snacks & baseball

Ok, the youth baseball season is almost upon us. DS will probably start practicing April 1. Once the games start I will need portable meals and snacks. For the most I can handle this.

What I would like to do is make something like a trail mix to have as a portable snack. Any ideas on what to use for the ingredients?

So far I'm thinking:
sunflower seeds
pumpkin seeds
dried cranberries

Now, in what quantities do I use?

Any and all ideas greatly appreciated!

another thought, if I wanna make it phase 2, some fiberone cereal.

Is there such a thing as low carb granola?

granola

Well i looked up low carb granola and i found this for you Tina. Hopefully it helps you out.

Flax Seed And Nut Granola (Low-Carb)

(6 servings) Printable Version

* 1 cup flax seeds
* 1 cup sunflower seeds
* 1 cup unsweetened shredded coconut
* 1 cup chopped pecans
* 1 cup chopped walnuts
* 1 cup chopped almonds
* 1 stick of butter -- melted
* 2 teaspoons cinnamon
* 2 teaspoons vanilla powder (sugar and alcohol-free)
* 30 packets of Splenda (or other sugar alternative)

In a large roasting pan, mix together flax seeds, sunflower seeds, coconut and nuts. Drizzle with melted butter. Stir in cinnamon, vanilla power and sugar substitute. Toast in the oven at 325 degees for a half hour, stiring every 5 or 10 minutes.


I bet it is good .

Mixed nuts and a little cayenne pepper is good too. I know as a softball player i always loved to eat some kind of seeds or nuts during a game.

Tina, you know SB has those new granola clusters, but good grief, those things have like eight kinds of sugar in them, which qualifies them for another of my soapbox rants.

I don't see why you couldn't turn the protein bars into granola like nuggets.

I think rose said that if you break them up after you bake them and add some oil and then bake them longer, they get crunchy.. but i'm pretty sure you need oil.

One of my favorite activities in the summer is golf so I have to deal with the snacking issue all the time. Here are my three favorties:

1) Fruit
2) Pistacios and apricots (I count the nuts and take them out of the shell and put them in a little plastic baggie with the apricots)
3) Roasted chick peas (I found a recipie for these...essentially they are tossed with seasonings and olive oil and roasted)

Sometimes I will grab a cheesestick or slice of cheese and a V8 and eat them the way to the course.

My playing partners think the routine is "interesting" and even grabbed my snacks when I wasn't looking. One guy ate the chickpeas and said, "hey those nut things you have are kind of good." When I told him they were chickpeas he almost gagged.

Roasted chick peas are my favorite snack. I can't get enough of them. I make mine with garlic salt.

um i start doing it about 20 but than i always end up doing it longer.. so maybe 35

I roast mine for 20 minutes @ 450. The outside is a little brown & crunchy & soft inside. I put garlic salt on mine. I do eat the whole can ... sometimes. If my girls are around I need to make 2 cans because they love them too.

Drain & rinse. Toss with 2 tablespoon of Olive Oil. Spread on cookie sheet & sprinkle with seasoning.

I thought I put it in the recipe thread, but I can't find it so here it is from memory!

3 eggs
3 OZ cream cheese
salt
1/8 t of cream of tartar (I leave this out sometimes)
1 packet of splenda (I leave this out!)

seperate the eggs, yolks in one bowl, whites in another. Whip the egg whites and cream of tartar until egg whites are stiff. Mix CC, yolks, salt & splenda. Fold the yolk mixture into the whites. Place 6 blobs on a cookie sheet on parchment paper and bake at 350 for 15-20 min.
