Flax Muffins on Phase 1?

Are these okay for Phase 1? I use flax and eggs in Phase 1 now and didn't see any other ingredients that are now allowed. Here is the link...

Stephanie, Carbquick is a processed food and not whole grain. It really isn't suitable for SB and esp not phase 1. There is a flax muffin somewhere that is only flax, egg, etc and is suitable. I htink it was one of Jake's recipes. I don't have the recipe, but you could do a search or maybe someone (Tina?) has it.

I think this is the basic recipe.

1/4 cup Flax Meal
1/2 teaspoon Baking Powder
1 packet Splenda
1 teaspoon Cinnamon
1 Egg
1-2 teaspoons Butter

Mix the dry ingredients in a large coffee cup. Add egg and butter; mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.

We don't have a microwave, so we have not tried them.

The one minute muffins with cinnamon and sugar, have been my saving grace on days that I need a "baking fix" They really are good!!

Hey Steph - I have the greatest muffin recipe that is P1 friendly - AND SO EASY!!! DD20 makes one almost every day for breakfast.

I will find it and post.......

this is the recipe that I have. I'm not a big fan of the flax so I don't eat them.

Yummy Flax Muffin

1 egg
1 1/2 t splenda
2 t plain nonfat yogurt
2 t cinnamon (more if you want)
1/2 t baking powder
3T Flax meal

Spray small bowl with non stick spray Beat together and nuke for 1:30.

This is good with Fleishman's or even sf syrup!

Just adding my two cents: Flax is freaking wonderful isn't it? I use at least a tablespoon everyday and it's easy enough to slip into just about anything... tuna cakes, salad, one-minute muffins, etc. Flax makes your colon happy.

Thanks for answering this question. I asked it on another board (Atkins recipe board) but never did get an answer. I was thinking of making the LindaSues lemon poppyseed ones with lemon extract and almond flour. But I will make the flax ones for Phase 1 instead.

You'll probably have to watch portion size since we are limited on the nuts. But you should be able to have them.

I put a dollop of stevia sweetened lf cream cheese inside my raw muffin... topped it with raspberries and popped it into the nuker for 2 minutes instead of 1 1/2... YUM!!!

Wow, these one-minute flax muffin recipes look great! I am ALL about easy quick recipes that incorporate flax as well. I'm trying to increase my HDL cholesterol and another SB'er (luisafernanda) recommended walnuts. Do you think I could mix a tablespoon of chopped walnuts in with these flax muffins? I'll have to try that!
