Hi Everyone!
![]() Well I'm back on the beach. Life got a little crazy there, and I realized the scale is up and I've really been eating anything I want. Time to regroup and focus. It's a new season, and a new month, and I feel ready to recommit! Goal is to lose 10lbs and fit back into my clothes. Starting weight today is 124.6. Just got in from a brisk walk with my daughter. Here is my menu from today: B 2 egg omelette, salsa, sour cream, cheese S LF cottage cheese with chopped yellow pepper L Antipasto salad, RF dressing S yogurt with nuts D Pork chop, summer squash Lots of water...and still sipping away. Gonna try to be good and check in and post to be held accountable. Gonna be some challenges Im sure but Im ready to tackle them! Hope everyone is doing great and focused for fall! |

Hello from Key West!
We're getting tons of exercise, but my food choices have been just okay...a few too many off plan foods (OK, yes, I have eaten some potatoes - I admit it.) However, most of my meal choices have been pretty healthy (for example: scallops with a tomato spinach broth, pork tenderloin in a black bean salsa, burger with sauteed onions - no roll) but it's the darn accompaniments that are getting me. Hope all is well, I will check in with a renewed focus when I get home!! |

I made a spinach egg drop soup today that came out really good. I took 6 cans reduced sodium chicken broth, 1 frozen package of chopped spinach,4 cloves garlic, 4 small tomatoes, black pepper, a pinch of red pepper flakes and a dash of onion powder and let that simmer until the frozen spinach was hot and then I swirled in 2 eggs mixed with 2 tbsp grated cheese. Everyone really liked it and it was simple.
So today- b- turkey, lettuce, mayo l- salad w/ evoo and blue cheese crumbles and bowl of soup s-banana d- grilled chicken+ vegies Last edited by michele777; 10-05-2011 at 11:08 AM.. |

I have been trying to make my own soups so I can control what is in it to fit into SBD better. Like today I am trying a black bean soup with two cans chicken broth and one can beans which will wind up as four servings. That makes the bean serving more appropriate than a typical thick black bean soup which probably has a whole cup of beans per serving. It is looking a bit thin, so I will see how it tastes. Everything tastes good with a plop of sour cream anyway right?

The Pumpkin Bake was good"ish". Wasn't like my grandma's pumpkin pie, but it was good
8 oz cream cheese (I used fat free) 1 can pumpkin 5 eggs 1TBS pumpkin pie spice 1tsp cinnamon 1/2 c granulated splenda (If I make it again, I will prob tweak a little bit and add a few more spices) Beat the cream cheese til soft, add all other ingredients, bake at 350 for 40 minutes. let cool, top with cool whip. |

Here is a recipe that is really good.I changed the sugar to sweetner and salad dressing to RF and also the Parmesan cheese to RF, also the bacon to Turkey bacon.
Cauliflower Salad 1 head caulflower (washed and cut into smaller pieces.) 1 head lettuce 2c RF salad dressing 1 lb T Bacon cooked crisp and crumbled 1 small onion chopped 1.3c RF parmesan cheese 1/4c sweeetner Layer the ingredients in a large bowl in the order they are given above starting with the cauliflower.Make this the day before and store in the refrigerator overnight. Then 1 hour before serving, take out and stir. Then stir again right before serving. We had company the other evening and my friend brought this and I ask for the recipe. I have trouble eating veggies but I loved this! Hope you try it.Let me know if you do and how you like it!! |

I am definitely still messing up! I have eaten 2200 mg sodium and only had half of my calories for the day. Now I guess I don't eat anything else for the day! How can I stop this from happening because I have to keep an eye on sodium because my BP tends to be a bit too high.
All I ate was a bowl of homemade bean soup with 2 tbsp rf sour cream. 4 oz Ham with mayo and a salad with just vinegar and blue cheese crumbles. |

I normally use the bullion cubes... this way, I can more or less control the soduim content in soups... I can add MORE water to dilute it... add more SPICES for flavor... they also make lower soduim cubes too. Oh- AND I rinse the beans that contain sodium as well. |
