Squash Stuff Recipe
Squash Stuff (this is what my Mom used to make and called it, using beef instead)
I used half a bag of morningstar crumbles I sauteed that in a little oil with a couple of slices of diced onion Then in a seperate pan, I sauteed some tri-colored peppers in olive oil for a bit and added a large diced yellow squash, half a small can of diced tomatoes and simmered til al dente. I added that to the crumbles and added chili powder, cilantro, cumin, salt, and pepper, and a little Mrs. Dash Original. I simmered it til thick. This is very filling stuff. (this made 2 big servings and the squash was huge) It is better with a can of tomato sauce instead of the canned tomatoes, but I was out, so I substituted. I served it with hand chopped, homemade coleslaw. For the coleslaw: Half of a head chopped, shredded green cabbage Whisk together in a small bowl, the following: 1 T. splenda 2 T. red wine vinegar 1/2 t. celery salt salt and pepper to taste 1/2 c. mayonaise 1/2 c. sour cream Pour over coleslaw, mix well, and refrigerate for an hour or so.
