Vegetarian low carb snacks?
 
Does anyone have any ideas for vegetarian low carb snacks? I've thought of eggs, cheese, vegetables... but I'm kind of stuck there.

Do any of you eat chick peas, or do you consider them too high in carbs?

I don't do chickpeas on a regular basis .. they just seem to hinder weightloss and maintenance for me, although I can tolerate them in a one-off meal here and there. I do limit it to that.

Some really great snacks in addition to cheese, egg, vegetables:

1. a measured portion of nuts .. macadamias, almonds, pecans *
2. or seeds: sunflower, pumpkin *
3. Dry roasted soybeans .. really yummy
4. Coconut bark .. made with coconut oil, cocoa powder and crushed walnuts .. killer good!!!
5. Half a lowcarb pita, with 2T natural peanut butter and sugarfree jam
6. flax muffins with a dollop of whipped cream on top .. tastes like gingerbread
7. Homemade protein shake made with almond milk, sweetener, whey protein powder (or egg, hemp, etc protein powder), etc.

.... I know there are tons of other things I am not thinking of, lol, as I remember, I will post them for you!

*there are also all kind of companies making flavored ones! sweet and savory. emerald nuts makes some .. and a lot of the products you'd find in natural food stores!

You betcha Jodieleigh!! We vegetarian lowcarbers have to stick together ... I just know I will recall tons more ...

I haven't tried those, but the recipe rates 5 stars by 643 reviews! I always read the comments because sometimes the tweaks people figure out are really good too!

And Recipes for all kinds of sweets that incorporate protein powders .. I use whey protein powder but there are lots of other kinds that are vegetarian .. any of them could be used in these recipes:

Also check out various sweets on the recipe board made with: almond "flour", coconut "flour" and ground flaxseed!

Yanno, I believe there is also a recipe somewhere for a granola-type mix using dry tvp (a vegetarian protein) that looked kinda good to me at one time .. you could throw in almonds, coconut shreds, etc.

the cool thing is that all these snacks are very protein-rich!

oh .. they also sell Japanese seaweed "chips" at the health food store (just dried seaweed) .. lol My 11 yo likes these - one of her asian friends brings them to school in her lunchbox .. they are seasoned with sesame oil and are salty .. definitely lowcarb!

Good ones Timetogetthin! I just used some of those black soybeans in cheese and bean enchiladas for the family and they didn't even notice it wasn't "real" black beans, lol! I should try my hand at some hummus!!

I thought of another one .. duhhhhh! lol!!

Yogurt!!!

I have on occasion while lowcarbing had plain unsweetened yogurt with a few crushed walnuts, a tablespoon of ground flax and some sweetener or flavored davincis syrup thrown in. I particularly like that in the warm weather! It could also be breakfast or a mini-meal (I tend to eat 5 mini meals instead of three big ones).

I ordered some really, really good low carb products from one of the low carb stores online. I would recommend avoiding the zero carb bagel chips, they were almost inedible. However, the Karb Kruchers bread is fantastic along with the grammy girl crackers- really, good, like a water cracker. Make up a low carb dip and you are in good shape.

srbtennispro .. I have a bag of karb krunchers rolls in the freezer, lol! Good to know they are worthy!! I have a killer recipe for tofu sloppy joes from my high carb days (that is lc without the bread, of course) and have just been lazy about giving it a shot and breaking out the rolls, lol!!

I may give it a whirl as I think my kiddos would like it! Netrition has a good lc teriyaki sauce (tho' pricey), called Seal Sama that would work for the recipe. And, Steele's used to make an amazing spicy lc peanut sauce I bought regularly that would also be very good with baked tofu, I think, if it is still available anywhere!

"Broiled Tofu Slices

Use: Frieda's Tofu, sliced 3/4" thick

Your choices of toppings:
Soy sauce
Teriyaki sauce
Mozzarella cheese, sliced thin

Broiled tofu takes on an unusual chewy texture. Firm pieces can be skewered for shish-kebabs. Brush the sliced tofu with any of the sauces mentioned. Or, try topping the slices with mozzarella cheese. Arrange on an oiled broiler pan. Broil until the slices becoine brown and crusty; turn and brown the other side. These slices can be eaten as they are or with any other kind of sauce. "

Thanks for these suggestions! I have not had the willpower to do nuts (I lose control with them) but some of these other suggestions sound very yummy!

I find that as long as I have unsalted nuts, I don't tend to overeat them.

I just wanted to bump this thread, because I found it useful. My favorite LC snacks are more salty than sweet:

Celery with almond butter
String cheese
Seaweed snacks (the best come from an asian or organic grocer)
Bresaola (plain, or drizzled with olive oil and lemon)
Dill Pickles & Kalamata Olives
Oopsie rolls with almond butter
Flax Crackers with Brie dip

I just remembered a favorite from childhood: ham roll-ups. I get vegetarian "ham" slices, spread with cream cheese, sprinkle on chopped green onions (white and green part) and salt, and roll up into tubes. Mom used to slice them into pinwheel shapes, but often before she could, we'd sneak whole tubes off the counter and run with them. LOL

Hi! I also do the 'roll ups' (breadless sandwiches!) using veggie ham/chicken with pesto/spinach/salad inside and a cocktail stick to hold it together (for a packed lunch).

I tend to take little lunchboxes everywhere with bits and pieces in so I never have to worry about finding low carb snacks when I'm out and about.

Flax mug muffin with soft cheese/peanut butter.

Celery with peanut or almond butter. Duerr's peanut butter is only 4.4g of carbs per 100g and is so rich and sweet!

Almond flour pancakes.

Kale chips.

Yoghurt. Alpro soya yoghurt is only 1 or 2% carb.

Veggie meat substitute - in the UK Quorn roast 'chicken' comes ready to eat and is great as a snack.

Edamame.

Kintaro flavoured pumpkin seeds are low carb and you can get them at Nudo Sushi box.

Nuts from the home baking section are often lower in carbs than the ones in the snack section! Aldi almonds are 3.8% carbs.

Olives.

A square or two of dark chocolate. Lindt 90% Cocoa is 14% carbs.

In the UK, Tesco's own brand veggie hot dogs are low carb and tasty.

Also - I sometimes distract myself by just having a cup of tea with almond milk/lemon or fizzy water.
