Good morning! I am having a great morning. I've been on on plan since Tuesday! Yeah me! Between the lack of carbs in my system and the beautiful weather we are currently having, I am feeling really good. I still have some health issues, but I'm much better at coping with them right now! Life is good!

MIM! Sooooooo glad you're feeling better! YAY!
Hi Yam! ![]() Well, we're slowly gaining on DH's bad hip. We came home from the chiro with a Tens pain management unit. It's like the electrodes they hook you up to at the chiro but it's portable, about the size of an Ifone. And his BFF told him about his Mom taking the glucosamine working so he's on board, YAY! Woke up feeling crappy, now I'm thinking it's another cold and not a hangover ![]() |

Irish Linguini from O'Toole's Restaurant and Pub Posted at: 03/16/2012 1:16 PM | Updated at: 03/17/2012 2:20 AM O’TOOLE’S IRISH LINQUINI O'Toole's Restaurant and Pub - Albany, NY Ingredients 2 tablespoons butter, unsalted 1 tablespoon oil 1/4 cup small diced carrots 1 cup diced cabbage 1 tablespoon minced shallots 1 teaspoon minced garlic 2 cups cooked corned beef, sliced and shredded 1 teaspoon freshly cracked black pepper 1/4 cup white wine 1 1/2 cups heavy cream 1 1/2 cups half-and-half 1 tablespoon Dijon mustard 1 tablespoon whole-grain mustard 1 tablespoon prepared horseradish 2 cups grated Irish white Cheddar or extra-sharp white Cheddar 3/4 cup fresh peas, or frozen 1 pound cooked linguini 1/4 cup grated Parmesan Directions In a large saute pan over medium-high heat, add the butter and 1 tablespoon oil. Add the carrots and cabbage and saute until they are just tender and the cabbage is starting to caramelize, about 20 minutes. Stir in the shallots and garlic and saute 3 to 4 minutes longer. Add the corned beef and black pepper and cook until the beef is starting to crisp, about 10 minutes. Stir occasionally during this process. Deglaze the pan with the white wine. Add in the cream, half- and-half, the mustards and the horseradish. Let simmer until the sauce has tightened up a bit, about 5 minutes. Stir in the shredded cheese and adjust seasonings, as needed. Stir in the peas and the pasta, then transfer into a serving dish. Serve immediately garnished with the Parmesan

I did it again! I've been invited to a parishioner's home for dinner tomorrow and I asked her for low carb options. She is going to have bbq chicken and green veggies. I will scrape the sauce off! I can't always do this. When my parishioner's are elderly I eat what I'm served. This woman is my age and I'm comfortable asking her to help me out!
On the down side, my dd fixed the corned beef and cabbage today and it was awful. It wasn't her fault - the meat was just way too salty! I've never had something that salty. And it is the same brand we always buy. So, we could not eat it. I'm so bummed! |

Mim, I soak my corned beef at least overnight, sometimes for two days, it really helps and you taste beef not the brining.
Good luck with your dinner. GT, I was watching a documentary of President Kennedy's visit to Ireland in June 1963. The narrator said the Irish are not sentimental or overly emotional as a people........I find this hard to believe! Yam YAY on the loss! |

Low Carb Irish Cream
3 cups of heavy cream 1 pint Irish whiskey 1 tsp. instant coffee 1&1/2 tsp of cocoa powder 1/4 tsp of sweetzfree or sweetner to equal 1 cup 1 tsp. vanilla I mix everything together in a sauce pan and heat thru. Store in fridge for up to 2-3 weeks. 47.5 carbs for total recipe I wonder if it would be more friendly with fat free half and half.......... Davinci's makes a Sugar Free Irish Cream syrup. Did not get raves from folk here tho..... Last edited by CCGirl; 03-17-2012 at 04:28 PM.. |

Good Sunday morning! I've made a chart! I'm weighing everyday and logging it in my spiffy chart. I've been on plan since Tuesday and have lost 7 pounds. I'm on fire!
As I mentioned, I've got dinner at a parishioner's tonight and then at least one, maybe two lunch meetings this week. The meetings are at restaurants where I'll be able to order on plan food. Did I mention that I'm on fire? ![]() |

My stats are : 5'8 weight: 165 my goal is to get back down to my weight of 130. I am going to be a maid of honor in my friends wedding which is April 28th (this year) so thats about 1 month & 9 days....do you guys think i have a shot? any suggestions??? Also, if i eat salad would it really hinder weight loss?? i love salad and miss eating it when i attempt this diet thanks for all your help danielle |

Good morning! How was everyone's Sunday? I had a fine day. Dinner last night for me was a chicken breast, salad, broccoli and brussels spouts. She had carrots too, but I didn't have any. It was a lot of veggies and I'm up .5 but that is ok. I felt like I needed some carbs - and the .5 will be off tomorrow and probably more! I'm on fire - burning the fat away!
