Squash fajitas--way good!!
Squash Fajitas
2 yellow squash, sliced on the diagonal 1/2 med white onion, sliced 1 red bell pepper, sliced (you can use green but red is sweeter) 2 T. butter 1/2 cup leftover cooked rice (I used spanish rice)--optional a few cilantro leaves, however much you like Slices of American cheese Flour Tortillas or lettuce leaves or steamed cabbage leaves Saute onion a couple of minutes, then add red bell pepper and saute a couple more minutes, then add squash and season with salt, pepper, celery salt, and Mrs. Dash original. Be sure and don't overcook--the squash is better al dente. When you turn off the burner, add in the rice just to heat it up a little. While that is cooking, heat up a LC Misson flour tortillas and spray butter on it, then put 2 slices of cheese on that. Then add fajitas. For a little kick, add some chopped jalepenos or some salsa.
