could I do something to make them more granola-ish than bar-ish? Thanks for any help you can give this cooking impaired chick!

Rose,

Just made the oatmeal bars and boy are they good!! Thanks for posting this recipe. I used steel cut oats and they are chewy, exactly what my taste buds were looking for. The only difference that I made, did not add dried fruit, but did add cinnamon extract for extra flavor.

What kinda dried fruit would be best???? Would cranberries be a good choice?

So you want little clusters instead of bars? DD said how about after you bake them, break them up and toss in a LITTLE oil, then bake a few minutes longer? That might work. Cranberries are yummy, I like them better than raisins. Dried cherries are wonderful, but wickedly expensive.

Thanks, Rachel. We wanted something like a bar that we could carry around(and had some redeeming social value). I just can't make myself buy commercial bars anymore. Funny story: I was in Walgreen's today at lunch and they had SB cinnamom meal bars closed out for $.50. One of the library staff members eats these, so I picked up the last ones. I'm idly reading the ingredients and saw fish gelatin I'm sure I turned green.

Hi Everyone,
Could you please tell me where I can find the recipe for the oatmeal bars that everyone is raving about?
Today is my first day on Phase 2. I decided to have Uncle Sams cereal for breakfast with ff milk. It sure was a nice change from eggs Should the serving size of the cereal be what is on the side of the box?? Can anyone tell me if when eating the snacks, if cheese counts as a protein??
Today's menu
B - Uncle Sams cereal with ff milk, celery stick with peanut butter
S - cheese stick and glass of low salt V8
L - Turkey Sausage and Bean casserole ( something new I threw together and it came out so good)
S - cucumber and red pepper slices with laughing cow cheese
D - Not sure yet, but might have more of my casserole. If not, then it will be steak and veggies
S - FF yogurt with cocoa powder, cinnamon, vanilla, and stevia

Barb - The recipe is the last recipe in the recipe thread at the top of the SB page. Just click to go to the end of the thread.

I would stick to the serving size listed on the box for the cereal.

I'm not sure about the cheese thing tho. I don't really keep track of how many proteins I'm eating. Cheese does have a good amount of protein so I guess it could be condsidered a protein. Hopefully someone w/more knowledge comes in to let you know!

Thanks for the response about all my questions I will definitely check out the recipe in the other thread.
I tried something today that probably is illegal, LOL, but wanted to see how they would turn out. I took a sweet potato and sliced into thin slices and then sort of fried them in some Smart Balance Omega oil, to see if I could make some chips. They turned out pretty good, but I'm sure it's a no, no. Probably won't do that again for a long time

sweet potatoes are good for phase 2. You could try roasting them in the oven in some EVOO, that would be legal.

Not sure if your way was legal or not, I don't really know what "smart balance" is/

I copied Rose1 recipe for you:

Oatmeal bars
2 c.oatmeal
2 c. fat free dry milk
2 c. mashed bananas ( or applesauce )
1 t. baking powder
1 t. cinnamon
1 scoop protein powder
some dried fruit ( cranberries, raisins, blueberries, chopped apricots, whatever )
some chopped walnuts

Preheat oven to 350F. Mix all ingredients together. Spray a 9 x 13 glass pan and line with parchment paper. Bake for 25-30 mins. or until done. Cut into bars and wrap individually and freeze the extras. You can plop it out on a cookie sheet and make cookies. Bake 15-20 mins or until golden brown on the edges.

(If the dough seems a little dry, add a little more applesauce.)

BARB: They are ok to eat. You can make fries or chips if you want. Here are some ideas:

Fries-- Cut lenght wise and place on sprayed baking tray, and brush with a little canola oil and spinkle with s&p, or for sweet flavor you can sprinkle with cinnamon and splenda. Then bake in oven.

Chips-- Same idea only cut them differently that way they are round. Cut them into thin, round slices. Brush with a little canola oil, Sprinkle with s&p or cinnamon and splenda. Then bake in oven. It is perfectly fine.

I would try to have only half of a sweet potato to start. But you are on the right track...be creative! Yummy!!

Thanks for the recipe and the great ideas for the sweet potatoes. They much more sense to me by doing them in the oven. Guess I wasn't thinking, LOL. I am trying to be creative. Just have to do the legal way, LOL
