Thanks MargD.
I opted out on the rice and just had the beans and salsa for dinner...I already had my starches so I figured I'd best not.
I hope you have a great weekend!!

Hi everyone. I'm still around and still doing my low carb thing. Summer is such a hectic time for me but I find that eating becomes less of a problem since salads and low carb roll-ups are easy to make and eat. Plus I make a soup once a week and snack on nuts and drink water and sodas.

Yesterday's Menu:

B - cheese stick and egg salad
L - mushroom pizza on low-carb tortilla
D - cream of broccoli zuke cheese soup
S - cashews

Today's menu:

B -Almond flour banana bread with hood's chocolate milk
L - left over low carb tortilla enchilada cassarole made with burger crumbles.
D - cream of broccoli zuke cheese soup and a facon lettuce tomato roll-up in a low carb tortilla
S - cashews

It's great to see you here, Sherril. I have been plugging away, pretty much on plan, but just not in the mood to log, I guess.

Today (Friday)

B - Mocha Protein shake (Friday treat)
L - Leftover zoodles w/ spaghetti sauce
S - 1/4 c almonds
D - Roasted cauliflower w/garlic + HWC and cheddar cheese*

*I bought two containers of roasted cauliflower w/garlic from the prepared foods area of my grocery store. I used to love it, but I think they changed the recipe because it doesn't taste good to me anymore. I wanted to use up the second container, so I tried blending it with HWC and cheese. It was just okay.

S - About 2 tablespoons of coconut butter. I find this stuff so delicious that I wasn't sure if I was going to be able to have it in the house. It has been two weeks since I purchased it and almost 1/2 of the 16oz jar is left. I think that's pretty decent self control.

L 1/2 c mixed nuts, coffee

S 1/2 c fresh mango

D Lg bowl of spring mix topped with cukes, tomatoes, cheese, olives, black soybeans, onion and vinegar & olive oil

Snack(s) Greek yoghurt with fresh strawberries and later a mock root-beer float or Rum & diet coke (kind of depends on what DH is having)

Just as soon as I announce that I'm still staying low carb, I mess up. The last 3 days I've been behind the stage with my sewing machine for my son's production of Willy Wonka and someone has put the bag of peanut M&Ms much too close to me. Today, I'm detoxing in a big way. I had an in-home massage today and am going to end the day with an epsom salt bath. I ate too much, but at least it was all low-carb stuff. Now to have another glass of water and go to bed after my bath.

Sorry! I misunderstood. Glad you're back on track.

I'm struggling a bit. Eating low carb food, but just too much of it, I think. I was very hungry while I was at work yesterday and had to resort to my emergency snacks. Then, in the evening, I couldn't seem to stop eating. Sigh!

Tuesday

B - 2 eggs, scrambled w/mixed veggies
S - Mozzarella cheese stick
L - Leftover zucchini casserole
S - 1/4 c pecans
S - Atkins bar
D - veggie burger w/mustard and sauteed onions on a 1.4 carb hamburger bun (From Recipe Help and Suggestions thread. High cal, but low carb and very tasty, IMO. I can find the link if anyone is interested.)
S - Chocolate Chia shake
S - Spoonful of Coconut cream

Scale was up this morning, which was not a surprise. Will do better today.

It seems a week has gone by without anyone posting here, myself included. I haven't been journaling like I intended to and found myself eating WAY TOO MUCH peanut and almond butters, mixed nuts and sunflower seeds on a daily basis!!! My weight has even gone up a lb or 2, so I'm barely hanging on to that 10 lb loss I've worked so hard for over the past few months.

Today I pulled out my notebook and wrote everything down and so far I am doing ok - hopefully I won't blow it tonight.

B - PP smoothie w/ soymilk and 3/4 c. frozen strawberries (and a little Splenda), coffee
S - diet 12 oz. rootbeer w/ couple Tabl. cream
L - 2 oz. chunk of cheese
S - SF jello and 1/2 c. whipped cream
D - 3 eggs with onions, red peppers, and 1/2 c shredded mixed cheeses in olive oil and margarine, coffee, and SF jello w/ whipped cream
S - rum & diet coke

I really need to get back to posting my food again. I don't know what it is lately, just the dog days of summer, I guess. I have been eating pretty strictly low carb, but the amounts.....

Monday

B - 2 eggs, scrambled with mixed veggies
L - leftover frittata
S - the last of really really yummy zucchini bread. I had a portion control problem with this bread. I wish my husband was more of a snacker! http://www.lowcarbfriends.com/bbs/lo...ini-bread.html
pre workout - peanut butter protein ball and 1/2 T of coconut butter
post workout - protein shake

Marg - Widget's zucchini bread sounds really good, but I'd probably have a portion control problem too. I'm tempted to make a traditional cheese cake for hubby and some of those cheesecake muffins for myself, but I worry about how "controlled" I'll be around treats. I have a hard time with the PB, nuts, cheeses and yoghurt.
-------------------

Almost forgot...today's foods
B - 4 egg whites, 1 1/2 egg yolks with onion, butter and 1/2 c shredded cojack cheese, coffee
S - 1 c SF jello/cream cheese mold
S - handful of mixed nuts
D - oven-baked peanut sauce marinated tofu, mixed veggie stir-fry, coffee
S - SF jello mold
S - 3 oz. mixed nuts, crystal lite lemonade
S - 1 c. plain Fage Greek yoghurt with splenda

I know what you mean regarding the repetitiveness. Do you like protein powder shakes for breakfast? I typically alter every-other-day's breakfast between my scrambled egg creation and a various-flavored thick and sometimes icy, PP shake. One of my current favorites, that comes out creamier than icy (unless I want it more icy) is using about 3/4 frozen whole strawberries, 1 c of unsweetened soymilk and a little sweetener of choice (I use splenda 'cause that's all I have in the house besides sugar). I read you like to use a PP drinks after evening workout's, but perhaps having one in the a.m. too wouldn't hurt? I don't know how strict you are about your carbs though - if you're adamant about never going over 15g or so then the frozen fruit definitely would not work unless you ate eggs and cheese for the rest of the day.

However, if you read what is to follow (my food intake for yesterday), you may want to blow off any suggestions coming from me. I REALLY had a rough day yesterday, all the way around, and gave in to my old comfort-style of eating, even though I tried to stay within my LC diet bounds.

Yesterday - ugh

B - 3 Tabl. peanut butter from jar
L - PP shake, 3/4 frozen stawberries, 1 c soymilk, splenda, 1.5 scoop whey powder
S - at least a 1/2 c. PB (killed the rest of the jar)
S - diet mock rootbeer float w whipped cream
D - lg. salad, cukes, peppers, tomato, 1 avocado, feta cheese, olives, OO & vingerar, coffee
S - cream cheese jello mold & cream
S - raw veggies (broc, caulif, carrots) dill dip
S - 4 oz. mixed nuts right before bed

I think I will start today with a scrambled egg and cottage cheese mix and try for a much better day.

Thanks for the input. I typically buy a container of grilled, mixed veggies from my supermarket. Then I use these with scrambled eggs Mon through Wed. If I try to stretch it to Thurs, the veggies don't taste good anymore, so I do other stuff Thurs thru Sunday.

I guess my problem is that even those three days are starting to not appeal to me, but I think eggs are probably the best breakfast I can make for this WOE. I'm thinking about making a frittata on the weeekend that I can quickly warm up in the morning before work.

Part of the problem might be how long it takes to cook eggs as I'm trying to get out the door and go to work.

I think I just need to experiment, but I really do appreciate your input. I would gladly do a shake every morning, but for whatever reason, I'm not sure it works for me, as far as weight loss/maintenance. Maybe because they are so good, I don't trust it. LOL

Your bad days sound a lot like my bad days. I stay LC, but I just seem to want to eat everything in sight. I sure wish I could be less interested in food.

About peanut butter, I make all of ours. While I'm making it, I'm definitely guilty of excessive tasting. For whatever reason, once it's in the jar, I can typically leave it alone.

Maybe you should experiment with almond butter? I have been substituting it for peanut butter lately and I find it tasty enough, but not as tempting as peanut butter.

Wednesday

B - 2 eggs, scrambled with mixed veggies

L - Almond butter cup (coconut oil blended with almond butter and splenda and frozen). I love these and thought it might work to have them for lunch occasionally. I feel slightly guilty having it as a snack.

S - 1/4 c pecans

D - pre-workout - mocha protein shake, 1T coconut butter

S - post workout - I think I ate something, but I don't remember what. I might have had more coconut butter. I love the stuff. So far, I'm keeping myself in check, but just barely!

Hi Mel. Welcome!

Though I make my own peanut butter, the only almond butter I've made was an accident (I was trying to make almond meal).

I just started eating almond butter on a regular basis and I'm eating some that I purchased from Trader Joe. After this jar runs out, I may make my next batch.

I use my Vitamix (high-powered blender), but I've heard of others who use a food processor.
