I found this recipe somewhere online, but I am sure there are similar ones on here. Anyway, I made mini-waffles today (snagged my wife's mini-waffle maker) and these tasted just as good as plain ole regular white flour waffles. I was amazed. It made a lot. I don't have a carb count, but the servings say 6, but I got 4 servings out of it.
Almond Flour Waffles
1 cup almond flour
1 pinch salt
1 teaspoon baking soda
1/4 cup honey
1 teaspoon vanilla extract
1.Preheat waffle iron.
2.Combine almond flour, salt, and baking soda in a large bowl. In a separate bowl, whisk together the eggs, honey, and vanilla. Stir the flour mixture into the egg mixture. Grease preheated waffle iron with cooking spray.
3.Spoon batter onto hot waffle iron. Cook until golden; serve hot.
Nigel, that waffle recipe sounds great (and I *finally* found and purchased some almond flour :D - wish I had a waffle maker. Do you think this could work as pancakes?
Yes, I think it will work fine for pancakes. I'm actually going to try it that way over the weekend. I'll let you know for sure then.
Oh my Nigel, these look good. Just add some cinnamon and vanilla and maybe some sweetener instead of honey and I'll have breakfast! But not today, I have a paper to write.
This recipe works great for pancakes and I've been making dried fruit and nut cakes out of it as well.
If you use half the recipe and add in some chopped nuts (I use pecans and walnuts) and then some dried fruits...I had dried blueberries and some apricots and put it in a mini loaf pan and bake it at 350° in the toaster oven, it makes a neat little cake.
My Mom is GF, so I made her one with a smashed banana in it and the nuts but no other fruit and she said it tasted just like banana bread.
I'm not a big banana bread fan, but I'm sure you could use different flavorings instead of fruit.
Coconut (unsweetened) would be a good addition as well.
