This is lacto-ovo and is a greek recipe.
3 zucc grated
1/2 c chopped onion
3 oz feta
2 T parmesan
2 T coconut flour
2 t EVOO
sprinkle of dried oregano (original called for fresh parsley, oregano, dill but none available. Use whatever sounds good. I only like dill in pickles.)
black pepper (freshly ground is best)
Mix everything together and pan fry as patties or pour into a buttered/oiled casserole dish. Bake at 375-400 for 25 min. Test as for custard.
*Original recipe used bread crumbs (1/2-3/4 cup).
Also important to know that the cheeses are quite salty so no need for more.
