Quinoa?
I picked up some quinoa yesterday while food shopping. I know it is a healthy grain, but I have no idea how to prepare it. Anyone have any good recipes for it?

Generally 1 part grain to 2 parts boiling stock or water. Simmer for about 15 mins or until tender and fluffy. Be sure to rinse it well first, then add to the boining water. Add salt or whatever seasoning you need if you use water. We saute finely cut onion, garlic, celery, carrot, etc, then add the stock to the pot and bring to a boil. It makes it like a pilaf.

A wonderful Recipe
Hello,
here is a wonderful recipe I got off a site that I have cooked several times. You can add just about anything and it is still good. Recipe from Greenlitebites.com/ Quick Quinoa and turkey taco stew: Small onion diced 8 oz 99% lean ground turkey 1 medium zucchini chopped 1 small sweet pepper chopped (red, orange or yellow) 1 package of taco seasoning (preferably low sodium) 15 oz can pinto beans drained and rinsed 15 oz can of diced tomatoes with chilies 14 oz can of broth (chicken, beef or vegetable) 1 cup (170 g) quinoa 1 tbsp lime juice Non-stick cooking spray Shredded Mexican cheese blend (optional) In a large pot sprayed with non-stick cooking spray, brown the ground turkey and onion over medium heat. Add the zucchini, peppers and taco seasoning. Stir to coat all the vegetables with the seasoning. Add the beans and diced tomatoes broth and quinoa. Turn up the heat to high and bring to a boil. Then cover and simmer about 20 minutes until quinoa soaks up most of the liquid. Stir in the lime juice and serve! I sprinkled a bit of shredded Mexican cheese blend on top.

I made Rose's recipe for quinoa tonight. It was delicious. It is nice and fluffy. I enjoyed it more than cous cous. Thanks again Rose. |

I found the quinoa at my regular grocery store in the "Organic" section. I know that Trader Joe's and Whole Foods carry it as well. HTH!

I'm pretty sure quinoa is a whole grain. It is yummy!
