The easiest vegetarian ice cream ever!!
1 c. almond plus milk (or almond milk)
1 c. fruit such as strawberries, peaches, blueberries, anything you like frozen and cut up ahead of time
1 couple of packets of sweetner
Put it all in the ninja and pulverize or you could use a food processor.
Then I put it in a container and in the freezer for a while. It never lasts til the next day so I don't know how hard it might get. But if it gets too hard, just let it sit out a bit and it will soften or defrost on the nukker a couple of minutes.
It's yummy and takes only a couple of minutes to make.
I buy the foam coffee cups with the lids at dollar general and it makes a great 2-serving size cup.
Not only vegetarian, but vegan.
This is similar to a recipe that Charski posted on the Vitamix thread, except she uses cream (I sometimes use 1/2 and 1/2) and her proportions are a bit different.
Blueberry ice cream is my favorite and my non-LC husband also loves when I make this.
I wonder, though, why you have to put this in the freezer? The one I make is ready to eat right away and would get too hard in the freezer, I think. Maybe that's where the different proportions come in?

Oh, you don't have to put it in the freezer, I just usually make it up to have as a dessert later on. When I make it, it comes out like soft serve.
I like the texture of it and the flavor.
I did make up some peach yesterday and left it overnight in the freezer and I'll see how hard it got today.
I do this everytime I feel the need for ice cream! Works every time!
