Oatmeal Pancake Recipe

SB Oatmeal Pancakes

1 cup oatmeal
1 cup cottage cheese
2 eggs
1/2 cup milk

Put all ingredients into a food processor, and blend for about 1 minute, until blended into a smooth batter.

Head a non-stick griddle or frying pan over medium-high heat, until a few drops of water will sizzle. (Or set an electric griddle to 325) Pour batter onto heated griddle or pan, using about 1/4 cup for each. Cook until the top has bubbled and looks set, then flip.

Makes about 12 pancakes.

Hi Rose,

I have dry curd cottage cheese at home. Could I use this in the recipe? Would you add anything else to give it the extra "liquid"? maybe plain yogurt? And I'm assuming that the oatmeal is in it's raw state? Could you use the steel cut oats here?

Sorry Rose,

What is the serving size? one pancake?
I ask this because it sounds high in protein and as you know with my GBS I need all the protein I can get lol.

i'm gonna have to try these in a few weeks. these are a good wheat free alternative. i do miss my corn pancakes though.

They are yummy, aren't they. We eat them with cooked fruit on top, usually peaches or blueberries or apples with cinnamon. Try that sometime and tell me what you think!
