My Journal and thoughts

First here's a little about me:

I'm a free thinking, homeschooling mom of 2 beautiful kids(6yo and 3yo). I've been married to the greatest guy in the world for 7 years who is also been struggling with his weight and doing the low carb WOL with me. We both we're fit and a good weight before baby #1 came along and then both gained a lot! I thought it was a free pass to eat anything and everything and he was right there with me!

Here is the intro I posted:

Hi. I'm a newbie poster, but have been on and off low carbing for almost a year. A family member talked me into starting Atkins induction 11/05, right after receiving the sz 18 jeans I'd ordered online, (nothing fit anymore and I was too depressed to go shopping). I realized that I was not ok with continuing to gain weight and going up sizes.

I was a size 8 before kids, around 140 pds. Well, my youngest was 2 1/2 then, so baby weight was no longer a valid excuse. I really don't know what weight I started at, I never stepped on a scale. Well, I quickly lost (I'm guessing) probably about 20 pds in about a month.

I was 174 pds and fit back into my clothes. I then discovered all the great low carb recipes and cooked all the time. I stalled for many months. I wasn't doing Atkins right. I was doing was too many "low carb" treats, like daily. OOps! Then started exercising and started to be almost happy with my body. I made it to the 150's!

I'm not sure what happened then. I guess I got too comfortable and it was summer, excuses, excuses. One cheat won't hurt, then another, then another, before I knew it, I was taking the kids out for pizza and making oatmeal chocolate chip cookies on a weekly basis. Hey, they were sugar free! Portion control has always been my problem with sweets. So, 15 pds later, here I am.

I know. You've heard it all before. This time it will be different.

Really it will.

I am tired of being unhappy with the way I look. I am tired of having no self confidence. I am tired of not feeling sexy for my husband. I'm tired of not ever feeling like I have control of my body.

I have also started sort of a spiritual quest also, because I know these feeling go much deeper than the layer of fat on my body. I have forgotten how to listen to myself and my body. I will learn again.

I guess I need to start a journal, huh? Does it help to feel accountable when you are writing everything down?

I started K/E on Tues to jumpstart ketosis. I so need the appetite suppresion and craving control. I was down 3 pounds this morning so I'm headed in the right direction. If I can only stop thinking about those darn oatmeal chocolate chip cookies.

Well I officially started on Tues, so this is day #6. I am down 5 pounds! I can already tell a difference in my face and waist. The first 3 days I did only lean meat and eggs. Friday I started adding in a few veggies and they were soooo good. I really love veggies and missed them.

Here's my goal: Continue with mostly lean meat and eggs, small amount of veggies and little to no cheese. Also, limiting the use of mayo, sour cream, heavy cream, ranch, ... I think overusing all the really fatty stuff like those and cheese does not help me lose weight.

The only thing I refuse to give up is half and half in my coffee. I still drink about 3-4 cups of flavored coffee with h&h and splenda or divincis. I wish I liked tea. Coffee is my only treat I allow myself. Before I was making low carb treats (cream cheese muffins, mock danishs, ...) daily. No More! I will beat that-I have to have dessert-mentality.

So far today I have had:

1 slice of ham
2 eggs fried in Mazola Pure butter spray
2 cups of coffee
working on my water now

lunch will be:
tuna salad with boiled egg and mayo

Dinner will be:
Rotisserie roast beef and steamed brocolli

Maybe coffee again this evening
Folgers gourmet selections I've tried: Caramel drizzle, Vanilla biscotti, Chocolate truffle(Caramel drizzle is my favorite!)

Weight this morning: 169
I will measure again on Monday and record measurements

Here is a before and during of me and DH:

The 1st Aug 2005 at I'm guessing 190


The 2nd is now at 170 pds after losing and falling of the wagon and gaining some more. I did Slim in Six(exercise tape) plus cardio on a regular basis this summer before falling off the wagon, so I can really tell a difference even though it's only 20 pds difference.


DH fell off wagon too, but you can't even tell. Men are sooo lucky.

Yipeeeeeeeeeee ee!!

In 6 days, I am down 5.5 pds!!!

I'm so excited. I was hoping for a pound a day, but I'll take it. Here are my measurements:

ribs 32 -
waist 33 31(-2)
belly 40 37(-3)
hips 41.5 -
thigh(L) 24.5 24(-.5)
thigh(R) 24 23.5(.5)

The first 3 days I did K/E, then switched to Atkins induction because I missed my veggies too much. So I'm going to keep up the mostly lean meat, and keep the fat at non-excessive levels. (stepping away from the cream cheese)lol

This is also with no exercise, other than a couple of walks. This week I will exercise!!

I've been using allot of eggbeaters for omelets without cheese. Cheese really is my downfall. I love it so much. I have to limit it.

Here's what I ate yesterday:

B: 2 fried eggs
L: Tuna patties with egg and mayo
D: rotisserie roast beef with horseradish sauce, steamed broc, salad with ranch

4-5 cups of coffee with h&h and caramel davincis
lots of water


I have no idea what's on todays menu. I have some steaks thawing out and still have ham I need to eat. The sodium content in the ham worries me though. The days last week that I ate allot of ham, I didn't lose the next day. hmmm, I don't know.

Note to self: get water jug before sitting down at the computer. I'm thirsty. It's amazing that the more water you drink, the more thirsty you feel for water.

We're taking the kids to see Superman today. Wish me luck staying away from diet coke and DS's buttered popcorn!!

Can somebody please tell me how to make this look neat in straight lines. Everytime I try, it ends up getting bunched back up together like this.

Thanks for stopping by my journal and for the encouragement!! I was a good girl at the movies. I had not even one bite of popcorn and drank water.

Superman was ok. I liked Cars better.

heh Cars was way better then Superman.. we went to see it twice.. and now.. my lil guy wants his room done in the Car's decor... I told this to my mom.. so this is what he will be getting for Christmas.. . it will be so cute.. they even have tv's and radios in stuff in Car's.. but I don't think I will go all out that way...lol.. he will grow out of it too soon..lol.. KWIM?..

good for you on no popcorn.. and yessss house work counts !!.. every lil bit helps if you as me.. hehehe..

Do you know about Fitday? you can put your food in and it tells you how many carbs.. fat and calories and such.. also you can log your exercise.. if you haven't heard of it.. go here.. www.fitday.com ..

B: mushroom omlet with parm cheese, 1 slice ham
L: big salad with cubed ham and ranch
D: Steak, grilled peppers and onions, steamed broc, little salad
S: boiled egg, 1/2 slice ham

I was up a pound this morning. So either it was too many veggies or the sodium in the ham. Gotta do better today.

I am betting on the ham.. it does that to a few people on here..

Scale said 170.5 this morning. I have got to get rid of that thing. It's going in the wrong direction. Yesterday, I thought I did better. But looking back, I guess not. I made a big breakfast for DH. Bacon, eggs, and some awesome muffins with cream cheese, bacon, eggs, edam cheese and heavy cream(I had 3, but they were small).
Lunch was a grilled chicken breast with avocado slices, tomato and cheese, a boiled egg, and a fried string cheese. For dinner is gets worse: we took kids to a Chuck E Cheese type place with games and a pizza buffet. I thought I did good with a salad and the toppings of a few pieces of pizza(no crust, no dessert). That really sounds like a lot of food, huh?

Today is a new day. Breakfast was 1 boiled egg(I made DH a big chicken, tomato, and chesse omelet) and coffee. He thought I lost my mind, when I said I was only eating 1 boiled egg. He said, "you're really serious about this, huh?" UHH, yeah!

I AM going to exercise today. I AM.

DH just left to work out of town until Friday. I do much better without him around, because I don't have to cook large meals. Next week, he's going back out of town to work, and we are going with him. That will be a challenge, staying at a hotel. Hopefully, the hotel will have some kitchen ammenities. I don't want to eat out every meal.

Hello sweetie.. maybe if you cut back on some of the cheese? just a suggestion.. alot of people have trouble with cheese.. wouldn't hurt to try for a week.. and see what happens.. about the scale.. have dh hide it... and only use it ones a week or once a month even.. helps a lot.. .. or .. put it in the trunk of your car..lol.. or somewhere had to get to in the am's when you want to weigh.. .. but all in all I think your doing ok with your eating.. but the cheese does seem like a lot..

Yeah, I know I have problems with cheese. I have been really good about it. Yesterday was the first time I've really overdone the cheese, and I really didn't even think of it until I wrote it all down.

I don't know. Maybe the scale is not such a bad thing, it does let me know when I'm doing something right(or wrong). It definately changed my eating plan for today.

I exercised today!

I don't know what's been wrong with me. For about a month now, I have hardly exercised at all. During the summer, I was doing so good going to the gym. Not only do I get exercise, but I get a little break from the kiddos. I work out for about an hour then I go sit and read for a while(I can leave them in childcare for 2 hours). It is very much needed mommy time. I don't know why I stopped going. I definately need to get back in the habit.

Eating has been good today:
B: 1 boiled egg, coffee
S: (cause I was starving) 2 of the egg/cheese muffins from yesterday
L: leftovers-baked fish, zuccini and mashed cauliflower
D: 2 Rotisserie chicken legs, grilled green pepper and onion, 1 boiled egg

The only problem is that I'm starving right now and it's 11pm. I need to just go to bed. But the little voice in my head keeps thinking about what legal snack I can go eat!

Back down to 169 this morning! I refuse to change my profile! I have to be extra careful from now until Monday when I record my stats! I better have a loss this week. I really have been good!

I DID NOT eat anything last night! I just went to bed! I'm proud of me!

Today's menu:
B: 2 egg omelet with diced ham and 1 tsp salsa and Frank's hot sauce
coffee
L: Chicken soup-I boiled the leftover chicken last night to make chicken soup today
D: no idea(I guess I need to thaw something out) Soccer practice tonight so dinner will have to be quick

Found the best way to get water in me:
Use my great big 32oz mug with handle and lid and huge straw attached. I can sit at the computer and type and suck water without even realizing I doing it! The huge straw makes it easy to down it in a short amount of time.

Gotta go start some schoolwork with DS!

Revised menu for yesterday:
B: same
L: chopped up rotisserie roast beef mixed with 1 tbsp horseradish sauce and 2 green leaf lettuce leaves, diet rite
S: boiled egg
D: Homemade chicken soup with garlic, onion, celery, and Franks hot sauce(noodles and carrots for kiddos)
S: mock danish(1 tbsp cream cheese, 1 egg, rasberry divincis, splenda)

Today, no change, still 169. This is frustrating. I really need to get out of this mindset of "I want it and I want it RIGHT NOW". How can I still be up 1.5 pds from Monday when I haven't cheated once? GGRRRRRRR! Maybe I should give up my coffee?

Today is a new day. Breakfast was 3 eggs beaten, cooked in butter and sprinkled with cinnamon. I make french toast for kiddos and it looked so good. My version wasn't so great. Lunch will probably be chicken soup. Dinner-no idea. I need to thaw something.

DH is coming home today! No big plans for the weekend. I wonder if there are any fall activities going on this weekend. The weather has been beautiful.

Sometimes I make the revolution rolls.. you could make them like I do to where they are like thin bread.. then make them like you do the french toast.. then put sf syrup on them..

Revolution rolls.. like bread

Pre-heat your oven to 300 degrees.

You'll need
3 eggs
1/4 teaspoon cream of tartar
3 tablespoons of cottage cheese
1 pack of art. sweetener

You seperate the whites and the yolks of 3 eggs (I put the whites in one bowl, and the
yolks in another)- the key is don't get any of the yolks into the whites. Add 1/4 teaspoon
of cream of tartar to the whites and beat the whites until they are fluffy. This is kind of
a personal pref as to how you want the whites to be- to a stiff peak (you can turn the bowl
upside down and they won't slide out) or not that much. I usually beat mine to a stiff peak
, then fold in the remaining ingredients 3 eggs yolks, 3 tablespoons of cottage cheese, 1
pack of splenda. (I mix the yolks, cottage cheese, sweetener together in the other bowl
before I add it to the whites) Don't mix it for more than a minute- so you don't break
down the fluffy-ness of the whites.

After it's all mixed, spoon it onto a "Pam-ed" cookie sheet into 6 "piles"- the book says
to stack it up 2 inches high per roll, but mine are never that firm to stay stacked, they
usually kind of spread out on the sheet.

However they land on the sheet, just pop them into the oven at 300 degrees for an hour.

Makes 6 rolls at .5 carbs per roll (or 3 for the whole batch)

can also use cream cheese or sour cream..

suggestions.. when making for hamb. or eggs.. dont add splenda..
when you want somehting sweet.. add it..

I tried those one time a long time ago and they didn't turn out right. That was before I got my food processor that whips eggs though! I'll have to try those again. Thanks!


Today's menu:
B: small steak and 2 fried eggs, coffee
L: 1 hamburger, prov. cheese, tomato, mayo in lettuce, diet rite
D: easy cheesy chili chicken and sauteed zuccinni and onions

Scale said 168 today. Another pound down, but still not at my lowest from last week(see profile).
