$9 for 12 oz cheese .. and A Recipe for Caprese Salad ..
So I was early to pick up a kiddo and decided to head down the road to a farm in that area to check out the farm stand .. I decided I could not leave empty-handed and on a total whim, I picked up some gorgeous tomatoes, fresh basil and a handmade mozzarella (Maplebrook from Vermont - with vegetarian "rennet" etc).
So the whole thing was $13 .. and my kids and I had an amazing lowcarb vegetarian meal (and there's enough left over for a fourth serving out of it) .. dh had meat, lol ..
White Balsamic Vinegar
Sea Salt and Ground pepper
Slice tomatoes and halve if the slices are very large. Place on a plate.
Cut slices of mozzarella and slice into little bars. Arrange artfully over the tomatoes.
Chop the basil and sprinkle it over the plate.
Now mix equal parts of olive oil and balsamic vinegar. Grind some sea salt and some black pepper into your fresh dressing and drizzle over the plate (s).
I ate mine with half a lc pita and a side of pan fried brussel sprouts as my meal ...
8 oz frozen brussel sprouts microwaved then pan roasted in pam spray
2 oz mozzarella
2 large slices of tomato
1/2 t. olive oil
1/2 t balsamic vinegar
1/2 lowcarb Joseph's pita
Total: 361 calories, 15 net carbs
(with 9 of those from the brussel sprouts, and 2 from the half pita)
