that only another lowcarb vegetarian or vegan would appreciate ... I found actual clear vegan gelatin substitute at Whole Foods for $1.79 today while browsing the baking aisle ... For 8 years on this lowcarb kick (ha!), I have wanted to try that recipe for instant cheesecake but a key ingredient was like gelatin <shiver, cringe, ahhhhhhhhhhhh>

Of course, now I cannot find that recipe anywhere, lol lol!!!! and, when I do actually find it, I will have to alter it since the substitute does not behave exactly the same as gelatin - not as forgiving, but .... yay! Thought I could share it here ..

p.s. it is made by "Natural Desserts" and is called unflavored dessert gel .. they also have flavored ones .. probably with sugar ... If you google it comes up!
