Vegetarian Nut Loaf! DELICIOUS!
I am amazed!! This is really good!
Here is the recipe I concocted, based loosely on post #7 in this thread other vegetarians who are low carb and eat natural foods? 1/2 lb walnuts 2 tsp butter and 2 tsp olive oil 2 medium onions, diced 1 to 1 1/2 lb mushrooms (I used only 1/2 lb and it needed more!), whized through a food processor or finely chopped 1/2 cup of white wine* one half zucchini, grated one carrot, grated 4 oz grated parmegiano reggiano (the real stuff!)* 1/4 cup dried cranberries 3 eggs a tsp of garlic powder fresh parsley or fresh thyme ![]() The chopped up mushrooms to the right. Carrots and zucchini in front Parmesan cheese to left, cranberries, and toasted nuts up top. Butter. White wine (sauvignon blanc) Toast nuts in a dry sautee pan, while stirring to prevent burning. Caramelize the chopped onions in 1 tsp butter with 1 tsp olive oil ![]() Caramelize the finely chopped mushrooms in 1 tsp butter with 1 tsp olive oil. Deglaze the pan with a 1/2 cup of white wine. My 8oz of mushrooms shrunk! You will want to use more! I swear this looked like hamburger, but tasted heavenly! Add the grated zucchini and carrot to the mushrroms and cook a few minutes until soft. Stir in the caramelized onion. Stir in the parmesan cheese and walnuts and dried cranberries. Stir in fresh parsley, thyme, or other herbs. Mix in 3 eggs to bind everything. ![]() Place in a loaf pan and bake at 350 degrees for 45 minutes ![]() ![]() ![]() ENJOY! ![]() I think the flavors would go beautifully with mashed butternut squash. I also would really like to concoct a cranberry glaze to go on top of this. Perfect Fall meal! *Disclaimer! Some cheeses use rennet from a cow, vs rennet from a plant. Forgot to add... I also add salt and pepper to food as I cook.
And I added a dash of nutmeg as well. Here is the nutrition breakdown: This is for the ingredients as listed above, using 1 lb of mushrooms. Per serving: one 1/8 of a loaf slice Cals: 338 Fat: 26g Carbs: 13 Fiber: 3.5g Net carbs: 9.5g Protein: 14g For the whole recipe from ******.com Cals: 2706 Carbs: 211.3g Fiber: 28.5g Net Carbs: 182.8 Protein: 113.1 Last edited by Strawberry; 11-02-2010 at 06:59 PM.. |

Looks good!!
I would sub something like cauliflower for part of the carrots to save the carbs and dehydrated cranberries for dried cranberries because they have no sugar added. |

Hmm, interesting... I actually used dried unsweetened cranberries from Whole Foods (ingredient: cranberries only), but I dont know what ****** calculates for it. Obviously you can leave out the cranberries and make lots of subs. I probably should have just thrown in the whole zucchini.
If someone can tell me how to copy the ****** chart (showing what foods the carbs come from) I could post it for you all. |

OMG Strawberry!! That looks absolutely delicious! Did you serve it with any kind of sauce??!!!! Also, were your walnuts chopped or halves?
I really am bummed out that we have a nut allergy in one of my vegetarians, otherwise I would absolutely make this for Thanksgiving!!!! I may have to try some of these great recipes with pumpkin seed or sunflower seed substitutes - which she seems to tolerate ... Beautiful photos!!!!! ![]() Pauline |

Well, this was a little experiment in the kitchen last night.... I would have liked a cranberry sauce with it (or maybe something like a cranberry/ketchup or cranberry bbq sauce) It would have complimented the flavors. But I was hungry and just ate it as is was!
I used walnut halves and pieces that were weighed in the store from the bulk bin to be 8 oz. Price not bad - about $3.50, since 6.99/lb. I finely chopped them up, so it doesnt matter what you buy. I tried a bite with a dab of ketchup, mayo, and a pickle chip, and it tasted darn close to a hamburger! My goal was not to re-create a meatloaf (I HATE ground beef! LOL)... I wanted a different Christmasy nut and cranberry flavor. BUT, if you were to leave out the cranberries and nutmeg, and add in some tomato paste or ketchup and worchestshire sauce* and whatever else goes in a meatloaf.... this would make a very good meatloaf sub. Pumpkin seeds would be a bit to dry and crispy... but I think sunflower seeds might work. I would probably increase the amounts of the various veggies so its not too densely sunflower seeds. *has anchovies, so if you're strict, get a veggie version Last edited by Strawberry; 11-03-2010 at 08:31 AM.. |
