Egg-less Breakfast???

Hi guys

I have a friend who is interested in doing the South Beach Diet, but she doesn't eat eggs. What alternatives are there for an egg-less breakfast, apart from last nights left-overs?

SnowWhite's Cinnamon Breakfast Muffins
(1) 15oz. can of white beans. Rinse and drain.
3 eggs
1 cup Splenda
1/4 cup dry milk
2 tsp. baking powder
2 Tbsp. oil
1 tsp. vanilla
1 tsp. cinnamon

Put all of the above in your processor for about 2 minutes. The mixture will be real thin but fairly smooth. Pour into muffin tin. Bake at 350* for 25 minutes. Makes 12 muffins.

JODY'S PUMPKIN BAKE
8 ounces cream cheese, softened (use lowfat cream cheese)
5 eggs
1/2 cup granular Splenda or equivalent liquid Splenda
15 ounce can pumpkin
1/2 tablespoon pumpkin pie spice
1 teaspoon cinnamon

Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.

Makes 4-6 servings

Ricotta Desserts - Phase 1

Pumpkin Spice Ricotta - Phase 1
1 cup part skim ricotta
1/2 teaspoons cinnamon
1/2 teaspoons vanilla ext.
1/4 teaspoons ground nutmeg
1/2 teaspoons ground dried ginger
2 pks sugar sub.
pumpkin spice mix can be used instead
of listed spices
Makes 2 servings

Chunky Monkey Ricotta Creme - Phase 1
1/2 c. Part Skim Ricotta Cheese
1 Tbsp Natural Crunchy Peanut Butter
1 tsp Imitation Banana Extract
1-2 packets Splenda
Combine all above. Some like to put it in a blender
but I just mix it and eat it.

Peanutty Ricotta Cream - Phase 1
1/2 cup lowfat Ricotta cheese
1 tblsp peanut butter
2 tsp Splenda
1/2 tsp vanilla extract
chopped peanuts (optional)
Mix together, chill and serve!

Coconut-Chocolate Ricotta Cream: - Phase 1
1/2 cup lowfat ricotta
2 tsp unsweetened cocoa powder
1/2 tsp -1 tsp coconut extract
2 tsp Splenda
Mix, chill, enjoy!!

Almond Joy Ricotta Creme - Phase 1
1/2 c. Ricotta
1 packet Splenda
1/4 tsp Almond extract
1/4 tsp Coconut extract
Toasted almonds for garnish

Lemon Peel Ricotta Creme - Phase 1
½ c part-skim ricotta cheese
¼ tsp grated lemon peel
¼ tsp vanilla extract
1 pkg sugar substitute
Mix together the ricotta, lemon peel, vanilla extract, and sugar substitute. Serve chilled.
Makes 1 Serving

Orange Ricotta - Phase 1
1/2 cup ricotta
1 tsp vanilla
2 tsp Splenda
1 tsp orange zest
2 tblsp toasted almonds or pecans
Blend, chill and enjoy!!

Almond extract
1/2 c low fat ricotta.
1 pkt splenda

Banana/or Vanilla Ricotta - Phase 1
Banana Extract or
Vanilla extract
1/2 c low fat ricotta

Mocha Ricotta Creme - Phase 1
1/2 cup part-skim ricotta creme
1/2 tsp unsweetened cocoa powder
1/4 tsp vanilla extract
1 pkg sugar substitute
Dash of espresso powder
5 mini chocolate chips
Mix together the ricotta, cocoa powder, vanilla,
& sugar substitute in a dessert bowl. Serve chilled with a dusting of
espresso powder & sprinkled with the mini chocolate chips.
**Only the mini choc chips need a calorie count from
the 75 calories per day.
Serves 1.

Cocoa Ricotta Dessert - Phase 1
1/2 cup ricotta
1 tsp cocoa powder
2-3 packets of splenda
1/4 tsp vanilla

Yogurt Pie - Phase 1, 2, 3

1 container (32 oz.) plain nonfat yogurt
1 pkg. (8-serving size) Any Flavor Sugar Free Low Calorie Gelatin

Mix yogurt and dry gelatin in medium microwavable bowl. Microwave on HIGH 2-1/2 minutes or until gelatin is completely dissolved, stirring after 1-1/2 minutes.

Pour into 9-inch pie plate sprayed with cooking spray. Refrigerate 3 hours or until set

While these things are technically legal, I suppose, I don't recommend sweet things for meals and neither will you see such on the menu plans. These things play havoc with blood sugar levels and are meant, at best, to be desserts, eaten after a meal. Better choices for meals would be something like cottage cheese with vegetables, yogurt with nuts, meat roll-ups, hummus and vegetables, even string cheese.

I concur with Rose on the sweets for breakfast, and there is a lot of Splenda in those as well which can be a trigger for some.


Cottage cheese is a wonderful breakfast and I still choose to eat that alot of days.

Protein Shakes are a good way to start your day also - we all have some recipes we use if you want us to share.

And I alway say - think out of the box - leftovers for breakfast is always a good idea, but it doesn't have to be leftovers! You could make something fresh for breakfast. No one said you have to eat eggs........sometimes I will have a grilled hamburger patty with a V8. Pretty filling and satisfying!

Oh, yeah. We keep cooked veggie burgers in the fridge to grab and go.

I love tuna, so sometimes I have a 2 oz. can for breakfast, with a glass of gazpacho (can't get V8 here) and maybe a mini Babybel light. Another quick breakfast is boiled ham (or Canadian bacon if you want something hot) and grape (or cherry) tomatoes.

I agree as well with the sweets, but was just trying to help out the poster asking for other options aside from leftovers and eggs. Personally I wouldn't have any of the things I posted either, but they are options for an occasional breakfast
