August menus/What did you eat today?
I had a homemade V-8 juice for breakfast.
Then some sunflower seeds for a snack. Lunch was green pea salad with cheese cubes in it, tomato and cilantro salad, and wild rice. It was the first time I have had wild rice and I like it, but it took a long time to cook. For Dinner--looking for ideas/suggestions ? |
I had a chicken mushroom Cheese eggwhite omelet for breakfast
i'm about to have stoplight Cottage cheese salad for lunch This evening I'm gonna do something with chicken breast, I dunno, I flattened it, and I might spread some onion and cheese inside roll it up and roast it. Barley Tea is a wonderful beverage!!!!! |
Can you post the cottage cheese salad please?
I'm always looking for ideas for cottage cheese. Most of the time, I just eat it with pepper on it and maybe hae some crackers. I do put it on top of salad, but I'm not very inventive when it comes to cottage cheese. Your menu sounds good too. |
These days I live out of the garden. Ratatouille every other day, today w/ organic hot dogs. Banana peppers, cheese, flax bread & almond milk for breakfast. My menus are boring but I have good appetite so its ok. Oh yeah, I eat 2-3 c yogurt per day.

I think its always interesting to see what other people are eating. It usually gives me ideas.
I eat a lot of the same meals too...habit and cuz I get tired and they are easy to fix. I eat boca burger patties a lot with cheese and usually green beans and some salad or else an omlette with lots of veggies in it and cheese. |
I love Ratatouille!
Stoplight Cottage Cheese 1 cup of cottage cheese 1/2 cup each of three veggies of green yellow and red- I chose: cucumber, yellow tomato and red bell pepper. My mom who can't find yellow tomatoes used red tomato and yellow bell pepper cracked black pepper Parsley Flakes spices and seasonings to your taste. I used garlic powder, dried sweet red pepper and nutritional yeast. Easy Peasy: remove the seeds from the cucumber and slice thinly then chop. Remove the seeds and juice from the tomato, slice thinly then chop slice and chop the bell pepper Stir into the cheese with a few shakes each of Parsley, garlic powder, black pepper, paprika, and any other spices you enjoy: you can use italian spices, curry spices, spicy spices like cayenne and hot sauce. serve in a bowl with a spoon or scoop onto thin crackers or cucumber rounds, or stuff into a tomato or small bell pepper. I ate with with a spoon and it was cool, crunchy and refreshing. |

I am not a big cottage cheese fan but I may try that salad, I have so many banana peppers to use in inventive ways. Gazpacho is one of my favorites this time of year. I am also getting hooked on lemonade w/ erythritol.

If you eat watermelon, it's great to juice some up and add to lemonade.
That's something I discovered last week. I only use the red part of the melon and I mixed it half and half. |

Yesterday, I had Ground Turkey stirfry with mushrooms, caulifkower, and italian cut beans Ground Turkey mushrroms, cauliflower and cheesy sauce ( cottage cheese, cheddar) Apple watermelon Today I had the same thing. |
Yesterday I had a boca burger patty with cheese, lettuce and tomato salad, and some green beans. I have this meal a lot. For dessert, I had some strawberry-banana sorbet that I added some coconut milk to. It was a little icy, but I don't know how to fix that.

Sorry no suggestions for icy sorbet, I've heard of using lecithin in recipes or one of the vegetable gums like xanthan.
Yesterday: Popcorn for breakfast :o Same as yesterday, Turkey stirfry casserole sorta thing ... twice Evening snack/meal, tiny bit of chicken sauteed with snopeas and celery and made into a soup with chicken tomato bouillion. All this turkey eating cause it was gonna expire soon. |
Yesterday I had a boca burger with bbq sauce and mustard.
Then I had half a can of sliced potatoes with a can of green beans sauteed together and a slice of onion in them. Not very exciting. I need to perk up my dinners somehow. |
Yesterday I had the toppings from 1.5 slices of supreme pizza
Then for dinner I had a big lettuce, cucumber, tomato, broccoli salad with cottage cheese and salsa as dressing and rotisserie chicken breast shredded into it. and a plate of cooked veggies: roasted squash and zuchinni and bell peppers, steamed cabbage, boiled green beans and 4 breaded shrimp. Dessert was a tiny slice of watermellon like 2 inches across and 3 inches high, and a couple spoonfuls of sugar free lemon jello. |
I've got some ground Turkey so this is what I'm doing with it.
First Half is going into a Turkey Version of Linda Sue's Beefy Mushroom Soup... Turkey-ey Mushroom Soup!:laugh: it's 1/2lb ground turkey, 4 oz brown mushrooms torn into bits, 1 cup of beef broth and 1t( or to taste) of beef bouillon powder, 1 cup of Libby's pumpkin puree. The other half is gonna either be Taco Salad, or Curry, since I have some pumpkin left over. If it's Taco Salad, that's easy, you all know how to do that. Curry is to brown the meat, cook some curry friendly veggies, then add the pumpkin puree, some chicken broth and curry spices to taste. Serve over Cauli rice. I might make the taco salad cause all my cauliflower is frozen and impossible to rice, or... I might just serve it over steamed cauliflower. Either way is good. |
Well I ate cheese & yogurt all day. Seems I am developing allergic reaction to tomatoes &peppers from the garden. I started on Benadryl. Crazy, but my tongue burns & my scalp itches. I've had a reaction to radishes before & cumin. It has to be the tomatoes & peppers as I do eat a lot of them & not much else these days :confused:.

I'm sorry to hear about the allergies. Could it be the acid in the vegetables? I know tomatoes are very acidic. I love them, but sometimes they make ulcers inside my mouth. This link might have some info that will help. http://happyherbalist.com/alkaline_acid_balance.htm
I had homemade vegetarian chili yesterday. It was okay, not great. I also had two homemade v-8's. Today, I may make pasta with veggies--don't know what veggies yet, gotta check the fridge. I'm about out of ideas besides my beloved cheese. |
Hi Nigel, I've been so depressed I went on a 2 day eating binge. I binged on hwc, whipped cream in the can sweetened w/ splenda & for good measure 5 fiber gummies. The allergy that has me so depressed is the ulcers on the tongue. Cant get one of them to heal. I started eliminating tomatoes, then peppers. Meanwhile the garden keeps producing & I just keep getting more stressed. I dont feel so much right now even after regular eating for the last 2 days. Bloated & full feeling:sick:
I tried rinsing w/ baking soda, no help. Salt rinse helps somewhat. Best is swishing w/ coconut oil. I started taking Benadryl & that has helped a lot. I switched from hwc in coffee back to half & half to avoid carregeen, thinking maybe that is causing problems. |
It's so hard when you don't know the exact cause of the problem.
I do think the process of elimation helps, but you might not be able to tell until the ulcers heal. It might sound crazy but I put salt on them in my mouth and just for general info, it does burn, but they heal faster, if you can stand it. I'm not tough, I've just done this for years. I get those ulcers from fresh pineapple too and once in a while, canned pineapple. Peroxide rinsing might help, but be careful and don't swallow any. Hang in there, it will get better. Don't beat yourself up, okay. For the tomatoes and peppers, just put them in freezer bags and save them for later. You can just cut up the peppers and you really don't have to do anything else. You can do the same with the tomatoes or you can blanch them in some boiling water for about 3 minutes and remove the skins first--I never do, I just remove them when I get ready to use them. Either way works well for an easy save. |

Try putting some Vit E oil directly onto the ulcers. I just make a pin prick in a capsule and squeeze the oil on several times a day. Heals canker sores and mouth ulcers really fast and cuts the pain instantly! :)

My ulcers look a bit better than before. They are not really painful, just aggravating. Havent had a fresh tomato in 4 days. I do still eat raw banana peppers though. I've been cooking garden produce into ratatuoille & freezing that. I have 2 lose these 2 lbs around my middle, I feel yucky :sick: |

I all, I am jumping in here. My weight is out of control. Been very lazy.
Breakfast: Quick Quiche - eggs, cream, cheese, green onions, spinach Lunch: Hugh Jass Salad - lettuce, spinach, cabbage, sunflower seeds, hard egg whites, olives, zucchini, EVOO & Vinegar. Dinner: Gardein "Chicken", green beans with garlic and butter If you haven't tried Gardein products - check them out. The "chicken" scallopini has 4 carbs (2 fiber). My son (6ys) is veg and really picky eater and he loves their "chicken" nuggets. |
yesterday had a protein shalke with almond milk
Chicken soup with veggis ( too salty) Today Chicken and Onions Shrimp and cucumber salad Shiritaki noodles simmered in Salty soup broth from yesterday/.( won't drink broth) Gotta get some water weight off from salty soup yesterday. I shot up two pounds :eek: |
tonight i made lentil patties;
lentils leeks mushrooms with garlic, chilli, ginger and tumeric - made into patties and fried. served with mint and yoghurt dip. :) |
Rua, sorry I just found your post. Ratatouille is made by sauteing onions & garlic in olive oil, adding peppers of your choice, followed by tomatoes. If you have squash & eggplant on hand add those after the peppers. You can be liberal w/ your olive oil use, it adds flavor. I grow okra so I add that also. Cover & cook until tender.
Still struggling w/ tongue ulcers, probably from the tomatoes. They go away but then come back! |
