What is pot cheese

"From the book" on allowed cheeses for QWL:
Cottage Cheese: made with a very small percentage of skim milk or whole milk added in preparation for increased moistness. Pot Cheese is cottage cheese without any milk added. Farmer Cheese is cottage pressed into a firm bar for cutting. There is no milk added. Skim-Milk Cheeses: Cheeses marked "made with skim milk". If marked "part skim milk," it is better not to include the cheese on this diet. (I have never seen pot cheese or farmers cheese.) |

Hmmm, I've always heard pot cheese is ricotta because of how it's strained....
