Vegetarian or Vegan Memorial Day Menu
Does anyone eat anything special on Memorial Day?
My wife wants tacos, so I'll do my ground boca type with cheese or lettuce shells and she eats the regular beef ones.
We don't do a lot of holiday cooking, just like any other ordinary day for us most of the time.
What did you end up having, Nigel?
We attended a pool party at my SIL's house. She normally has something veg to eat, so I guess I take it for granted. This year was slim pickings for LC vegetarian food.
I ended up eating a TON of fruit, 1/2 ear of corn, 1 spoonful of mac and cheese, about 5 asparagus spears and a slice of cheddar cheese.
Several hours later, the party is in full swing and I'm STARVING. By the time we left, I had a severe headache which lasted through the following day. Next time, I will be sure to bring a dish I can eat.
On the bright side, I had no chips and none of the many desserts.
We just had tacos.
You did good..bummer about the headache.
I usually bring something that I can eat and everyone is used to me bringing in a veggie burger for the grill if someone is grilling. If it's just potluck, I make a casserole and salad.
I made zucchini lasagne and I couldn't believe it, they ate it all up. I even told them it was vegetarian. Score!!
I used to make this sqush stuff with ground beef. I substitute ground boca or other crumbles for the meat and it's still just as good and easy.
Sometimes I make antipasto or crudite and some dip. People love to munch so those go over pretty well.
Dottie's green bean casserole is really good and it makes a lot, so I have taken that before also.
Stuffed bell peppers and stuffed squash go over pretty good too. The sqush I cut up into about thirds after they are done so I don't have to make so many.
Sometimes I just get cream cheese and spice it up and stuff those little sweet peppers. Then I make pimento cheese stuffed jalapenos for the heat seekers in the group. There's a few of them in the family.
That's about all I can think of right now. But it is best to have too much food than not enough that you can eat.
