Cut a skinless, boneless chicken breast into one-inch cubes and dry rub with the herb and spice mixture. Allow to marinate, then cook in a non-stick pan, stirring constantly to keep herbs from burning. Cook until chicken is cooked through, but still moist.

2. Mock vanilla ice cream. Use a blender or food processor to turn non-fat cottage cheese to a creamy consistency. Add a drop of vanilla and zero-carb sweetener to taste. Freeze, stirring every 15 minutes or so, until it is just beginning to harden.

3. Shrimp cocktail. Stir seafood seasoning into fat-free or nearly fat-free chicken broth and bring to a boil. Add shrimp and simmer until cooked. Drain, cool and serve with cocktail sauce
.

4. Mock chicken salad. Blend a hard boiled egg, enough water to make it the consistency of salad dressing, seasoned salt, a pinch of celery seed and a bit of garlic powder. Mix in a splash of vinegar and a little bit of zero-carb sweetener to taste. Cut cooked chicken or turkey breast into cubes, add the egg mixture and serve.
Ooooh, these are great! Thank you! I'm going to try them this week.

My mini goal for June is to be down to 190 by 29th June. I'm not sure how much I weigh right now, but should be around the 210 mark. So that's 20 lbs gone for me in June. Fingers crossed!

I just missed my bus to get back to Asturias. I'm such a nimwit. Bought another ticket for later tonight, which means I'm travelling overnight. Grrr. I'm going to be knackered tomorrow. I won't weigh tomorrow as a result (travelling always makes me gain for some bizarre reason), and will weigh on Tuesday instead. So far I've had a good day food wise. I'm going to boil some eggs now and munch on them til I have to leave again.

Hey swebb, do you know if that applies from "overweight" to "healthy" range too? BTW, my June goal is 1st goal weight. 189.

Good day all, just got home from work. Still losing in June, the Stillman's weigh? That is awesome. Tom has arrived today, instead of tomorrow and he is making me feel like a bloated burrito. =( Drinking my seltzer water now and tonight is grilled chicken breast on the bbq with a side salad! Love ya'll! Can't believe June is almost here. Going to Massachusetts the last week in June and I'd like to lose about 15 lbs. by then!

Yes! Insurance companies charge a huge premium to cover you (IF they even do) if you are Obese. The premium goes down if you are "Overweight" and then down again if you are in the "healthy" range. The added benefit is that the more "healthy" you are the more insurance companies and plans you get to choose from.

Low Carb Bar-B-Q Sauce

Here is a recipe for a LC barbque sauce - this was taken from another thread and was submitted by Stacey .

Here's my (Stacey's) sauce recipe

1 bottle of heinz one carb ketchup
3/4 cup of water
5 tbsp splenda (dry) or equivalent of liquid splenda
1/2 cup apple cider vinegar
1 1/2 tsp onion powder
1 1/2 black pepper
1 1/2 tsp yellow mustard
2 tbsp worcestershire
2 tbsp lemon juice

Combine all ingredients and bring to a boil. Simmer for 30 minutes, stirring occasionally. This sauce is very good with pulled pork. Spicy but not hot, sweet but not too sweet and it is a bit on the thin side so a little goes a long way. For thicker sauce reduce amount of water.

Whatever "knackered" means, I hope you un-knacker soon! Very wise not to weigh if you know that travel causes a gain. You are doing so well, I'm sure it will leave no permanent damage. Get your rest as soon as you can, though, so you won't be to tired to eat right. Stay safe!

This sounds good. I went and ordered some Hickory Smoked BBQ sauce which I am awaiting but I would still like to make my own. Does it keep well?

Your results are amazing. Did you suffer any stalls at any time? I am guessing if I do I will have to drop the AS.

Oh yeah-lots!!!! Although at the beginning I'm not sure--I didn't weigh that often. I didn't want to see those numbers on the scale so I measured and went by how my clothes fitted. I did lose lots of inches. (I'm sorry about that now-I'd like to be able to see what I lost every week now)I really only started weighing like a mad woman around May-and even then I don't really write it down. They have really only been mini-stalls though-like for a week maybebut it's been really slow-especially since November. Maybe it just feels like that!! I've never done the AS thing-no diet coke, no chewing gum-some days I would love a coke but I think it might stall me now!!
