Easy Homemade Chunky Tomato Soup
Easy Homemade Chunky Tomato Soup
1/2 small onion, chopped 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 2 ribs celery, chopped Saute all of these in a tablespoon or so of butter or oil or broth. I added in a can of petite diced tomatoes (lg can) and about half a cup of broth. I used chicken but you can use vegetable or any. Spices, I used about a teaspoon of italian seasoning and about half a teaspoon of chili powder, salt and pepper to taste. Then I simmered it until it was thick enough for soup. I added in a few sprigs of fresh cilantro leaves just before I turned off the heat. You could puree some of the tomatoes and veggies to thicken it up or puree it all to make a smooth soup. I wanted chunky last night. So easy and fast. Who knew? My first tomato soup from scratch and it was good. I was also thinking the leftover soup would be great over pasta. I think I'll do that for dinner tonight. This made 2 generous servings. If you were eating something else with it, I'd say 3-4 servings. Last edited by Nigel; 11-18-2011 at 11:53 AM.. |
