying to walk to the bathroom on what felt like broken bones in my feet. I am full of happiness today!!! Oh yeah .... I drank only water today except for 1 cup of coffee. Great accomplishment for me since I have always hated plain water. Today I loved it so much that the one time I tried to have a glass of iced tea ... it seemed gross to me. Weird how the mind works. I look forward to the encouragement and tips. Together, we can make this work for all of us!!! Lynn

I have started the day off well this morning. I prepared omelets for DH and myself. Mine was made with:
2 eggs 1oz. of hot pork bulk sausage, browned and chopped fine 1 oz. chipotle cheddar cheeze 1.5 tbls hot salsa (as a topping) It was AWESOME! B = 336 cal, 25g fat, 3g carb, 21g protein What an average breakfast would've been if I hadn't changed my ways: 2 eggs, fried om 1.5 cups grits with butter 3 slices bacon 2 slices well-butered toast That breakfast would have been: 1068 cal, 74g fat, 70g carbs, 29g protein HUGE DIFFERENCE! Oh my ... 70g carbs just for breakfast! And if it were Sunday, there would have been pancakes also. Well, I have decided after looking at the difference above that I will no longer be eating that way again! If family and friends don't understand my new way of eating ... well .... they can just "KISS MY GRITS" they may as well, cause I ain't eatin 'em! :-) I thought that may be a bit rough for me since I was raised on grits and absolutely love them. But you know what? With all the flavor I had in my breakfast this morning ... I'm not missing a thing. For me, it is important to have many different flavors now. Have to really tempt those taste buds. I have to watch my intake of salsa because of all the sodium but I tell ya ... I could eat it on just about anything. And a small can is available for only .57 cents at Walmart in the Mexican food section. It tastes way fresher than any other salsa I have had other than home-made. I would just make it home-made so I can keep the sodium low but the cherry tomatoes (they have all the flavor) are expensive and I couldn't eat them all before they went bad. I think I will consider making the whole container into salsa though and freezing it in a seal-a-meal bag. Hmmmm 3 days and no poo :-( Have taken 6 bulk fiber psyllium husk pills since last night. Hopefully soon .... |

I am up half the night usually so my days look off on these to y'all most likely. Like this post will say the 12th but everything in it is for the 11th.
After that wonderful breakfast, I was satisfied until about 2pm. For a late lunch I prepared a spinach casserole: 4 whole lg. eggs 1/2 cup heavy cream 4 - 6 oz shredded cheese (I prefer the 4 cheese blend) 1 can spinach - drained (I believe that is about 1.5 cups ... I forgot to measure it) 2 oz. real bacon bits black pepper (optional) I beat the eggs and cream together, and poured into a 2-qt casserole dish. I then stirred the other ingredients. Cooked at 325 degrees for about 35 minutes. I was in heaven! Before I knew it I had eaten half the casserole!!! .... okay I am supposed to be honest ... I knew what I was doing. After 1 lg serving, I knew I shouldn't have more ... should wait and have a chix breast and a small salad at dinner .... but I kept being drawn to it. I would get just a tbls. of it ... then another tbls. .... then another. By the time I was done ... half of it was gone. :-( I try to have restraint ... I really do. I may just be rationalizing, but I told myself it was better than pigging out on doughnuts or potatoes or some other deadly food. Several have told me to up my veggies but I was afraid of the extra carbs. I wasn't positive about this whole "deduct the fiber from the carbs" thing. It scares me. But, I decided to go for it. If it really doesn't hurt, then today's 19g carbs (I usually stay at 15 or less) is really only 13g carbs because I had 6g fiber. I don't know if it is a fluke or not .... but I feel so much better! I have been bending my right knee all day with very little pain. :-) I am even planning to keep the car today so I can go to Walmart and buy a few groceries and my vitamins. Oh no!!! The skies just opened up and it is pouring rain outside! I pray that won't make my knees flair up and prevent me from doing what needs to be done. I will go ahead and take some Ibuprofen now. I drink nothing but water today until now. I am having a cup of organic nighty-night tea. I fear I am drinking it too late though. I had planned on having it by 9pm so I could have another around 10pm in hopes I would get some good sleep. Then again, since it is raining it will prob be best if it would just let me get 3-4 hours of good, restful sleep. If I sleep longer than that during the rain, my neck and head hurts almost like a migraine when I first get up. I have been blessed lately though so maybe another blessing is on its way. I may sleep for hours and wake up pain free! :-) Disappointed that nobody is interested in helping to encourage me in my journal. But, I keep telling myself I am doing this for me ... and for my own well-being. I have to learn to love me! Some of my strange thoughts that have bothered me in the past seem to be coming around fewer and fewer the last few days. Quite often I have visions pop in my head of me just grabbing a knife and cutting away at my fat. My head tells me that then I would go to the er and they would sew me up and the fat would be gone! I know that isn't rational, and I pray to God I never go off the deep-end and do something crazy like that. Hopefully, it is just a crazy thought and one can't help what they think ... only how they act. Oh yeah ... I didn't eat any supper. I was still stuffed from the spinach casserole. I know it isn't good to skip meals, but I don't think it is good to eat when you aren't hungry either. The old me would eat anytime ... even if I was full. Now I just have to learn portion control (at least a little) so I won't stuff myself so much at one meal that I have to skip the next. Y'all have a blessed day! Hi Lynn,
Your menus all look and sound quite yummy!!! I am so lazy about measuring and logging my food. I just hate weighing, measuring etc. Casseroles are my biggest downfall too because of portion control so I try to stay away from casseroles. Keep up the good work Lynn....we look forward to following your success ![]() |

It helps more than you know. Well, actually ... I guess you do know because you have been there also. :-) Well, today I kept the car. I took DH to work, spent 3 hours at Walmart (walked the whole time), paid the internet bill in person instead of calling it in, went to the bank, shopped about 30 minutes at the Dollar Tree (went there for olive oil). WOW! That is a great accomplishment for me!!! I am usually bound to the house because a great portion of the time I can barely get out of bed due to my joints. However, I force myself out of it as often as I can. Usually, the 1-2 times I go grocery shopping per month ... I shop as quickly as is possible and by the time I get home ... I hurt so much and cry myself to sleep. It can bring me down for several days from swelling. HOWEVER, today was great!!! I just got home a little while ago. I slipped off my shoes and found my right foot and ankle had only swelled up a few inches and my left swelled barely at all. I am sitting here and I feel no throbbing at all. My lower back is in a little distress but nothing like I usually experience. I am hoping it isn;t a fluke and that perhaps things just may start to be easier on me. What a glorious feeling! People who can bend and flex and .. .well ... just function "normally" .... just don't realize how grateful they should be. Right now I may not be in great health, but I feel so wonderful in comparison to my usual feeling. I have always told DH that for me a migraine is the worst pain in the world. I remember being around 8 or 9 and having a severe migraine. I would pray to God to PLEASE kill me. Just let me die and take away my pain. (Now you know why I said "unanswered prayers' are a good thing sometimes. I would tell him that if he was ever going to take me then take me now. I prayed this so often in my life. Anyways, the reason I mention this is because ... after the migraine was finally over ..... there is such a peaceful, euphoric feeling that comes over me. I guess it is because of the severity of the pain before and then suddenly ... nothing! Okay, if anyone is reading this ... you will think I am nuts for saying the following ... but that is okay ... I am a bit nutty. :-) I LOVE TO PEE! Ha ha. Let me explain. So often I have the urge to pee and I will make it to the bathroom and there is an okay amount but nothing to write home about (okay ... I would never write home about any amount). However, with all this water I am drinking ... whew! You know how great the first pee in the morning is? Well I get that every time right now and I am loving it!!! It just makes me feel like I am finally getting rid of some of the toxins in my body. Am I making any sense at all? I am going to try a new recipe tonight. I found it at Linda's site and it is called: CHICKEN AND STUFFING QUICHE The picture she has of it looks scrumptious! Of course there is no bread/cornbread stuffing in it ... but it looks like there is. I plan to add sage to it (can't have stuffing w/o sage). Later today when I write my menu, I will let you know if we liked it. My taste buds are fired up and ready for it!! Oh yeah! I almost forgot to mention that the Columbo Yogurt Shoppe is now selling health food and other health products. So, I went there today also. Boy, I put in some walking today. I bought some Xanthan Gum so now I can finally make my clam chowder again. I made some the last time I tried Atkins. The great flavor was there but since I couldn't thicken it, it wasn't the same so I never made it again. Now I can thicken it with the Xanthan Gum so I will have to let you know when I make it again if it is like real clam chowder. God Bless and thanks to you all :-) We can do this ..... together! Moonchild i love your diary you have a gift i love the way you write honest and to the point

I hear ya about the peeing...at work I am glad I sit somewhat close to the ladies room. Co-workers know if I am not at my desk good chance I am in the ladies room!!!! Let us know how the quiche is...I hadn't seen that recipe... Hopefully as you lose more and more you will feel that much better...talk about incentive to stay on plan. Keep it up Lynn |

tempted_by_food, I am very glad to hear you have more pep now. It is so nice not to feel so tired all the time. I hope this lasts ... for all of us! I am glad to hear you don't take your good heath for granted. Those who live virtually pain free are blessed beyond comprehension. Diane .... glad I am not alone in the peeing department! DH and I both LOVED the new recipe. I am going to post it below so you can see how I made it. The only ingredient I added that was different was the sage plus I added an extra tbls onion. Oh yeah ... and I used canned mushrooms instead of fresh. However, I don't see how it was supposed to all fit in a pie plate ... not even in a really large pie plate. It could definately fill up 2 of them! I used a round 2 qt. casserole dish.Chix & "Stuffing" 2 cups diced cooked chicken 1 pound pork sausage (I used the hot 'cause I like spicy) 1 large stalk celery (chopped) 3 tbls. chopped onion 1 small can mushrooms, drained (I used chunky portabello) 4 lg. eggs 1/2 cup heavy cream 8 oz. Monterey Jack cheese, shredded 1/2 teaspoon salt (I didn't add any) 1/4 teaspoon pepper 1 tablespoon fresh parsley, minced, optional (I didn't add any) 1/4 - 1/2 tsp sage (depends on taste. I start with a small amount, taste the mixture and then add more as needed). Brown the sausage with the onion and celery; drain well. Add sage and mushrooms. Place in a 2 qt. casserole dish. Mix in chicken and cheese. Beat eggs, cream, seasonings and parsley, if using. Pour evenly over meat mixture. Bake at 350º 35-40 minutes until set in the center and nicely browned. Let stand 10 minutes before serving. I scooped it with a large serving spoon just like regular stuffing because this was more a casserole than a quiche. Per 1 cup serving: Cals: 455 Fat: 36 Carb: 1 Protein: 27 (according to fitday). When my casserole was done, there was too much grease that had gathered in the center at the top. So, I blotted with a few paper towels and then put aluminum foil around the edges so they wouldn't burn. I then put the dish back in the oven under BROIL for just a little bit. Keep an eye on it so it doesn't burn. Then, when I took it out, I blotted once again. Much better. Next time I cook it, I will let the meat mixture drain longer or blot it with paper towels before putting it in the dish. It may have been oil from the cheese though (I think so because I thought I had drained it well enough). If so, then the method I used to day is the one I will still have to use. FANTASTIC! This dish was sooooooo good and I can hardly believe how much it tasted like stuffing. I plan to make it sometime w/o the chicken so we can have it as a side dish anytime in place of stuffing. DH loved it and he is a big stuffing fan! Now I have one more dish to take to Thanksgiving and Christmas that will keep me on track. No way will I miss the old stuffing!!! Naturally, we can substitute turkey instead of chicken if we wish. Btw, I broke it down into 1 cup servings because 1 cup was all I could eat of it before I felt stuffed. I still can't believe how full I got so quickly. Maybe it was because I ate so fast ... it was so good! I couldn't even eat my little salad. I had to wait 2 hours and then eat it and even then only ate the salad because I needed the roughage. Well, I fell too low on my carbs today. What do we do if we aren't hungry though? MAYBE I will have a celery stalk with peanut butter in it for a late night snack later. That should help up them a bit.SCALES MOVED TODAY! I'm not going to say how much though because I am going to wait until Monday for an official "weigh in". Glad I stuck with it and didn't give up. It was because of the support here and also because of the great recipes I have found that DH and I both enjoy so much. Gotta be honest ... if the food were bland and repetitious ... I would have run from this long ago. Thankfully, there are so many wonderful dishes to choose from now that I can't see me ever getting bored with this woe!Take Care and remember ... I love the food you have posted. I am thinking I can make some of this for christmas. You have some great ideas. I seem to get in a rut and eat the same stuff. I eat a lot of peppers and onions. I might do fine through christmas after all. Thanks

I am glad you enjoy them. If you like chicken and stuffing, you are sure to love the one above. I'm a foodie. I know I would cheat over the holidays if I didn't find foods that were similar but low-carb. Instead of regretting the holidays, this year I am actually looking forward to them! It turned a bit chilly outside today so I decided to try and make some hot, comforting Cream of Chix Soup the low-carb way. Am I ever glad I did! This is EXCELLENT! Definately not a canned soup here!!! As I often do, I found a recipe online but I tweaked it to get it the way I want it. Here is the way I made it: CREAM OF CHICKEN SOUP 2 cups chix breasts (I used leftover chix breast, shredded. You may prefer chopped) 3 cups chix broth (I used 3 cups water and added broth granules to taste. I use Maggi brand found in the mexican food section. It tastes WAY better, goes further, and is actually cheaper). 1 medium celery stalk, chopped 1 small onion, chopped dash of paprika (a little goes a long way with this soup) 1/2 cup cauliflower, chopped (I used frozen) 1 cup Heavy Cream 1 clove garlic, chopped (I buy it already chopped) 1 tsp. Xanthan Gum (thickener ... a little goes a very long ways) 1 tsp pepper (you prob won't need any salt if you used boullion to make your broth) I put the onion, celery, cauliflower, and garlic in my blender and chopped them up fine. I didn't want big chunks because then DH wouldn't eat it. He hates most veggies so I hide them from him. Put the chopped veggies, chix broth, pepper and paprika in a medium sized pot and cook until veggies are tender. Time depends on how small you got the veggies. I only had to cook mine for about 5 minutes. Add chix and let simmer on low for at least 5 minutes (I did it for 10 to give the chix more time to absorb the flavors). I mixed the xanthan gum with a little cold water (about 1/4 cup cold water). Guess what? That makes a mess. So, I put it in the blender and mixed it up well. It made a slimey glob. However, I then added it to my soup and stirred it real well and it blended right in with no lumps. Add cream. Ready to serve! Now, the way you should prob add the xanthan gum (the way I will try next time) is to sprinkle it on the veggies before you add them to the broth. That may help. I planned to do that but I forgot it. Thankfully, it worked out just great the way I did it. WHOLE RECIPE: CAL: 1511 FAT: 99 CARBS: 24 FIBER: 6 PROTEIN: 131 5 or 6 servings I didn't measure how many cups was in this. I know it has at least 5 ... possibly 6. So, when I put it into fitday, I played safe and said just 5. Chances are, the cals, carbs, etc. could be slightly lower than I have here. I know they are correct for 1/5 of the recipe which may be a little more than 1 cup.1 serving: CALS: 302 FAT: 20 CARBS: 5 FIBER: 1 PROTEIN: 26 BTW, if you are a hearty eater and want to be able to eat more of this soup but need the carbs lowered, add 1 more cup of water and a little more of the boullion. We found that the soup is filling though so we didn't need to stretch it. I tell you, if I was ever rude enough to stand over someone while I ate this soup ... and I accidently spilled some of it on top of their head ... they would beat their brains out with their tongues trying to get to it! (well ... after they recovered from having hot soup spilled on them I s'pose). Y'all take care and remember ... WE CAN DO THIS .... TOGETHER! |

I don't know why, but I haven't put them in the recipe board yet. I will remedy that situation very soon.
I do have several recipes there but you can't find them by searching my name. I think maybe the board was redone at sometime so the admins re-submitted them but gave credit to the original poster. Such as with my Bacon Cheesburger Quiche:http://www.lowcarbfriends.com/recipe...cat/all/page/1 Well, we had a HUGE scare this morning. I was scared all alone for a while because DH was still asleep when it first happened and I didn't want to wake him as he was only going to be getting 3.5 hours of sleep before getting back up for work. Anyhoo, I don't know if you recall or not, but I have been having a lot of trouble having a bm. Turns out that everyone is supposed to go at least 2x per day. I usually go once every 2-3 days. This last time, it was almost 5 days w/o a bm. I was so bloated and started getting pretty uncomfortable. Around day 2 I had started taking bulk fiber psyllium husk pills to help me along. Well, since I still couldn't go, I think the fiber was filling me up even more so! Arrrgghhh! So, I asked a pharmacist what to take and she recommended Dulcolax. I took it for 2 days and finally got some results ... but very little. Well, this morning I did have a good bm. But when I wiped I noticed what looked like blood on the tissue. I looked into the toilet and it was filled with a little poo and a lot of this bloody substance! I was horrified. Especially since my very dear FIL just recently had a prob with bleeding that nearly killed him. Then I thought ... well ... let me not panic. Maybe ... MAYBE it is food coloring. I had an ice treat made from shaved ice and a Cranberry Apple drink mix (Great Value brand ... better than Crystal Light). Now, normally, I would think the food coloring would come out in my urine. Some vitamins will do that. But I thought just maybe ... because of the extra fiber ... that the coloring was sticking to the fiber and it just looked like blood. I went 2 more times with same results. Finally, DH woke up and when I went again I had him look. When he did, he looked scared. I talked him into going on to work but to call me every break. I told him if it was still going on when he got home, that I would go to the ER and have them check it out. By the time he called on first break I had another bm and it was not bloody looking at all. Next time he called ... another bm and no blood. Also, that bm I found what appeared to be one of the psyllium capsules that didn't dissolve prop. and I used some rubber gloves to push it against the side of the toilet and was able to see it had the bloody looking stuff on it ... only now I could see it looked more like food coloring attatched to it. I was sooooo relieved! Other than that huge scare, I am feeling pretty fantastic!!! I had so much more energy today than I have felt in years. I believe it is a combination of this WOE and the multivitamin I am taking. DH and I are using One Source vitamins. They tend to make us feel more energetic (definately only take them in the a.m.) As for my joint health ... I am actually seeing results there also. I seem to have more flexibility now. I have get to back under a doctors' care soon. (I just recently decided not to use my current doc). I need to be re-evaluated because I think I am capable of some exercise now. Even if I have to wait until DH is at home incase I get hurt. LOL ... both knees are hurting right now as if they are trying to tell me to hold up there a bit. But they need to realize they are only hurting because I have been using them so much more. OH YEAH ... I was able to cook at the stove today w/o having a chair there for me to sit on!!!!! Not once did my back feel like it would cave, and not even once did I feel weak. I am deliriously happy about that! I am getting full very quickly lately. I imagine it is from the ketosis. Today I filled up on 1.5 cups of soup. And I mean FULL. I am getting hungry now so I am about to have my salad and eat the wings off a roasted chicken. I have found now that every 2-3 days I want a LOT of food. Those are the days I have to really watch my intake so I don't go too overboard. But the other days ... I fall well below my calorie and carb goals. But I think I have figured that one out .... just have a celery stick with peanut butter in it. There is a local peanut mill that just started making PEANUT POWDER. You mix the amount you want with water and voila ... real peanut butter with 75% less fat, 1 gram sugar, and lower in cals. The main reason I buy it is because of the fresh taste and the low sugar. I also like that it won't get old and have the oil seperate like jar pb does. If you are allowed bread, you can mix the powder with sugar free jello and make a pb and jelly sandwich. If you can have fruit, you can mix it with water and crushed berries. How scary was that!!! Glad it turned out okay...
As you lose you are going to start noticing lots of changes like your back not hurting...I remember not having to lean up against the counter or having to take breaks while doing the dishes. ALL of these "little" things are signs of SUCCESS..so keep working your plan |

We keep having probs with our internet lately. It went out on Friday. Was working again Saturday around 2pm but quit again saturday night around 11. Then back again sunday morning then off again last night. Back again this afternoon. The repair guy just left here so hopefully ... Sunday morning I ate 1 grilled chix breast topped with sauteed mushrooms, onions, and bell peppers and then topped with cheese and broiled till the cheese melted well. I prepared a 2-egg omelet but I couldn't eat but half of it.
For lunch all I ate was 1 cup iceberg lettuce with 10 olives. I used a little olive juice as my dressing. Dinner was a wonderful piece of grilled salmon and also a dish of shrimp scampi (10 shrimp) with a little extra garlic powder sprinkled on. I LOVE GARLIC Plus I had 1 cup of steamed broccoli with 1 pat of butter. Yummy!As you can see, I didn't do a whole lot of cooking really. As you may already know, I buy my chix already cooked (usually Tyson's) and the salmon was Gorton's. Ever try Gortons Grilled Salmon? I was never a salmon eater until the other day I tasted a piece of DH salmon and was ... WOW. Next day was when I went shopping so I bought enough for me also this time. Told DH last night that I think we should have it at least 1-2 times a week. It is good for us and it tastes outstanding. The shrimp scampi comes ready to cook. Already has the butter and seasonings on it. The Great Value brand at Walmart was 2/$5.00 (20 shrimp were in last nights package). But now they are down to only $2.12 What a bargain! The directions on the package only mentions microwave and pan-frying but I put them in the oven in their own dish right beside the salmon and they were perfect when the salmon was done (400 degrees for 15-17 minutes). I think the reason I had thought I didn't like salmon was because the few times I tried some it must have been over-cooked because it was very dry. This wasn't dry at all. Perfectly done yet still moist and tender. It is one of my new fave foods. Hmmm ... now I am wondering if I would like grilled tuna? Sundays totals: Cals: 824 Fat: 52 Carbs: 19 (net carbs 12) Fiber: 7 Protein: 73 DH ate the same things I did except he ate his whole omelet cooked with cheese, he didn't eat any broccoli or salad, for lunch he had 1 grilled chix breast and 1 cup of the leftover cream of chix soup. For supper he ate 3 pieces of salmon along with his shrimp. Man, for me not to have done much work on our meals for the day, it sure was some good eating! I almost took a picture of my dinner last night. I bought little oval shaped, oven proof dishes just for the scampi so it would look like the way they serve it at Red Lobster. So my plate had one dish of scampi on it with a serving of steamed broccoli and a nice sized prtion of Grilled salmon. Don't that sound good? |

Woman you got to get that man of your to eat some veg. I have a friend who is so proud that he doesn't eat veg and well it has caught up with him. He eats meat and potatoes and he has had some colon problems and some other things. The doctor told him this is cause he doesn't eat enough green veggies.

The part about your back not hurting is exciting! I know I have problems with that too. When I do cleaning I have to take a million breaks because of my back. It gives me hope that my back will be feeling better soon!! You go!! ![]() |
