Easter Menu
Just wondering what others are planning for their Easter menus. So far this is what I'm planning but waiting to see if theres something I forgot or missed.
Ham (of course) Faux potato salad (for me) real potatoes for everyone else Asparagus Spinach Dip with Triscuits Key Lime Cheesecake (this will be my first attempt to make this )Anyone else? |

Ham for the meat eaters, "chicken strips" for the veggie people
French cut green beans sauteed in garlic butter Macaroni and cheese, only enough for one meal, NO leftovers Some kind of fancy lettuces salad, depends on what's available Flourless chocolate torte with fresh raspberries and REAL whipped cream |

Easter Dinner
Honey baked ham Scalloped Potatoes Asparagus Quiche Large Vegetable Salad with roasted red peppers SF Jello Fluff Peanut Butter Pie for DH & sons I am planning on having rosemary chicken for me and a side of asparagus with salad. Lots and lots of water |

You make it just like potato salad except use cauliflower. It's great! We steam cauliflower and drain it really well, then proceed.

I made the mock potato salad and was floored by how much it tastes like real potato salad... and I'm not easily impressed. Sometimes folks can really exaggerate how good these low-carb substitutions are, so I went into it pretty skeptical. But dang! This stuff is good.

Wendy I got the recipe here on the board but adapted it for my own use because I'm a single guy and frozen cauliflower makes less waste. The 1-2 cups mayo called for in the recipe is WAY too much in my opinion and I wonder if the author meant to write 1/2 instead? That's what I use anyway:
1 bag frozen cauliflower (16oz) 5 hard-boiled eggs 2 small dill pickles, chopped 1/2 cup low-fat mayo 2 tbsp chopped onion 2 tsp pickle juice yellow mustard to taste salt and pepper to taste paprika I steam the frozen cauliflower until just cooked but not soft. You want it a bit firm for the salad and will breakup into nice clean pieces. Four of the eggs get chopped and put into the salad, and the fifth gets sliced and laid on top for presentation, then sprinkled with paprika. I start out with 1/2 cup mayo and add more by the tablespoon if needed. Easily adaptable to your own taste. There's lots of variations. Jim Last edited by jlieb62 : 03-22-2008 at 09:12 AM. |

Sorry we hijacked your thread temporarily with the mock potato salad discussion! I live alone and have not been invited anywhere for Easter which sucks, but the upside is that I will be eating on plan and will probably lose another pound or two over the weekend. Thats fine. I really like the faux potato salad just as well as my high carb version of potato salad. I make it the same way just add mayo, pickles, boiled eggs, celery seed and a little mustard. I also plan on staying on track over the weekend. There's really no reason not too. |
