Casserole - meal ideas?

Hey all, I'm thinking of starting a South Beach - like eating plan next week, however I'm wondering if anyone has any ideas for some casserole like dishes? I'm super busy during the week and need stuff basically that I can cook on Sunday and then grab and go for the rest of the week - for breakfast, lunch AND dinner! Not being able to find enough variety of recipes to do this with has made me hesitant about going a more low carb route since conveniecne (without resorting to fast food) and portability is a HUGE factor.

Any ideas?? Throw 'em at me!

I make fritattas for bfast. its 12 eggs cheese veggies and some meat and a little half and half. pour into a quich dish and bake at 350 till it sets. It makes 8 servings.

Kapusta is very good too 1 large jar sourkraut 1 horseshoe shaped turkey sausage and 1 head of cabbage 1 large onion shred the cabbage and onion then slice the sausage then brown the sausage in a large pot add everything else and simmer at least 1 hr. I also add a tiny bit of bacon and some mushrooms to this. I am pretty sure this is SB legal but I would double check first.

The casserole I make all the time is 1lb ground beef, 1lb ground sausage, mix in chopped mushrooms, onions, bell peppers (season all this as you see fit). Drain meat mixture and mix in a package of presoftened cream cheese. Beat 5-8 eggs (based on how "eggy" you want it to be) and pour over the top. Pile on whatever cheeses you like. I have found that some pepper jack cheese mixed in with whatever else I have on hand seems to spice it up a fit. This makes at least 12 servings and I keep it in the fridge for a week or so and just scoop out one serving at a time. My wife (still eating high carbs ) is in LOVE with this for a quick meal; she likes to put it in a flour tortilla and eat it like a breakfast burrito. I just added in the cream cheese this last batch and it really added some additional flavors to the mixture. You can obviously leave out the veggies and/or cream cheese. If you are using the veggies, I always try to start sautéing them ahead of time to they will be soft and finish about the same time as the meat. I can't stand something crunchy in this otherwise soft casserole! I hope you find what you are looking for...

FYI, I premade this a few weeks ago before I went to the beach and had breakfast ready made every day; all I had to do was reheat and I was good to go until lunch!
