Hi everyone. I'm still around and still doing my low carb thing. Summer is such a hectic time for me but I find that eating becomes less of a problem since salads and low carb roll-ups are easy to make and eat. Plus I make a soup once a week and snack on nuts and drink water and sodas.
Yesterday's Menu: B - cheese stick and egg salad L - mushroom pizza on low-carb tortilla D - cream of broccoli zuke cheese soup S - cashews Today's menu: B -Almond flour banana bread with hood's chocolate milk L - left over low carb tortilla enchilada cassarole made with burger crumbles. D - cream of broccoli zuke cheese soup and a facon lettuce tomato roll-up in a low carb tortilla S - cashews

It's great to see you here, Sherril. I have been plugging away, pretty much on plan, but just not in the mood to log, I guess.
Today (Friday) B - Mocha Protein shake (Friday treat) L - Leftover zoodles w/ spaghetti sauce S - 1/4 c almonds D - Roasted cauliflower w/garlic + HWC and cheddar cheese* *I bought two containers of roasted cauliflower w/garlic from the prepared foods area of my grocery store. I used to love it, but I think they changed the recipe because it doesn't taste good to me anymore. I wanted to use up the second container, so I tried blending it with HWC and cheese. It was just okay. S - About 2 tablespoons of coconut butter. I find this stuff so delicious that I wasn't sure if I was going to be able to have it in the house. It has been two weeks since I purchased it and almost 1/2 of the 16oz jar is left. I think that's pretty decent self control. |

B - 3 eggs with diced red onion, gouda cheese, broccoli and butter, 1/2 c unsweetened Silk organic soymilk L 1/2 c mixed nuts, coffee S 1/2 c fresh mango D Lg bowl of spring mix topped with cukes, tomatoes, cheese, olives, black soybeans, onion and vinegar & olive oil Snack(s) Greek yoghurt with fresh strawberries and later a mock root-beer float or Rum & diet coke (kind of depends on what DH is having) ![]() |

Just as soon as I announce that I'm still staying low carb, I mess up. The last 3 days I've been behind the stage with my sewing machine for my son's production of Willy Wonka and someone has put the bag of peanut M&Ms much too close to me. Today, I'm detoxing in a big way. I had an in-home massage today and am going to end the day with an epsom salt bath. I ate too much, but at least it was all low-carb stuff. Now to have another glass of water and go to bed after my bath.

PB D - 4 oz. Gouda cheese, 2 c. cooked cauliflower with additional cheese topping & grilled onions, 1/4 c. sesame seeds, SF mock root beer float S - 1 oz. mixed nuts, rum & diet coke S - 8 oz. SF jello with 1/2 & 1/2 and whipped cream S - 3 Tabl. PB mixed with 1 tsp. PP S - 2 c. watermelon chunks MargD and Sherril, Don't feel bad - you're not alone. It seems a week has gone by without anyone posting here, myself included.
I haven't been journaling like I intended to and found myself eating WAY TOO MUCH peanut and almond butters, mixed nuts and sunflower seeds on a daily basis!!! My weight has even gone up a lb or 2, so I'm barely hanging on to that 10 lb loss I've worked so hard for over the past few months.Today I pulled out my notebook and wrote everything down and so far I am doing ok - hopefully I won't blow it tonight. B - PP smoothie w/ soymilk and 3/4 c. frozen strawberries (and a little Splenda), coffee S - diet 12 oz. rootbeer w/ couple Tabl. cream L - 2 oz. chunk of cheese S - SF jello and 1/2 c. whipped cream D - 3 eggs with onions, red peppers, and 1/2 c shredded mixed cheeses in olive oil and margarine, coffee, and SF jello w/ whipped cream S - rum & diet coke |

I really need to get back to posting my food again. I don't know what it is lately, just the dog days of summer, I guess. I have been eating pretty strictly low carb, but the amounts.....
Monday B - 2 eggs, scrambled with mixed veggies L - leftover frittata S - the last of really really yummy zucchini bread. I had a portion control problem with this bread. Marg - Widget's zucchini bread sounds really good, but I'd probably have a portion control problem too. I'm tempted to make a traditional cheese cake for hubby and some of those cheesecake muffins for myself, but I worry about how "controlled" I'll be around treats. I have a hard time with the PB, nuts, cheeses and yoghurt.

B - 3 Tabl. peanut butter from jar L - PP shake, 3/4 frozen stawberries, 1 c soymilk, splenda, 1.5 scoop whey powder S - at least a 1/2 c. PB (killed the rest of the jar) ![]() S - diet mock rootbeer float w whipped cream D - lg. salad, cukes, peppers, tomato, 1 avocado, feta cheese, olives, OO & vingerar, coffee S - cream cheese jello mold & cream S - raw veggies (broc, caulif, carrots) dill dip S - 4 oz. mixed nuts right before bed ![]() I think I will start today with a scrambled egg and cottage cheese mix and try for a much better day. Part of the problem might be how long it takes to cook eggs as I'm trying to get out the door and go to work. I think I just need to experiment, but I really do appreciate your input. I would gladly do a shake every morning, but for whatever reason, I'm not sure it works for me, as far as weight loss/maintenance. Maybe because they are so good, I don't trust it. LOL |

B - 2 eggs, scrambled with mixed veggies L - Almond butter cup (coconut oil blended with almond butter and splenda and frozen). I love these and thought it might work to have them for lunch occasionally. I feel slightly guilty having it as a snack. S - 1/4 c pecans D - pre-workout - mocha protein shake, 1T coconut butter S - post workout - I think I ate something, but I don't remember what. I might have had more coconut butter. I love the stuff. So far, I'm keeping myself in check, but just barely! |
