Well----
Last night's meal was BBQ chicken/ brocolli salad and green beans not too bad... B: Today was the quiche and V8- AGAIN! S: Cottage cheese Lunch: ( I didn't bring my lunch ) so-- probably a SALAD!Dinner: Celebrating a friends bday eating out- VEGGIES! I WEIGHED-- NOTHING!!!!!!!!!!!! I had gone up 2 lbs.-- down 1 but not where I WAS! i think I am REATAINING WATER.. AND not "going" well EITHER - when I leave off the "HIGH FIBER content".. everything STOPS! so.... ?? I can't drink that liquid fiber stuff- I want to GAG! feels like it sticks in my throat!

Weighed in this morning after my first week of phase 1.5....120.6...down 4 lbs!
Work has been crazy so I havent had time to post menus; but doing pretty good and OP. I made like a lazy lasagna out of spaghetti squash that is really delicious! I will be having portions of that for the next couple of days with some salads while I work some long shifts....12 hours today. Take care everyone |

Michele, not Rose, lol, but this is how I do it:
Chicken: Throw a chicken in the pot, onions, celery, carrots, sometimes canned tomatoes.....let simmer, add seasonings, like salt, pepper. I usually let simmer several hours. Beef: Same as above but with beef roast Strain broth from meat. Chop up meat if you want to add to the broth for soup. Now vegetable broth - I buy canned. Rose can weigh in on that one. |

Michelle, Cindy has it, basically. You could use bones, junk pieces like necks, backs, wings-- about 4 lbs to a big pot of water. Put in about a T of vinegar to help leach minerals out of the bones. You could get fancy and saute the veggies first to make a richer flavor, but in general throw stuff in your stock pot and let it rip. Add some garlic. If you use a whole chicken, take it out after it gets tender and take the meat off the bones or it gets rather flavorless. Then throw the bones back in to simmer longer. Leave out the tomatoes.

Hello from Miami! No, not another vacation. I'm down here on business.
As mentioned in my last post, I decided to have a renewed focus upon my return from my vacation. In fact, my husband and I are doing a Thankgiving challenge. We're cutting back on our meals we eat out, plus keeping a very SB friendly house. And even though yesterday was a travel day and pretty hectic, I managed to stay OP - although not enough vegetables. Michele, good advice from Rose and Cindy on the broth question. So in a pinch, I do use the low fat, low sodium chicken broth from College Inn. But both my husband and I really like to watch our sodium intake. I cook a big pot of split chicken breasts (on the bone, skin removed) about once a week. I use the meat for lunches on my salad or on a sandwich for my husband. I cook them with water, celery, onion, herbs, etc. and I freeze the cooking liquid in plastic containers. It's good multi-tasking - I'm making chicken we use immediately and freeze "broth" for when I need it. Buckhuntress, good for you!! And the spaghetti squash idea sounds great. Elaine, I feel your pain. I am also retaining water. In my case, I had too much crap last week on vacation and ToM is lurking. It's a double whammy. And because I am in all these business meetings (and not to mention a 3-hr plane ride), I have not been able to drink as much water as I would at home. Well folks, I need to head off to my meetings for today. Hope you all have a great SB day!!

I bet in many recipes you can just use water instead of broth. That certainly would eliminate sodium and any extra work on my part. Yes, I'm a bit lazy...

Land o Lakes makes a whip cream made with splenda. It is really good! Yes, it is regular cream but 2 tbsp seems fine to me as it is not high in fat and has no sugar.
I want to go a couple days a week with no meat(animal protein). I'm off grains again and feeling much better! New doc says grains are not all they are cracked up to be so don't worry about getting the whole grains in. Yeah! I'm loving the new doc! I've been a BIT MIA---
I've been sticking to the crustless quiche... for breakfasts one day for lunch I had a 1/2 of guacamole burger.. NOT HEALTHY!- shared with my RED HAT sister... I will say we WALKED and WALKED in a mall tho!! LOL! only had legumes for supper... then later, plain yogurt, peach. most other days 1/2 ww turkey or ham sandwich with green beans-- or other veggie. Today will be legumes 1/2 c. haven't weighed AT ALL!! I just FEEL FAT!! I can TELL!!!!! I'm very UNDISCIPLINED... A brownie will sneak in... or something else here & there... I've been keeping up my lunch 'line dance' 2X a week.. been going to TAI CHI once a week... Hope everyone has a GREAT weekend.. headed for the coast. |

My mom just got results back that her sugar was high. I told her to do South Beach but her friend said her nutritionist says just stay under 30 grams of carbs a day. I'm guessing the grains, fruit and beans may be too many carbs for her without counting? I'm very new to sugar problems. Any input on this?

Made a big pot of chili this morning...used a very lean top round beef roast cut into small cubes, loads of veggies (2 kinds of onion, 2 kinds of peppers, garlic, tomatoes), herbs (fresh cilantro and oregano, chili powder, cumin), red pinto beans, a beer, tomato paste, and lime juice. It's all cooking nice and slowly in the crockpot!!
And of course, we will have it leftover on Monday. Love doing the leftover thing on that first work day of the week. Happy Sunday! ![]() |
