Good Morning Everyone!

Between ball games and painting my mom's house I had a busy busy weekend! We got most of my mom's house primed, we will be painting again on Saturday if the weather cooperates.

Game 3 of the playoffs will be tonight, we've won 2 of our 4 playoff games. If they do well the next 2 games, we will continue on in the playoffs. So I may be painting my mom's house while DH has DS at more ballgames.

Good morning!

I was MIA most of last week, just too many things going on!

On the personal front, I will report that the Tom Petty concert was awesome. He played all his hits and sounded great. Excellent night out.

I also hosted my Bunco group (12 girls, dice game, play once a month, each girl hosts once a year) on Friday night. It was a beautiful night, so we played outside. My yard overlooks a pretty big river to the west, so we saw a beautiful sunset that evening out over the water.

I made a bunch of mostly very SB friendly appetizers, I'll try to post some recipes later this week. The BLT stuffed cherry tomatoes were a big hit, as well as my Citrus seafood salsa (which I posted earlier this year.) I also made a roasted red pepper pesto (that has almonds in it, yum) with grilled chicken, shrimp cocktail, bite-size roast beef horseradish wraps (in low carb, low fat whole wheat wraps) and dark-chocolate covered strawberries. Not bad.

On the scale, things are just not moving. With all the various activities, events, etc. I just haven't been eating regularly or drinking enough water. Not to mention, too many glasses of wine and/or lite beer. I haven't gained, but I haven't lost any either

I woke up this morning determined to be vigilant this week about sticking to a very regular schedule of eating and drinking water. So, I did my 5-mile walk and had my eggbeater, RF cheese omelet with salsa this morning. I'm working on a huge bottle of water right now, let's see how this goes.

Nena - I hope your party went well! I was at a graduation party on Saturday and thought of you.

Teresa - Glad to see you back. It sounds like you had a great vacation and all this fun stuff with Dr A. is SO exciting. Your cover shot is beautiful!!

I saw some of the questions on quantity of oil, cheese, etc. per day. Rose already responded (thank goodness for Rose ) and I just wanted to chime in. I make a lot of dresssings, marinades, sauces from scratch. In almost every case, I halve the amount of fat called for and double the vinegar (or lime juice, wine, etc.) called for. We find we don't miss the fat, and we actually have come to crave the more acidic flavors.

Yesterday I made coleslaw. I put in half the amount of mayo (light Hellman's) and doubled the vinegar in the dressing. I do use half a packet of Splenda as well for a hint of sweetness, but I'm trying to wean my husband off of it!! I used to put in 2 packets, now I'm down to half of one. By the end of the summer, I'll take it out all together and he won't notice

I also made a marinade yesterday, once again, I used half the olive oil called for and supplemented with extra lime juice.

The scale was up to 232 for days but I'm finally back down to 230 this morning. I was very good with my eating this weekend and even though the pool was still only 76 I swam. It will have to get a lot colder than that to keep me from getting my 30 mins in!

Hello! I'm starting South Beach Phase 1 today and have gotten SO MUCH info from these boards! You guys are pretty incredible! I've been doing the McDougall diet (vegan, strach based, no flour, no sugar, no anything really!), and had success with losing weight but really lost alot of muscle -- even my hair started to fall out (that seems to be slowing down, fortunately!). Anyway, I have been trying to reverse some of the damage by doing circuit training and adding some fish and chicken back into my diet, but have decided that I am ready to go back to something more structured. I would LOVE to shake these last 25 or so pounds and hopefully South Beach will help get me there. Thanks for all the great recipes etc. -- this seems like a great place for encouragement and support that I think I'll try to visit often! Happy Monday!

Gonna try to get in a 20 min walk today on my lunch hour.

The nurse from my doctors office just called and my thyroid is still outta wack. This thyroid thing is soooooooooo frustrating! Medicine will keep it under control for a while then outta nowhere is wacked out again. I start losing my hair, tired ALL the time, hungry ALL the time (the worst symtom, LOL) The nurse is calling in a new rx for 125 mcg of synthroid that I'll pick up at lunch time after my walk.

Antonya - I wanna be a runner also! I've always liked it. Maybe I'll download a couch to 5K and try doing it that way.

socrnutts - SB is a great WOE!

Annie - WTG getting that exercise in!

Wiz - you whole post sounded tasty! LOL

Hi All,

I had a really great weekend. We had guests over and it was just a blast. They taught us the card game "Euchre'. The ladies thrashed the men during the 3 rounds we played. We had a great day on Saturday...we spent the day by the ocean, flew kites, played frisbee and got a caricature done of my DD10....too cute.

Sunday I was on B-day duty ....my daughter had a friend's party to attend at a roller rink. This is the 8th party we've been to at this place. The skating thing is back in fashion. Normally, I skate along with them, but I forgot to bring socks....so I just hung with the other parents....

I stayed OP through all of it....even the "let's all order fresh fish and chips"..."want some delicious ice cream cake?" "let's get some snacks (chips) for the drive home"....and these people are my friends...but they were understanding and only dangled off plan food in front of me like 10ish times.

Hope you are all well.

Wiz - bunco overlooking the river sounds too fun to be true....

Hey Beachers,

Had a good weekend...was relaxing and fun especially last night at my friend's cookout. The fireworks were cancelled b/c of the rain, but we still had good times. She lives on a farm and there are a bunch of feral kitties and their mom in her barn, and 2 of the kitties were caught while we were there. They were so tiny and cute. She is going to bring them to the vet today.

Got in my 20th hour of Callanetics yesterday! It gets better and better each hour. I can now do most of the reps. I started off so weak...not anymore!

Scale has me down a pound this morning. I'll take it although I was down 2 on Saturday, but Monday is my weigh in day...drats!

Wiz- Your appetizers sound so yummy!! Please post some recipes!

Anne- WTG for staying on plan with all of those temptations around you!!

Nena- Glad your party went well!

Hi All!!

I am back! Had a super busy May and mid-June with lots of family activities. Made it in my dress that I worked so hard to fit into, BUT since the wedding I have been eating everything that isn't tied down. So here I am back to post and be accountable.


Hi to all that I haven't met and I hugs to all my old friends on the beach.


Here is my breakfast:

2 eggs, fresh salsa and a ls v-8

Lunch: grilled tuna on a salad lc dressings and green beans

Dinner: chicken and broc. with a side salad

My son is going to run 5 miles and invited me to ride my bike along side

Look forward to being a part of this great group again.

I don't want to get fat again and it means support must be on my menu.

Good morning everyone!

The scale has only moved about .5 lb, but I'm feeling SO much better. Between the vitamins and eating better, my energy level is doing fantastic.

It was very hot this weekend. almost a hundred at our house....and we live about 4 miles from the San Diego coast. It's usually pretty temperate here.

We had our meeting with the vitamin people this weekend. I'm very excited. It's product I really believe in. The meeting however, started with muffins and danishes and I was really hungry....so I caved.

I did renew my love of spaghetti squash this weekend. I love that stuff.

it's still hot here. My goal for today...water, water, water.

Welcome socrnutts! I don't know if you're doing this, but try something with Biotin. It helps with hair, skin and nails. GNC makes a hair, skin and nails formula, or something like the liquid vitamins I take that have more than just a trace. Good luck!

I had an OP sunday but blew it on saturday. I knew I was going to be off on saturday night because we were going out celebrating my graduation. Had a blast and am now back on track.
My scale seems to be stuck tho because I haven't been eating the best.

I have a job interview this morning so have to run.

struggling--up 7 pounds since transitioning from Atkins. I know it is water weight, but it is hard to tolerate.

Hi everyone. I'm really disappointed in myself. I just can't get back on track no matter how much I think I want to. The scale keeps going up. Since my daughter started summer camp I'm having to make her lunch every morning & haven't had time to make a healthy one for me. I know I should do this in the evening but by the time I get all the girls to bed I'm beat. I've been meaning to make chicken salad & boil some eggs for 2 weeks now & haven't had the time to do that even. I know I'm not the only one with a busy hectic life. Do any of you have some suggestions?

On a happier note, I had a nice birthday on Saturday. I spent the day by the pool. We had beautiful weather.

Hi southbeachers and newcomers.
South beach is the way to go.I can't tell you how many other diets i used and started using sb.Its not a diet it is a way of life.I'm making so many healthy choices now and if I do have to have a occassional cookie or something I only eat one or two and that works for me.I use to pig out on the whole bag.I also buy lc cookies or lc bread like pita lc carb and this way if i do mess up it will be lc.I dread the 4th because of the barbecues and hc foods but I'm preparing ahead of time.You guys are great!

New to SB as of last week. I LIKE that I can have beans and higher carbs than on Atkins induction. I miss half and half and full fat dressings/cheese however. That being said, I havent been able to stick to Atkins induction lately and DH thinks its bc I have working out A LOT and my body was cravings more carbs. I would do inductiona dn then cave after a few days and eat bad carbs. Now I have done a full week of phase 1 on SB and have my fingers crossed.

What I want to say is that even though I miss Atkins in a lot of ways, it wasnt working ofr me anymore and I believe SB is the way that Dr. Atkins intended for us to eat by the time you reach maintenance, so my thinking is, why not begin eating this way now, as before, when I did have great success on Atkins I never climbed the ladder and I believe that was harmful for my body.

Oh, and as far as the running, yes I guess I am a runner. I started running several years ago to relieve anxiety and became addicted! I usually do 3 miles 3-4 times a week and thats it but now I have signed upt o do a half marathon [13.1 miles] in Ocotber so I am "in training" for that. I am not convinced I can do it and I dont care about my "time" I just want to finish it!

Dani, I saw all your photos from last week. I am soooo jealous of your experience with Steve Carrell. Wow! Not to mention how great you look

Rachel, so glad to see you back!!

As promised, here are some a couple of the apps I mentioned, with all those July 4th parties coming up, it's good to have some SB friendly apps!!

I'll post these in the receipe thread as well...

BLT Stuffed Tomatoes

1/2 lb bacon (OK, I usually use turkey bacon, but for this I used Oscar Mayer center cut - 30% less fat than regular bacon.)
1 pound cherry tomatoes
salt
4 scallions (green onions), rinsed well and minced
1/2 cup low-fat mayo

Using a small knife, cut a thin slice from the bottom of each tomato. (The stem end becomes the base for the stuffed tomato.) Scoop out the seeds and any tough membrane (Yes, this is a pain to do, but it's not that bad )
Lightly salt and then drain (as long as overnight) on paper towels at room temp.

Meanwhile, cook the bacon over med heat until pretty well done. Crumble into small bits. Then combine in small bowl with scallions and mayo. Stuff into tomatoes, refrigerate for up to 2 hours.

FYI. Stuffed tomatoes are also great with guacamole or with a crab filling.

Artichoke Hearts Wrapped in Proscuitto

28 oz Artichoke Halves or Quarters, drained
4 oz proscuitto, divided
1/4 cup olive oil
1/2 teas thyme
1/2 teas orange zest (the outside rind of the orange, lightly peeled and minced)

Wrap each artichoke heart in a piece of the proscuitto, fasten with a toothpick. In a bowl, whisk together the olive oil, thyme and orange zest. Pour over the artichokes, and marinate from 2 hours to overnight. (Tip, I actually add in the juice from the orange I get the zest from - it makes it less SB friendly, but gives some added flavor. If marinating overnight, I leave a little bit of the marinade at room temp to add over top the next day to ensure they don't get dried out.)

Roasted Red Pepper Pesto

1 7 oz jar roasted red peppers (not in oil)
1/2 cup fresh cilantro
6 TB olive oil
3 TB balsamic vinegar
1 garlic clove
1/2 teas dried mustard
pinch of cinnamon
3 oz slivered almonds

Put all ingredients in food processor (except almonds) and process until smooth. Add almonds and process until finely chopped, but not smooth. Season with salt and pepper. (Can be made 2 days ahead. Chill in fridge, bring to room temp before serving.

Note: If you don't have a food processor, you could definitely do this in a blender.

This makes a ton. I served with grilled chicken skewers (marinated in balsamic vinaigrette) and whole grain chips. (OK, I didn't eat the chips, but people raved about them.) I
