Egg "potato" salad!
I think this makes a nice lunch, because its got veggies, protein (eggs) and some fats all in one. [COLOR=#810081]http://genaw.com/lowcarb/helens_potato_salad.html[/COLOR] or [COLOR=#810081]http://genaw.com/lowcarb/low_carb_potato_salad.html[/COLOR] I make my own version (sorry, I dont measure exactly) 1 head cauliflower - chopped and steamed. 5 hardboiled eggs mayo and dijon mustard diced celery grated carrot diced pimento or roasted red peppers (can also use raw red peppers) a spoolful of dill pickle relish celery salt white pepper And if you're traditional, you can sprinkle a bit of paprika over the top! Sometimes I add a little fresh chopped dill. I have also found that i like a little bit of shredded zucchini in this (or in egg salad). Its bland when raw, so it adds a little bit of texture with a mild taste. |

It sounds good!!! Too bad I have mayonnaise phobia, lol!!! The only good thing about it is I never felt tempted by potato salad, lol!!

You can use sour cream with a squeeze of lemon juice.
Theoretically, greek yogurt can sub for mayo or sour cream... but it sounds weird to me with egg salad! (I've used it with great success in curry chicken salad, but thats getting beyond the scope of this forum) |
