Lemon Garlic Spaghetti w/ Roasted Red Pepper & Green Beans
Category: Main Dishes - Pasta

This recipe is suitable for: All Phases P1 (squash or zucchini instead of pasta)

Preparation Time: 5-10 mins minutes
Serves: 4

Ingredients:
-----------------------------------------------------

Whole wheat spaghetti
2 red peppers
A LOT of fresh green beans
1 Tbl minced garlic
1 lemon
extra virgin olive oil
sea salt
cracked pepper

Instructions:
-----------------------------------------------------

Put pasta water on to boil.
Steam the green beans for 5 minutes. Remove.
Cut the bell peppers into strips.
Coat the green beans and pepper strips in a little olive oil and garlic.
Place both on cookie sheet and broil until green beans are thin and browned. Remove.

Dressing: juice of 2 lemons, 2T olive oil, garlic, sea salt, pepper.

Mix green beans/peppers w/ hot spaghetti and toss with the lemon dressing. I added fresh squash ribbons during tossing (optional).

Good morning SBeachers!

I know this may sound crazy, but I am so happy to be back home in NJ As much as I enjoy international travel, there's nothing like sleeping in your own bed (especially with my adorable husband beside me )

As I posted last week, I was really stressing over my lack of food choices while traveling. Although once I hit London, I did a lot better because I am way more familiar with where to eat for good food choices.

In any case, I actually lost 1 lb last week (who can figure??) for a total of 29 lbs and have FINALLY hit the 150s!! It's embarassing to admit, but I think it has been about 10 years since I last weighed this.

I did my 5-mile walk this morning and had an egg beater, RF cheese omelet this morning with some homemade salsa. It was great to get back to my routine. And that is actually the moral to my story! When traveling for work or pleasure, just try to do the best you can under the circumstances. But as soon as you are back in your normal environment - get back to SB basics as quickly as possible.

I hope all of you are well! Rose, thanks for posting the recipe from the end of last week's thread, I'm always looking for good veggie entrees...

Wiz - Congrats on hitting the 150's. It's been more than 10 yrs for me too. I've got 8 lbs to go before I'm there. Just curious, what type of work do you do? It sounds exciting to be traveling so much.

I had a busy weekend. I went out for a much needed girls night out on Friday. Dinner, drinks & Sex In The City. Sunday I took my girls to the zoo. Between that, cleaning, Costco, & laundry I'm worn out today.

My weight hasn't gone up or down over the last few weeks. I went to the produce stand yesterday to stock up on fruits & veges for this week. I'm hoping to loose a few lbs before I have to get into a swim suit next weekend!

Hope everyone has a great week.

Hey ladies,

This weekend went ok, saturday we ended up not going out for my graduation but we still went and saw Indiana jones, and ate at five guys, needless to say it wasn't Op, Sunday was OP, Still no callanetics , starting to tick me off.

I have to clean and do laundry today, Other than that I'm going into ultra No cheating phase, I have three weeks until my party so i'm hoping i'll see a difference, I'm gonna do some weight lifting and some other exercises, I've been weighing 127lbs this past week, i haven't been eating all my meals and they haven't been nutritious, Things have been crazy, I hope that i can lose some more, And mostly tone up.

Have a Good Week Beachers

Nena

Hi everyone,

I've been having computer problems (AGAIN! GRRRR! ). Weird stuff happening, not completely fixed yet but at least functioning.

WIZ!! GREAT job, especially while you were travelling! Congrats! I am about a pound behind you again, as the scale hasn't moved much in the last couple weeks (at least not in the right direction ). I am hoping the challenge will get me on the right track again.

I've tried to up my walking lately. Did 7 miles on Sat. and 5+ today. My son went with me and got some great photos. It was just beautiful today, so I'd like to share a few of them with you. These are after the end of the footpath, following the dirt/gravel road that goes to the reservoir (so Melrose, if you're reading, this is what is at the end of the path!).

Don't know if I'll make it there tomorrow, because I have a very full day, but I will try for at least some exercise!

Nena, Twinmom, Tina, Rose, Sweet tooth, Wendy, Dani, Vero (how's it going?), Turtle, and everyone I missed

I have a question about loose skin and feeling flabby.

Before I started losing weight, my skin was tight and behind it was fat, but it felt firm. Now, I'm feeling a bit looser and flabby (almost the opposite of what you would expect). Will my skin catch up? Has anyone else noticed this?

Since I have already laid it all out there.....

Anyone got suggestions for a good sports bra?

It depends on your body, age and physical activity level. I believe exercise helps, but you will need to see how you feel at goal. I'm in my 40's and lost over 100 lbs. my bod faired pretty well except I have a skin apron and need tummy tuck. My arms and thighs are ok... not prefect, but I'm ok with it. I exercised a lot. I got a bra that fits tight. I have a large chest. I wear 2 bras sometimes. You might ask on the main forum or the exercise forum about a good sports bra.

Checking in. Work is murderous. I get home so tired I can hardly stay awake.

Food today was fine:

Protein drink

2 grillers, baby carrots, grape tomatoes, DD's version of ranch dressing

few bites of fruit salad, few pecans, string cheese

Green bean salad: browned tofu cubes, baby green beans, diced fresh tomato, green onions, oriental dressing

2 coffees, enough water

Welcome home, Wiz. You have such a great job. I would love to travel like you do.

Twinmom, holding steady for a few weeks isn't bad. Keep going.

Nena, hooray, your Callanetics arrived. You're gonna love it.

Luisafernanda, what beautiful scenery. How uplifting it must be to walk in such surroundings.

Anne, you might be experiencing what we refer to as jiggly-puff. You get mushy in spots, then have a whoosh. Seriously, your skin can recover given enough time and care. Try dry brushing. It works wonders.

Wendy. Did you see we moved your recipe over. That one is too good to lose track of.

Nite all.

Good morning SBeachers!!

Another beautiful day here at the Jersey shore and I got my 5-mile walk in. I've noticed that since I've dropped some weight, I've also shaved about 5 minutes off my walking time (unless, of course, I meet one of my pals on the boardwalk and stop to chat )

OK, I know I really shouldn't weigh in every day, but after being away from my scale for a week - I get kind of attached to it when I get home So in any case, I was shocked to see another pound come off today!! (Although I have been doing Phase 1 since I stepped off the plane...) I reached 30 lbs off!

When I started SB back on Jan 2, I said that 30 lbs was my original goal - but somewhere along the line I realized that I could do better than that (hence my new target, which is 43 lbs off - putting me squarely in the middle of what someone my height should weigh). Not only am I sure I can hit that goal, but darn it - I'm going to keep this weight off!!

Thanks to everyone for such great advice, support, humor!! Together we are stronger and more focused.

Luisa - What beautiful photos! Your terrain is so different from where I live, it just looks stunning.

Rose - Sorry to hear that work is such a killer right now. The stress just can be overwhelming - and of course, that used to be a trigger for me to overeat But it sure looks like your menu is right on target, good for you to stay OP even when life is crazy. I would love to get your DD's ranch dressing recipe.

Tina - You are always one busy woman!!

Nena - Glad you got your Callanetics...I was starting to think you were going to have to re-order

Wendy - Every time I think about you losing 100 lbs, it amazes me. What a great thing you did for yourself.

Rainbow - I can't say my sports bras are good ones, but my favorite one is by Hanes. I'm pretty sure I bought it at Kohls. I agree with Wendy that you want a nice, snug fit - no room for jiggling, if you know what I mean!!

Twinmom - You asked what I do, I am a global sales director for a telecom equipment maker and my team supports all of the international service providers doing business here in the US. I've been in telecom 20 years, some days it seems hard to believe I'm still employed because there have been tremendous downsizings in our field. But I'm hanging on for now!

OK, back to work!!

Morning everyone!

I was down .6 this morning Now to keep going down, down, DOWN!

Luisa- beautiful pictures! Where in Spain do you live?

Anne- that has happened to me while losing. You tend to get soft and then firm up again after losing some more weight. I agree w/Rose, dry brushing works well!

Wiz- Congrats on 30 lbs. down!

Have a great OP day everyone!
