has anyone made a low carb veggie pie??

is there a way to make a low carb pastry or something similar? i love pie and miss it! :love:

gotta run with some teenagers to a hippy store, but search on "almond pie crust" ... some amazing ones on the recipe suggestions page!!!!

This is the crust I use. I'm not sure who to give credit for this one.

1 1/2 cup ground almonds or almond flour
1 egg white
3 tablespoons softened butter
2 tablespoons splenda

Mix together pressing into sprayed pie pan. Bake 10 minutes for things like strawberry pie or fill immediately for cheesecake instead of pre-baking it.

I have made it without the egg white, but it didn't stay together very well.

If you don't mind eating jello, there is a recipe on the board for a strawberry pie that is great. It does use dairy (cream), but you might be able to substitute with almond milk or something if you don't use dairy.

awesome nigel thanks for that, can i just ask, do u cook it for 10mins on its own and then fill it? why is that?

any chance you can make savory pie with this crust or is it too sweet?

no i dont eat gelatine and i just realised the veggie jelly is full of sugar :(

I am not at home for the next few weeks, but did find a vegan gelatin substitute and will take a look at it when I get home. I never did try it out, but bought a few boxes when i found it (out of excitement, lol!). The one thing of concern was that the prep/use of it is different than the directions in recipes for gelatin, apparently.

lol on hippy store .. it would have been called a "head shop" when I young .. all kinds of hippy / vintage style clothing, jewelery, etc .. my teen makes a pilgrimage there every summer, lol, when we are down here near my parents' place .. I brought three 16 yo girls, lol ... one way to stay young, I guess ..

p.s. I normally wouldn't have posted before running out, but i know you all have 5 or 6 hours on us here ... and I can see pie crust as an urgent thing, lol lol!

I cook it first because the strawberry pie isn't really cooked, just the jello part and then put into the crust and then filled. I think CarolynF posted the strawberry pie. I've only made other pies with pudding, so no cooking there either. I don't know how it would work if the filling needs to be cooked also. Sorry.

Wonderful!!! I made a rhubarb crumble (lc) last year -- didn't have quite enough rhubarb and added some blackberries to it ... it was amazing that way too (in case you run out of rhubarb,lol!)

I could never run out of rhubarb! :D tesco is only two mins away, get about 5 stalks for 2euro :D i LOVE it!

made another yesterday but didnt have any as we got indian:blush:
i got saag paneer but it was a creamy orange colour so im guessing it wasnt as low carb as i was hoping :(
