Simple Cucumber Slaw
I have been having some dental work done, so I have to eat softer/easier to chew foods, but I still want to get my veggies in.

Cucumber Slaw

1 large cucumber, grated, salted, and drained for about half an hour
mince a couple of slices of onions or a couple of green onions
add to cucumber
add in some pepper and sour cream to taste.

Make sure you salt and drain the shredded cucumber first--they have tons of water in them.

Makes 2 decent servings.

I used a strainer over a bowl to drain my cucumber and it was enough liquid that drained out for the boy dog to have his fave thing...cucumber soup. lol

Thank you. It was different. The cucumber didn't have much flavor, but it's hard to find tasty ones this time of year here.

I usually just chop up a cucumber in chunks and then slice grape tomatoes in half and use a couple of green onions and pepper and sour cream. I always salt the cucumber and drain it thought because they are so watery. A lot of times I add the tomatoes to the cucumbers and drain them. I like the seeds, etc. of the tomato. I suppose one could scoop out the seeds of a regular tomato and use it that way too...less liquid for sure.

My SIL makes this but she uses mayonnaise instead since my brother is lactose intolerant.
