lc veggie korma
off to make my first ever lc veggie korma!
Never used coconut milk before so this will be an experience ... will report back ,.... if i survive! ![]() |

The korma was nice, sauce a little thinner than I would usually like but my 10 and 13 yr old daughters liked it too, so it must have been ok ![]() recipe for the sauce olive oil 2 cloves garlic crushed 2 tspn ginger paste 1/2 tspn ground tumeric 3 tspn curry powder 10 fl oz coconut milk 2 oz onion (16g carbs, 7 g protein) serves 2 it says, but i reckoned would have easily served 4 or 5 then I had quorn, courgette, mushrooms, peppers. basically fry off the onion and spices etc, add the veg or whatever, then add the coconut milk at the end and warm thru without letting boil, season. so many variations on this one. taken from rose's diet book, she suggest making the sauce, then adding to whatever , ie curried eggs just add a few tablespns of the sauce to the boiled eggs. I served mine with spinach, the girls had brown rice, with the meat eater getting a serving of stirfried meat on top, and the veggie one having the quorn. smiles all around ! |

![]() definitely have to try this one! aww thats so cute, one of your girls is veggie and the other is a meat eater? My lil one says shes both, haha! if anyone asks her she says 'im a veggie and a meat eater', she loves my veggie food and we have a veggie/hari krishna restaurant here called govindas and shed pick it over any junk food any day! ![]() Thanks so much for the recipe! |

yes my eldest became vegetarian a year ago (huge battle of wills because I didnt want her restricting her diet, faddy as it already was, but she has broadened a few horizons) and the younger one is 'both' haha. my meat eating hubbie works away mon to fri so she will happily eat veggie to tag along with us and share meat at the weekend with her dad. bless her she thought she was eating chicken for a few years til I told her it was quorn! |
