Ingredients 1 1/4 pounds trimmed pork shoulder, cut into 3-by- 1/2-inch strips 1 large onion, cut through the root end into 1/2-inch wedges 1/4 cup plus 2 tablespoons extra-virgin olive oil 3 tablespoons fresh lemon juice, plus lemon wedges for serving 2 tablespoons chopped fresh oregano 2 garlic cloves, mashed to a paste Kosher salt and freshly ground pepper 1 cup Greek-style whole-milk yogurt 1/2 European cucumber, seeded and finely diced 2 tablespoons chopped fresh mint
n a medium bowl, toss the pork strips and onion wedges with the olive oil, lemon juice, chopped oregano and half of the garlic paste. Season with 1 1/2 teaspoons of salt and 1/2 teaspoon of pepper and let stand for 20 minutes. 2.Meanwhile, in a bowl, mix the yogurt, cucumber, mint and the remaining garlic paste. Season the tzatziki with salt and pepper. 3.Heat a large cast-iron griddle or grill pan until very hot. Add the pork and onion wedges along with any marinade and cook over high heat, turning once or twice, until the pork and onion are tender, about 10 minutes. Transfer the pork and onion to plates and serve with the tzatziki, lemon wedges |

Did I tell you all that I'm a grandma for the fourth time?? New Year's Eve baby up in British Columbia! We are FINALLY getting ready to buy plane tickets. (No job, no disability pay for 6 months puts a cramp in your wallet) I am so excited!! Now I hope I can squeeze into an airplane seat. I'm about 5 pounds bigger than the last time we flew, and it's a 7+ hour flight to Seattle before a 4 hour drive.
AND I think I'm selling a pretty good sized account this week. (Hope hope hope) because otherwise I'm WALKING to Canada, we won't afford the rental car! AND I get my Unemployment Hearing on Friday for the 6 months I was laid off. I really hope they decide in my favor so I can pay back the loans we took out! Lotta stuff happening, so there will be a lot of stress (good and bad). AND baby girl left to go back to college this afternoon so it's kinda sad. You will all now be responsible for holding me accountable for healthy eating so I can manage all the stress.

Letting go of the hurt AND the fat ~~~~ YES! I let too many people hurt my feelings but now it's also hurting my knees carrying this extra weight. I'm ready to let it go!! I did not know til now there were so many of us in this boat. My stepmom was the first to convince me I was a hideous atrocity. I couldn't appreciate how pretty I used to be until just lately. I have even started to let my picture be taken, and if I ever get a good figure back, I won't take it for granted! I am ready to celebrate LIFE. Ready to celebrate who I am today!! I'll be skinnier tomorrow, but I am ok with the decent, caring human being who takes care of herself today! My mother in law and my stepmom have no power over me unless I give it to them. They have held it too long as it is, I'm taking it BACK!! |

Oh Christine - congratulations on the new baby! I have a granddaughter whose birthday is January 2. I hope you get the finances worked out. I was unemployed for 8 months and am just now caught up on bills. Don't you just love trying to make ends meet!

I need some shrimp ideas I am getting bored with just plain shrimp (already, its bad I know haha) I usually do it with soy sauce a bit of pb and spme hot sauce and serve it with shiritaki noodles, but what are other ways I can make it, maybe a sugar free teriyaki? what else?

I tried lactose free milk in my coffee this morning its not bad! and i think its roughly the same amount of carbs as my cream so thats good too and seeing I am a little lactose intolerant this should help some of my tummy issues!

I guess I'm a cheater. I am still using creamer. Not much, and it's sugar free, but I refuse to budge on my coffee. I'm losing steady, so I guess it's not too bad.

Much about artificial sweeteners stalling you that I cringe when I use them, but again, I won't budge on my coffee, and I guess it's the lesser of the two evils. Have u checked the sugar free powered creamer? Would that Make a difference? |
