How long do you keep ricotta?
I buy the smallest tub but I can't eat it all in one week so I end up throwing it away most of the time. How long do you keep it once it's been open? I'm afraid of food poisoning.

Twinmom; funny you should ask that - I have the same issue - I looked at a tub I have in the fridge and it's past the sell date, but looks and smells fine!

I never have that problem??
Usually when i buy it, it has like a month until it expires. Maybe look all the way to the back when you are buying it. Get the one with the farthest expiration. ![]() |

Whenever i buy it, it says use 3 days within opening. I never use it all!

Ok. I just looked at mine, it said "for MAXIMUM freshness use within 3-5 days." I NEVER DO THAT. My egg beaters say use within 7 days of opening. I never ever do that. First of all, I am not going to remember which day I opened it, and second of all I think that is a HOAX to get you to spend more $ and buy more of their products. I always just use my stuff by the expiration date and I am still here and doing fine. None of it tastes gross or anything. I would do whatever you want. I follow the expiration dates.
Oh and PS- I found out how to tell if an egg is still good. Get a glass of water, put the egg in. If the egg floats, it is not good anymore, and if it sinks to the bottom is is fresh. This goes for no matter what the expiration says. They just put those dates as a guesstimate. ![]() Enjoy. Hope some of this is helpful information! ![]()

My husband is the same way - if it doesn't look like a science project he'll eat it. Not me, I'm paranoid. I've been throwing it away after 3 days. I guess I can stretch it to 5.
