Hi All

I'm a newbie to this thread

About a month ago I made the decision to cut out red meats and chicken.

My focus is not so much on losing weight but eating healthy, nutritious meals made without meat replacements and the like (I prefer the thought of consuming fresh produce mostly).


I shall definitely be hanging around for the support and ideas

I'm sauteeing sliced turnips and bagged coleslaw (separately) for a vegan dinner tonight. Might have a pice of coconut chocolate cake afterward, low carb of course.

Breakfast/lunch was 2 eggs fried in butter and a piece of sprouted grain toast with butter. I admit I had two mocha lattes, one with whole milk, and one with coconut milk. Oh, and I had a peach.

Dinner was an Amy's frozen enchilada meal. I ate both. My total before I got home from work was 75 grams. After work I had a salad, some macadamias, a short glass of milk (a bad craving), some olives, a spoon of peanut butter, annnnd I don't remember. I was hungry and didn't feel like cooking. Right now I'm going to have some coconut chocolate I made and later I'll probably have Harney and Sons Hot Cinnamon tea or Tazo rest tea, and that'll be it for the day.

Cake recipe

1/4 c cocoa
3/4 c sweet bake mix
1/2 t baking powder
1/2 t almond extract
1/3 c xylitol
a bit of stevia
coconut cream in chunks, I like mine in good size chunks - I use the organic one in the green box
coconut oil to taste

I mix and bake in 4 x 6 glass pan and bake in toaster oven for about 15 min. If you use 8' pan you will need to double the recipe.

Sweet bake mix recipe

1 c ground walnuts
1/2 c almond meal
1/2 c oat fiber
1/2 c coconut flour
1.2 c protein powder
1 c carbquik, oat or wheat flour

This is very flexible as far as how much of each ingredient you are putting in. Works well in regular pancake recipes as a flour replacement.

I left the eggs out of the cake recipe and just remembered!!

Add 3 eggs to the cake batter!!

I have been using powdered coconut milk, about 1/2 cup to 2 cups of water, for a morning drink. I find that adding about 1/4 cup whole milk to this mix makes it taste much better.

Goodness, I'm not keeping up here. Yesterday I made carrot muffins with soy flour, ground flax, a bit of whole wheat, and coconut flour. I did use some sugar, and they're Texas sized, so each is 20 grams. I could get it down further with sucralose. I had one this morning along with 2 eggs. I'm sick of eggs, though. I don't remember what I had for lunch and dinner was pb & jam on sprouted wheat bread. I haven't been very hungry today. Oh, and I had a salad for a snack. And some cheese at some point. It's been catch as catch can today....

Your carrot muffins sound good. I get tired of eggs too. A lot of times I just eat cheese or cheese and lower carbed crackers or I eat cottage cheese with tomatoes.

It seems to be tougher for me to cook in the summer and also tougher to eat right.
I have been opting for easy stuff...chef's salads and boca burgers on the grill.
I got some great farm fresh okra, squash, bell peppers, and tomatoes over the weekend, so I need to do some cooking.

I end up with peanut butter sandwhiches. The sprouted grain bread is only 9 carbs a slice. It's kind of expensive, though. But so is excess weight....

Very true. I think just about everything that is low carb or truly healthy costs a lot more.

I finally adapted myself to paying the exorbitant prices for produce at certain times of the year...I decided I used to buy a bag of chips for $4 so paying $4 for butter lettuce isn't that bad after all (and it would probably last me longer than a bag of chips which were killing me anyway.)

Stir fried veg and tuna steaks for supper last night.

I also LOVE Sweet potato done in the oven with no seasoning of any sort. I just sprinkle a little cinnamon and nutmeg on the top, a dollop of extra virgin coconut oil.. very yummy and satisfies my sweet cravings. Not sure how they rate on the carb-o-meter, but you don't need to eat a huge portion to be satisfied.

I'm really bad at this thread; I can't remember what I've eaten today. I can tell you what I didn't eat: angel food cake (resisted temptation) and an avocado (because it spoiled before I could get to it).

I did the hamburger helper thing again last night. It seems to make everyone happy. I used 2 lbs of hamburger, lots of spices and 1 lb of slaw. It seemed to be very heavy on the cabbage. My hubby loves it that way, my mom doesn't. I don't sound like much of a vegetarian with these dinners but dinner is the only time I eat meat. The rest of my meals consist of low carb bread, cheese, avocado and macadamias. Sounds boring now that I write it all down!

Last night I made 1 quorn cutlets like chicken parmesan and had cauliflower, a sliced tomato, and some fried okra.

Fried okra is a favorite of mine and it's not really low carb cuz I use cornmeal, just not much of it.

Tonight probably yves ground tacos. I spike my taco meat with onions, red bell pepper, cilantro, celery, and grated carrot. I cook down all the veggies and then add in the yves and then taco seasoning. Viola!!

Of course I am cooking hamburger for my wife's tacos because even though she likes the yves, she loves her beef.

Javaholic**I'm pretty sure sweet potatoes are okay on LC...I see lots of posts about them.

I made what my bff calls a throw in salad with red lettuce, sauteed cabbage, onions, bell peppers, mushrooms, tomatoes, cucumbers, tempeh bacon, roasted coconut and a homemade dress. We had a low carb wrap on the side with cashew butter. For dessert I had cherries. I had to finish those before they went bad.

Breakfast: double sugarless mocha latte with whole milk and coconut milk, Boca breakfast sausages, and half a waffle with sugar-free syrup

Lunch: artichoke and spinach sammich ( ) that had cream cheese, parm, and mozzarella in it [pretzel bread--I know, white flour; I'm trying to give it up, but....]

Dinner: BAS [big-a$z salad, lol] of red leaf and baby greens with anchovy-less caesar dressing, steamed broccoli with butter and salt, some of the carrot cake I made, a red wine spritzer, and berries with whipped cream I was going to make some poached eggs as an afterthought (as in "I need some protein"), but I got too full to eat them.

brunch: two scrambled eggs with cheese, double portion of mocha latte with whole milk and coconut milk
dinner: water, hot pretzel sandwhich with artichokes and spinach in it, a teeny bowl of frosted flakes (were in break room and I just couldn't resist)
snack: half a pb & j (1/3 serving), olives, peanuts, Zevia root beer with half n half

I didn't have a salad at all today, nor really any veggies. Tomorrow needs to be better. Right now, cinnamon tea with no sweetener at all.

Nigel did you make that einkorn bun?

I ate Dreamfields macaroni with red spaghetti sauce 2 days in a row and gained a lb . I ate store bought low carb bread on those same 2 days as I had no time to cook. Now I just feel fat.
