Menu so far: B - 2 boiled eggs, coffee S - cheddar cheese "crackers" (baked the cheese in the oven till crispy) L - grilled chicken breast, green beans, water, tea D - "southern fried" chicken breasts, faux tatoes I got a couple of new cook books this week. Stella Style by George Stella. He is the Low Carb Chef on the food network (not that I've ever seen it). The cook books are great and have fantastic recipes with notes at the bottom for making them south beach friendly (i.e. using lower fat ingredients, etc) Anyway, found soy flour for the chicken and am going to try out the recipe tonight. (the recipe is also on his website George Stella - Stella Style Community) be back later

Good morning to my SB Friends!!
I missed my routine of checking in with all of you So now that I've actually been in the US for more than 36 hours in the last 2 weeks I am back on my usual WoE. I ran my 5 miles this morning and had my egg beater/salsa breakfast. Life is back to normal...Our vacation in Puerto Vallarta was amazing. We stayed at the Marriott Casa Magna (our 2nd time at that hotel, 6th time to PV) where all the rooms recently had a facelift. So there were nice flatscreen TVs, granite counters, new furniture, great bedding, etc. The weather was beautiful - no humidity, crystal blue skies. We walked every day of vacation for about 1.5 hours in the early morning. But oh boy, from that point on, we were SO off plan I had a lot of cervezas and vinos, not to mention tortilla chips with guacomole, etc. The good thing about PV are the wonderful restaurants, so we ate a lot of high quality foods such as fresh fish, in season veggies, etc. And I did drink a ton of water.So after the business trip to Sweden and the vacation week in Mexico, the bottom line on the scale this moring was a 2.5 lb weight gain. You know what, that wasn't so bad. It may take me a week or so to get that off, but as long as the vacation weight gain is gone before Thanksgiving dinner I'm okay with that.I have to catch up with last week's thread to see what everyone is up to, but I hope you are well and OP!!

Hi. New to SB. I had been try Atkins for a while. Started with a bang. I made the spinach quiche last night and had 2 for breakfast this am. They were very good. Lunch will be my biggest challenge...thinking of things to bring each day. I am a little concerned about the holidays but as someone else said, focus on the people and the comradarie and make food less important. This will be my goal.
I envy you in PV. I bet it was wonderful. Look forward to getting to know all of you |

Cathy Welcome! I can say that I have eaten those spinach quiche cups every day for breakfast and they are awesome. I add a little Chipotle hot sauce after i reheat them in the mornings. I find it easy to have meals prepared for my lunches WAY in advance that way there's no "i'm running late i'll just grab something later" issues. (my grab something later usually results in something along the lines of ARBY's or TACO BELL which is NO BUENO). Good luck! This is a great board with REALLY supportive people. I had a good weekend... stayed OP except for ONE cheat night i SCHEDULED since my monthly friend came to town... needless to say I've stayed away from the scales... Got in an hour of Callanetics over the weekend and went to the Outlet Malls (all three of them) in Myrtle Beach so i got in a good deal of walking. ... Hope everyone has a great week.... Still eating my quiches, cheese sticks, chilli, cheese sticks, and salads.... |

Wiz- Your trip sounds awesome! You'll have that water weight off in no time!
Cathy- When in Phase One I usually eat a big salad for lunch (with some sort of protein, turkey, tuna, etc.) or leftovers from dinner the night before if I'm sick of salad. Hummus and veggies is good too!Jess- Good going on your Callanetics! You sound like your getting SB down pat! Cookie- I used to watch George Stella on Food network. He's got some great recipes. He and his family lost a ton of weight on low carb. Did you read my opinions on the Callan DVDs on last week's thread, BTW? Rose- Thanks as always for starting us up! Hi everyone- I started South Beach last Wednesday- and I'm LOVING it.
So today I had: B: 1/2 cup reduced fat cottage cheese, 2 slices turkey bacon S: 1 oz. mixed nuts, 1/2 oz. almonds, 1 cup coffee w/ splenda & ff creamer L: 1/2 c lentils, 3 oz. chicken breast, 1/2 c. spinach, 6 grape tomatoes, 1/2 celery stalk, 1/4 c onion (I added this recipe to the SB Recipes thread under One Dish Mediterranean Chicken & Lentils) S: 2 oz. reduced fat cheddar D: Leftover turkey, broiled green beans, salad We celebrated Thanksgiving early with my mom yesterday and have a TON of leftover turkey, I've been grabbing bites out of the fridge nonstop! I need to drink some more water, I've only had about 4 glasses today. I woke up 30 minutes before I had to be at work (ack!!) so I didn't get around to my workout, but am going to push myself to get on it. I have a gazelle that I strategically placed in front of the computer so I watch videos on YouTube or gazelle workout DVDs while working out and it really makes the time fly. I just got it in September and was only about to do 4 minutes at a time when I got it, I'm up to 15 minutes now (with added resistance) and it WHOOPS my butt!!! |

to Cindy.![]() ![]() Mom, I will listen to you. Okay, girlie, give me lots of ideas of what to take for lunch, you know I work in a daycare so give me ideas. I can't get out of my room to heat anything up, so it would have to be something that I can keep in my lunchbag (it keeps things cold though). What I need is a thermos too so I can take soups to work, something warm. Mmmmm. Maybe one for John too. I have to read my book again, cuz I know Mom is BIG on doing it by the book, right? . I have the supercharge book too, I need to refresh my mind on the old one and finally read the supercharge.NOT ready for winter, we got our first taste today. Snowed most of the day but the roads are still a little too warm and it's not sticking to those YET. But it is starting to stick a light dusting on the ground. Man, with all the driving I have to do to take MOm to therapy and doctors appts this winter, I am hoping that the Farmers Almanac is wrong and that we have a mild winter.

We had a totally Phase 3 weekend. We went to Memphis to see the Eagles; they're still good. DD and I took the day off today, back to work tomorrow. DD will go into the library and I have a seminar to attend which involves travel and eating out, but I can do that on plan, no problem. Cathy and batwing. This is a good place to be. ![]() |

Rose, thank you again for another beautiful picture! Sounds like you had a really fun weekend! I wonder what kind of seminar you're going to? Congrats, Cindy for staying OP this weekend! Wiz, thank you for your vivid description of your PV vacation! It sounded fabulous. It's making me look forward to Hawaii in January. I haven't been anywhere since March, and I am hoping to break 140 before then. It's my motivation. 2 1/2 lbs. is not bad at all for all your traveling! Welcome, Cathy and Batwing. Getting on the gazelle a couple of times a day will help, I'm sure. I have an exercise bike in front of the TV I ride two or three times a day in 10 minute increments. It helps keep up the metabolism. Looks like you found a great snack, Cookie! (The baked cheddar cheese "crackers.") Congrats for getting back on track! Jess, looks like you're still OP and going great! Hi to Dani, Batty, Pokey, Rebecca, and everyone else. Traci, where are you? I have been struggling lately to stay OP, went up a couple lbs. then back down one. Been craving sweets like crazy. I think it's the winterish weather; my body always wants to put the weight back on this time of year. So hard to stay motivated. I think I'd better start posting my menus again to help me stay accountable! Line 12 cup muffin pan with foil baking cups, spray the cups with the cooking spray. Be sure not to omit this step, or the quiches will stick badly to the baking cups. 3. Thaw and drain spinach - I wring it out well in my hand, which eliminates a lot of the "spinachy" taste for those who hate boiled spinach. 4. Mix the spinach, eggs or egg substitute, cheese, peppers, onions, hot pepper sauce, salt in a bowl. 5. Fill the foil cups with the mixture. 6. Bake at 350F or 20 minutes. You will know they are done when a knife inserted in the middle comes out clean. 7. Remove from cups to serve. Fajita spice variation: Add fajita spice to taste at step 4 (a dash to 1/8 teaspoon). If you like it spicy, you may even want to add a bit of chopped jalapeno. Indian variation: Add garam masala to taste at step 4 (a dash to 1/8 teaspoon). Nutrition: Approximately 40 calories each. I think that was the "official" recipe. I've tweeked mine quite a bit. I only put cheese, spinach and onions in mine and i load it down with ground chipotle pepper. Also, i dont use the wrappers, i just spray the pan and put them in there directly. I also cook mine for 30 minutes. They keep for a week. I eat two a morning. Nuke em for 30 seconds... You can really get creative with them. Can I just say today is not going to be fun. I have my day job till 3pm then I'm tutoring 3rd and 4th graders Math (we are learing how to borrow from the tens column and they should be on hard division by now) 315-530 and then home for a quick bit to eat (probably chilli because it's already made) then I'm tutoring my H.S. Senior because he has a test tomorrow from 7-930 and maybe longer... Good news is I got an hour of Callanetics in last night and I'm noticing changes in my body ... in a good way. I've never really had any problems withmy lower abdomen (i've also never had any kids) but my midsection up to my chest has been "not so good" - well that's starting to firm up a little bit and i'm feeling my bum lifting up and i also feel like my legs are getting firmer.... This is the motivation that's keeping me OP. Hope me sharing this can help some of you ladies with staying OP as well. Hope everyone has a great day... sorry I rambled a bit. |

I am being lazy this morning (which doesn't happen often, thank goodness!) Got my ToM overnight and just couldn't get myself to jog this morning. Just wasn't feeling up to it, especially since I have to fly to Denver for work this afternoon. I can't believe I have yet another long plane flight in front of me. No change on the scale yet, but these extra lbs from vacation will come off eventually. Rose, I've seen the Eagles twice. Once in the (really) old days and then again on their Hell Freezes Over tour. I still really enjoy their music a lot. I wish Don Henley would come out with a new solo album, it's been years for him. Cindy, Sounds like that cold is really hanging on. Maybe your workout will knock it right out of your system... Serena, Hawaii!! Now if I had that to look forward to, I'd be dropping lbs left and right Trying to defeat those cravings for sweets can be tough. You can do it.Jess, My husband and I ate those veggie quiche cups every day for weeks. I still make them once in a while, but we kind of OD'd on them after a while. I like to make them with spinach, sun-dried tomatoes (not in oil), and roasted red peppers. Yum! Hey, Dani, is work getting a little less crazy? I know before I left on my various travels things were really nuts. Batty, sounds like you are busy too, glad all is well. Cookie, I have to tell you that I am a cookbook-aholic. I have so many of them, it's just not funny. Tell me how your new ones are. Since most of my cookbooks are not of the low-carb variety (although I've become quite good at tweaking recipes to be low-carb...), I would like to put some really good ones on my Christmas list. Welcome to Pokey, Batwing and Cathy! This is a super place to be, you can ask for help, get menu ideas, and have some fun. OK, off to pack for Denver and get some work done. Thanks for the warm welcomes, everyone!
Today I had the biggest lightbulb moment ever. I just figured out what my trigger food is. It seems like a lot of people just happen to know this instinctively (e.g., I can't eat pizza or I'll never stop, once I have one chocolate the rest of my day is downhill, etc.) but I have never identified the thing that drives me over the edge. Until now. It's coffee. I had two cups of coffee today and cannot stop eyeing the candy dish at work. Everything else was just fine- I ate on plan, I did what I normally do, and as soon as I drank those two cups (both with sugar free french vanilla creamer sweetened with splenda and 2 tsp granulated splenda- I suspect that the splenda has something to do with it) I immediately went to the candy dish and popped two fun size twix bars into my mouth. W.T.H. And I think I'm hungry, but I don't feel hungry- know what I mean? My stomach's certainly not growling, I had a big lunch, and somehow I cannot stop thinking about eating more and more. For whatever reason caffeinated pops with aspartame don't do this to me (that I can tell.) For the time being I'm going to eliminate coffee with splenda and do some experimentation with pop to determine what the real culprit is (caffeine or artificial sweeteners) So today looks like so: 15 minutes on gazelle w/ added resistance this morning B: Milkshake like concoction made of LF cottage cheese, 1/2 TB cocoa powder, 1 tsp splenda. 2 slices turkey bacon, 1 1/2 cup of nonfat milk, 1 oz. mixed nuts S: 1/2 oz. cashews, cup of coffee with evil sweetener & creamer L: 4 oz. turkey breast, 1/2 c. green beans, 1 c. brussels sprouts, 1 oz. mixed nuts, 1 oz. LF cheddar S: 1/2 oz. cashews (went over my nut allowance today!), another cup of demon coffee, 2 twix bars from hell. D: probably some hot italian turkey sausage over a salad with tomatoes, cucumbers, onions, and balsamic vinaigrette And the nut overload occured after drinking coffee each time. In an effort to ditch the cram-everything-in-my-face-cravings I ate some nuts but that didn't satisfy the cravings at all, and then went over my nut limit to boot! |

Hey Batwing - Maybe it is the sweetner in the coffee or the french vanilla creamer? I have often heard that even sugar free stuff can cause triggers. It is so individual and personal... mine is spaghetti. Can NOT have a normal portion... even of the whole wheat stuff. I just love it and can't stop and then I want dessert after... and then spaghetti for breakfast the next morning.
Ok, and please tell me that the turkey bacon did not go into the milkshake concotion. ![]() ![]() Wiz - Oh honey, I have only looked through these two but I HIGHLY recommend them. It is low carb food, but it is real food that you would actually fix for your family like blueberry pancakes, southern fried chicken, "mac" (cauliflower) and cheese, etc. I have been really impressed. There are a lot of muffin recipes...LOTS... that use almond or soy flour. I think we'd want to be careful with those things, but you know my quest was to find family friendly things so that I can get my kids involved too and I think these may be my answer! So if you're a cookbook-aholic, I would say that these are must haves!!! I think they are must haves even if you are NOT a cook book collector. Very impressed. ![]() Ok... did my callanetics and Turbo Jam tonight. And ate totally on phase 1 plan today! Woohoo! |

I'm sorta new to the beach...tried it a while ago with great success, but then I met a guy and we both became so content that I guess we just stopped trying as hard. I gained all the weight back plus more (he put on a little too but still looks great, of course).I'm supposed to be on phase 2...maybe I will eat an apple later ![]() Here is my day so far: B: coffee, leftovers (turkey chili & green beans) L: frozen dinner (SmartOnes salisbury steak and asparagus) S: SF jello pudding D: plan to have grilled chicken w/ some kind of veggie on side I'm so glad to be here. Looking forward to getting to know everyone!

Thanks for asking! Things are a bit calmer now because it is a new term. I love teaching, planning lessons, and interacting with students but I really DETEST all the correcting and grading. I always end up having a ton to correct at the end of the term in order to figure out their final grades. I'm such a procrastinator and seem to do this every term. Will I ever learn? LOL

Hi. I'm back for the evening. I feel like I have been hit by a truck.
Serena, I'm taking continuing ed classes from the Medical Library Association-4 classes of 12 hours for a medical research librarian certification. You have to re-certify every three years. Wiz, I love your new picture. You're a true SB poster girl. Batwing, caffeine causes insulin spikes which bothers some people more than others. And Cookie is right about sweeteners. Even the taste of sweet causes an insulin response. Good luck with your "research" into the problem. Recognizing the trigger is more than half the battle. DD has dinner ready, then I'm off to bed. |

Well... I ate on program til I got to Max and Ermas with my mom. I had a rye bread 1/2 reuben sandwich and a salad with ff dressing. BUT I made it that far, that's better than the days prior to today. Tomorrow I will make it ALL day.

Rose, medical library research sounds like a very interesting and challenging profession! I love to read about medical stuff and watch those medical mystery diagnosis shows. Do you enjoy the work? Wiz, it's so challenging to keep your weight under control when you do so much traveling! You're doing so well--you deserve a day off from running! Hope your cold is better, Cindy. Everyone out here seems to be sick, too; this must be going around the whole country. My mom in Indiana has it, too. Batwing, I hope you can kick your coffee habit. Have you tried decaf, though? Maybe without the caffeine it wouldn't have quite the same effect. Congrats, Jess and Cookie on all the exercise--it's paying off! Hi, Dani, Pokey, Angie--you all sound busy; hope things are going well. Welcome, Abs--hope you like being on the beach! I wandered into a used bookstore today and found a copy of the SB diet book. I'm hoping reading it will give me the incentive I need to stay OP. I'm still struggling with my addiction to sweets, and think it may be due to an increase in my neurontin. It's known to cause an increase in appetite, and I wasn't having this problem so badly at lower doses. Wouldn't it be wonderful if we could all just say we are not going to eat dessert, and then actually, like, NOT DO IT!!! So I guess I better snuggle down with the book tonight! Night, Serena ![]() |

I figure if I can write from work I can "talk" to everyone on a daily basis, but I want to keep my private email on, as well. ![]() Dani: WOW the before and after pics you sent in (i think it was last week?) what a change...way to go Jesse: I did an hour of Callanetics. Am not too sure Callan Pickney would agree, but its a start. Could hardly walk the next 2 days ![]() Serena: I know just what you mean about storing up "energy" for the winter. The last 10 days I have gone off plan all too often. Am almost back to where I started and, hopefully, this binge will finish up soon. I really want to be able to loose 5 more kilos by the first of the year. Wiz: Sounds like you had a great holiday and 2.5 pounds over is not so bad.
