I ended up eating Turkey meatballs for breakfast, they didn't stay down. We went out for lunch, the place we went I don't like. They have nothing healthy not even a LF salad dressing. I ended up ordering a Turkey sandwich on WW, and a side salad instead of fries.
It was not Ph 1 but it could have been worse. Dinner is the same plan. So far lunch is staying in, but it's only been an hour

Had a productive day...errands, had a pedicure done, an hour of Super Callanetics and chatted with my best friend for a bit.

Stella gave me the inspiration to make some pesto scrambled eggs this morning for breakfast...OMG...they were so delicious! I sauteed a little vidalia onion then whisked 2 eggs with a large scoop of pesto and scrambled them. Definitely a keeper.

I was inventive at dinner and tried Tinatina's porcupine meatball recipe with brown rice and added some sauteed onions, yellow bell pepper and green bell pepper. Threw some tomato sauce on top and baked them. They tasted a lot like stuffed peppers. I love to experiment and I had gotten so tired of cooking especially when I was sick...so glad to have my mojo back!!

Wow Wiz, more beautiful pictures! Can I move in?

Hi to Serena, Reno, Susie, Laurie, Beth, Luisa and anyone I missed!

Hope everyone has a good weekend...I'm off to yoga class tomorrow at 8 AM!

Wow Dani - Those recipes sound good. I never thought of Pesto and eggs.

Well I just had dinner, beef with sauted mushrooms,onions,and peppers.
Real good and so far I feel okay

Good Morning.... Where did everyone go?

Today is gonna be a good day. My DH took my kids with him to Reno so they can spend the day with Grandma. This means I have the house to myself for 12 hours. This is a rare occasion. I wish I didn't have so much book work to do, Id relax, LOL.

Well I feel much better since last night so maybe these pills are working?

Todays food plan is as follows....

B - l/o chili

L - chicken breast, romaine salad

D - stuffed chicken (spinach,roasted peppers, cheese), broccoli.

It's just me today so it should be easy.

Progress report on my low carb deal: bodyfat is lower! I missed my weigh in at the gym on Thursday due to ugly traffic, and at home the weight is the same but bodyfat lower. I am OK with this!!

Happy Saturday!
I tried the whey protein shake this morning, and all I have to say is YUM-O!!!!!!!!!!!!! OMG it was soooo good! I made it with FF/SF Chocolate Fudge Pudding and I added a little of the powdered PB instead of the berries. I am so full! Thanks for sharing the great recipe!

Ok, gotta to get to cleanin'...have a great weekend all!

Just a quick check-in in the midst of busy times, kicked back in to Phase 1 this week, felt I needed a jump-start.
I'll be at Disneyland this week with my Mom, Step-Dad, 5 year-old Sister and Grandma. It'll probably be the last time I'll see them for a year or two since I'm moving to the other side of the country at the end of July. Plus the husband and I get a chance to say good bye to The Land, since we had annual passes for the past year. We're gonna miss it so much!

We're gonna stay OP as much as we can, but will probably make allowances here and there, and you know, I'm O.K. with that. We'll hop right back on and at least we'll be getting a ton of exercise running around with an excited 5 year-old little girl! XD

DH & I are Disney fanatics! Disneyland will always have a special place in my heart! Now that you'll be on the east coast, you'll be closer to Disney World!

I weighed my self this morning and I'm still the same. I lost 3 lbs the first week and nothing the last two. I started in phase 2 and I can't really do much exercise because of my knee, so I wasn't expecting to lose a huge amount of weight but hitting a plateau this quickly really has me bummed.

This is what I ate today-

B- 3 Lc pancakes and bacon
L- Hamburger and 1/2 on a romaine leaf w/ carb one ketchup and a half of a dill pickle
S- handful of peanuts
D- Salad w/ chicken, mandarin oranges, almonds and vinaigrette, and a few grapes
s-?

Beth, I see that you are not eating nearly enough vegetables. Actually, you are eating very little altogether. Also, given your grain intolerance, you might have something other than the pancakes for a while, delicious as they are.

I haven't been "losing" the last couple of weeks either. However, I am definitely noticing that my clothing is fitting differently. DH and I forgot to measure ourselves prior to the start of SB. DARN!

Don't sweat it. Stay on course...you'll see results.

Throwing my two sense in for you, Beth.....

I don't think you are eating enough and when I am really rockin the beach, I have vegetables with EVERY meal, and alot with lunch and dinner.......do you like v8? That's a good way to get some in at breakfast. And as Rose said; lose the pancakes for a while - do you do eggs? I can't remember, but throwing some veggies in a scramble, or an omelette or fritatta are good for breakfast.......Lunch is usually a HUGE salad with alot of spring greens or sweet butter blend with a lot of veggies chopped up and thrown in....Dinner is always more salad, plus a side veggie.....roasted asparagus, broccoli, cauli, sometimes a stir fry blend.....

I think if you start changing it up a little and EAT MORE - but more veggies - you will see some changes.

Thanks for the advice and encouragement everyone.
Cindy, I can eat eggs about once a week, more than that and I look like this ...Breakfast is my hardest meal of the day. I do not like V8 and the idea of veggies in the Am is yuck.
I would love to try your shake but I can't eat the SF pudding. I'm not sure about protein powder, I haven't checked the ingredients on that.
I'll have to go look at that eggless breakfast thread again and see if I can get any other ideas.

HI everyone.
Had a tummy issue today but feeling much better now. Got a bunch of greens at the store and will be eating those all day tomorrow. I am also going to try to make a bean salad of sorts but stay in Phase 1.5 through Sunday..
Monday I think I may move into P2 but no fruit. I am dying for some quinoa.

Dani, glad you like the pesto eggs. They are sure colorful, too! Think I'm going to make a batch tomorrow.

Beth, we use a whey protein powder, Jarrow plain, unsweetened, and jazz it up with fresh or frozen fruit. No need for sweeteners or pudding or anything. That makes a good start to the day if you're pressed for time. You could eat leftovers from dinner. You CAN get used to veggies in the morning, just eat something that you like. How about cottage cheese and tomatoes? One of our favorite breakfasts. Protein powder stirred into yogurt with berries and walnuts. DD likes peanut butter stirred into yogurt. Just more ideas.

We joined the pantry challenge thread. The goal is to use up the stuff that has been hanging out in your pantry/freezer forever. Here's what DD made for dinner.


Omelette Gojay Farangi
Eggs poached in Tomato Sauce with Paneer

3 tablespoons olive oil or butter
1 small onion (2 ounces) peeled and finely chopped
1 garlic clove, peeled and finely chopped
4 to 5 medium tomatoes, peeled, seeded, and chopped (or 1 can of petite diced tomatoes)
salt (to taste)
red pepper flakes (to taste, about 1/4-1/2 tsp)
4 eggs
2 teaspoons finely chopped chives

Put the oil in a 10-inch nonstick frying pan and set over medium-high heat. When hot, put in the onion, garlic, and red pepper flakes. Stir and fry for a minute, then turn the heat to medium-low and continue to stir and cook another 3 to 4 minutes, or until the onion is golden. Add the tomatoes and bring to a simmer. Cook, uncovered, for 8 to 10 minutes, or until the sauce has thickened. Add about 1/4 teaspoon of salt or to taste and stir to mix. Now break an egg carefully into each "corner" of the pan, first pushing aside the tomato sauce in the area where the egg will land. Partially cover the pan and cook on medium-low head until the eggs are done the way you desire them. Remove carefully to serving plates and serve garnished with the chives.


Paneer
Homemade Indian Cheese

2 quarts whole milk
4 tablespoons distilled white vinegar
1/2 teaspoon salt

Put the milk in a large, heavy pan and set over medium-high heat.

Meanwhile, place a colander in the sink and line it with a clean dish towel or 3 to 4 layers of cheesecloth at least 24 inches square.

When the milk begins to boil, turn the heat down to low. Add the vinegar, and stir. The mixture will curdle at this point, the thin, greenish whey completely separating from the white fluffy curds. Empty the mixture into the lined colander. Most of the whey will drain out. Stir in the salt, making sure it is thoroughly combined.

For soft curds
Let the cheese sit in the colander for 6 to 10 minutes. The curds are now ready to be eaten.

For firm patties for slicing or cubing
Allow most of the whey to drain out of the colander. As soon as the curds have grained, gather up the ends of the cheesecloth and twist to squeeze out as much whey as possible. Lay the cloth and its contents on a flat board set in the sink. Flatten the bundle into a patty shape (I untwist it, and lay one half of the cloth over the other half, with the cheese in the middle). Put another board on top of the patty (I use two baking sheets.) Now put a 5-pound weight on the patty and press for 3 to 4 minutes. The cheese is now ready.

We doubled the sauce and used 6 eggs and served with the Paneer and ww pitas.

Quiet today. Everyone must be out enjoying the sunshine.
We went to the lake today for about 5 hours. Swam with the kids, rode the jet ski.
Good family fun. We grilled some hot dogs for lunch, I did eat one w/o bun. I also brought some cantaloupe along. No chips for me, and only water to drink. I call it a successful day. Tonight we had our neighbor for dinner, Tri Tip, artichokes, salad with everything in it, and fried potatoes for the boys. Good Times! I'm feeling much better today, no tummy troubles so I'll wait it out a bit longer before I call the Dr. I'm feeling pretty good, not very tired for spending the afternoon in the sun.
