Cauliflower and Broccoli with a Creamy Cheese Sauce
I made a delicious cauliflower and broccoli dish last night.
Steam 1/2 head of a large cauliflower and 1 large bunch of broccoli (cut into bite size pieces). I didn't let them get too tender as I would be adding them back to heat later and I didn't want them mushy. Remove, rinse with cold water, and drain. In a bowl mix about 1 cup heavy cream with about 1 cup sour cream. In pan, melt a tablespoon or so of butter and add a minced clove of garlic (or more if you like garlic). Add cream/sour cream mix and stir well. Add about 1/4 cup cream cheese, 1/4 cup grated fresh parmesan and 1/4 cup grated cheddar. Stir until cheeses are melted. Add pepper, chili powder, dry mustard, cayenne pepper (I'm not sure how much I put in of each, I just started sprinkling and tasting). Add steamed vegetables back in and heat until hot. Next time I try this, I may try adding a bit of thickener to the sauce (anyone know of a good low carb thickener?), but it was so good! My husband and I split this as our dinner. Jodie |

Jodie that sounds amazing!!! Like vegetarian mac and cheese .. hahaha but lc with veggies! There is a mac and cheese dish using tofu as the macaroni you might be interested in trying too some time.
As far as thickener, I have been having some luck with glucomannan powder lately but it is a a real trial and error kinda thing and you'll have to see how you feel about the texture! I have an amazinh enchilada sauce I came up with and am considering trying it with the glucomannan, lol but am afraid, lol lol!!! For that I'd want less of a thick texture than you would with a cheese sauce .. check out the recipe sticky board for a big thread on the glucomannan. Pauline |
