Morning gang!

Jan - posted this on last week, but in case you didn't see:

Pumpkin Nut Muffins
1 can white beans (drained and rinsed well)
4 eggs
1 tsp baking powder
pinch of salt
1 tsp vanilla
1 cup splenda
2 tbsp vegetable oil
1 individual container no sugar added applesauce
2 tbsp pumpkin pie spice
add any nuts of your choice if desired, I used walnuts


Put all ingredients into blender except nuts, once mixed fold in nuts, pour into muffin pan and bake at 375 for 25-30 mins or until toothpick comes out clean.

I highly recommend.

Eating ended up not being so hot yesterday......but again, that's the beauty of SB - I didn't overeat at all, just not totally OP things. Supposed to go out for lunch today with a friend/co-worker, and think I am going to ask if she minds if we change locales.....want a good salad, and the place we were going to, only has sandwiches (whole grain), and I want to stay away from mulitple grains for a few days....MAYBE one a day.....

Way off program this weekend. Spent the weekend at in-laws and there was nothing SB friendly. Oh well, move on.

Interview today was horrid. I did well on the test, but the first person who "interviewed" me started quizzing me on account numbers... which I have never studied because it is french accounting... and treated me like a complete moron. When her boss came in and asked how it was going, I responded, "Not very well. She is not very impressed with me and I feel like a schoolchild being scolded by the teacher." I think it shocked the woman to have me be honest in front of her boss, but she deserved it. You don't treat people like that. So, now I'm home, feeling totally demoralized, but thankfully not at all hungry.

Menu
B- 1 quiche cup, ff plain yogurt with 5 pecans & sweetner, coffee.
S- none
L- leftover meatloaf and green beans (no idea when. Not hungry)
S - chocolate muffin if I feel like it
D- loaded faux tato casserole (again... dependant on mood which is currently "crawl in hole, curl up, and hide")

Neesie - thanks for the food chemistry info. I love that kind of stuff. I made muffins with the 1/4 cup powdered milk and an extra tsp baking powder... they are fantastic. Very cakey and fluffy.

Rose - you have such lovely autumn colors posted. Thank you. They brightened my day.

Good Morning Gang,
Good news I am down another pd today, woohoo. One thing I have noticed about myself, if I eat less per day, but higher fat foods, I seem to lose more, weird huh. Here was my menu yesterday:

b- omelet w/canadian bacon and cheese

l- chicken club with swiss cheese and bacon on WW

d- Santa Fe Grilled Chix Salad at Sonic

I did no snacking yesterday because we were so busy, I guess it paid off and I wasnt even hungry in between. But i ate higher fat items yesterday, none of my cheese was reduced fat and the salad dressing on my dinner salad was not reduced either. Anyway, tomorrow is the weigh in at work for Biggest Loser, we only have 1 week left, so its nearing the end!! I am still in 4th place as far as I know, I am hoping to move into 3rd tomorrow,we shall see!!

Cookie- thanks for adding me on myspace, I will add you as well when i log in later.

Cindy- Glad you liked the muffins, I love them as well, cant wait to try the blueberry ones, still waiting for my Davincis to get here!!

Morning Beachers !!

Yesterday was my BFF's wedding. We had a great time. WHen I went for my last fitting my dress fit me perfectly. Yesterday, I was losing my top. Good, because that means I lost at least an inch up top and a few in my rear, but annoying that I had to keep adjusting.

I wasnt OnP, but wasnt terrible. I was happy to see that I got ripped off, lol when I was given a small piece of cake. I had chicken & rice for dinner, some veggies and a few appetizers. Not a totally blown day. The scale is still down, go figure.

I have a busy morning with the DKs. DD5 has a trip and I'm going too.

@cookie: I'm sorry your interview sucked...

Well the weekend was just awful I dont know why it is so hard to get back on track. but right now i really dont feel like going back to phase I.

I hope I will make the next weekend. I am not worried about working days. But the weekend is hard for me.

~Good morning Beachers~

Well the weekend challenge did help me. I am down 1 lb. Still one lb from signature weight. But I'll get back there.

In my challenge for Oct to eat/try more veggies I bought jicama and am going to try a recipe for "baked apples" I'll let you know how it turns out.

I made cream cheese muffins yesterday and used 1/4 cup of powdered milk and I think I like them better than the regular ones. I used pumpkin pie spice in them. they were very good. I printed out the bean muffin recipe to try also. I tried one that I didn't really like, but I'm willing to try again. Do you think I could use a hand mixer and not the blender to make these?

This is a quickie!
Up a half pound over the weekend but I'll take it - I think it's water weight as I didn't drink enough water I think. It's better than the 2 pounds I used to gain every weekend!

kelly - thanks for the recipe. I think I have all the ingredients so I'll give it a shot either tonight or tomorrow! Thanks, again!

Jan - I had tried the ABSOLUTELY FREE bars a while ago. They seemed to have a powdery feel to them. I'm now hooked on Blue Bunny frozen treats. We like the Black Raspberry Dark Chocolate ones and the Chocolate covered chocloate ones. They also have vanilla with chocolate coating and vanilla with chocolate crisp coating. I've only seen them at the Walmart Supercenter. If there's one around you give them a try!

Cindy - thanks for posting that recipe too - I couldn't find it anywhere!

Cookie - did you substitute those ingredients for something already in the recipe or did you just at them to the recipe?

Reg - Looks like you still made the weekend challenge! How much was your loss?

Tina - down a pound? WOOHOO

Hey Beachers!

Sounds like ya'll are doing well. I had a good weekend. It was nice to be away and I enjoyed the cooler weather. My trip was just too short! I didn't eat OP, but wasn't horrible. Nevertheless, I gained 3 pounds. I am hoping it's mostly water. I was not able to get in my 2 liters of water while I was away. Back OP today and will hit the gym. It's fall break and I am LOVING the students being gone.

Kelly, I see you made it below the 220s! Good for you! Hopefully I can get there by the end of next week.

Reg, you are doing so good! I bet it was a good feeling knowing that you are losing weight when you realized your dress was too big!

Cookie, I'm sorry about your interview. Interviews suck! We've been hiring several new people in my office. I try to ask more general questions. I figure that their application and resume tell me about their work experience. I want to know who they are like as people.

I just had to report the great news, some of the gals at work weigh in on Monday for Biggest Loser and some weigh in Tues. Anyway, the gal that has been in 2nd place weighed in this morning and she gained this week. So with what I have lost this week, I will move into 2nd or 3rd place, which puts me in place for winning some money!! Woohoo. Of course we still have 1 week left, so I guess its possible she could come back next week with big numbers, but we shall see. I just had to tell someone, I feel bad she gained, but on the same token I was happy that I may win some cash.

Thanks everyone for your condolences on my lost intelligence and abyssmal interview. At least I have only consoled myself with SF LF dark chocolate.

German- added you as a friend... and if that is your pic (on your myspace) then thank you for not posting it here because you are too gorgeous for words and I might have to hate you cause your beautiful.

Neesie - I just added the ingredients. I did not omit anything that is normally in the recipe. It made the batter a bit thicker, but the muffins are really big...and yummy. I split one with my DD last night.

Kelly - I hate to dance about because of someone else's misfortune but it is great news for you! If you could resist wedding cake, then you can be super mega great this one last week. I am so excited for you.

Reg - glad you enjoyed the wedding. I would have loved the pampering you got before the wedding.

Pir8- thanks for the sympathy. Like you, I thought they she would have read my resume and understood that I was educated in the US and would obviously not know the account codes for every expenditure in France. For real... she was quizzing me on account codes. It was like failing a pop quiz. My experience was in payroll accounting and accounts payable. I didn't do year end reports and coding... of course, you would have to have read my resume in order to garner that information. Ok... ranting.

I will try to get in some exercise later. I know it will make me feel better but right now I just want to curl up in bed with my sf chocolate and watch my Grey's Anatomy dvd's.

Hi, All,

Cindy, thanks for re-typing the muffin recipe. I am awaiting the delivery of my DaVinci syrups so that I can try the bean cake too!

Neesie, so far I still like the ABSOLUTELY FREE bars. I know that our Shop Rite has Blue Bunny products, but I don't recall seeing the ones you mentioned. I will look more carefully next time I am in the store; I am always game for a new treat!

I think I did OK for most of the day today, but dinner was ww pasta w/vodka sauce and 4 turkey meatballs. I also had a salad w/lite dressing. I think I went overboard! My lunch was a FLAT OUT WRAP with lf turkey and nf cheese w/lf mayo and hot peppers. (That was good!)
I skipped breakfast because I went to the hospital to get another injection in my back. Keep all fingers crossed, please, and a few prayers wouldn't hurt. Thank you!

If I lose enough weight, that should definately affect my back in a positive way. I am trying, but, as you all know, it's not easy!

Was a nice relaxing weekend here and managed to stay on program and exercise too. Think I might have broke my stall was down 1/2# this am and I am taking the losss lol every little bit helps.

Cookie: sorry about your interview but who would want to work with such rude people anyway you are too nice for them and pobably smarter too!!!!!

Jan: I am sure any loss would help your back and I will that the shots continue to help while you are on your journey.

Good Evening Beachers. Sorry no post yesterday but these folks here at work actually expect me to work. Nervy bunch!!

The weekend challenge turned out well for me - another 1/2 down. I'm in uncharted areas of the scale.

Cookie - The interview only goes to prove that there are rude people all over the world. You don't need to tolerate that sort of stuff. You're a better person than that.

Kelly - WTG - you'll be seeing $$$$ before long.

My menu for today:

B - oatmeal w/whey protein, walnuts & cinnamon
S - HB egg (ran out of V8)
D - pork loin & sauerkraut, salad
S - string cheese, apple
80 oz. water, coffee, iced tea

Goal-wise I'm right on target. The last part is starting to look doubtful but I really want to see how close I can come to 159. I've been eating clean and not "treating" myself so something has got to happen. I'm starting to think I have a wheat intolerance because when I've eaten ww bread I get these nasty intestinal disturbances . Has this happened to anyone else? Just being nosey.

Yesterday was a good one, but also realized I can't tolerate popcorn multiple days in a row......my tummy is not happy today.

Got two walks in yesterday, so that was good as it's pouring here today, so didn't go this morning, and working the later shift in the office, so won't be able to go tonight!

Yesterday:

Bfast:
2 cups of coffee
1/2 c rf cottage cheese with light mixed fruit
1 pumpkin nut muffin

Lunch:
Mixed greens salad with chicken, mozzerella, artichokes, olives, sundried tomatoes, garbanzo beans, balsamic vinegarette

Snack:
1 pumpkin nut muffin

Dinner:
LO salsa chicken, baked sweet potato, salad

Snack:
piece of dark mocha chocolate, 2 small bowls of popcorn

Well I am now in 3rd place at work for the Biggest Loser, which puts me in place to win some money. If I can just hold on for the next week, I will be good.
I ate more fat yesterday than usual and I lost more weigh, I think I am probably into the 218's now, but with my clothes on at work, it was 219. So I will weigh in tomorrow morning, naked in my bathroom like I usually do
My menu yesterday was this :

l- lean cusine
s- cheese with candian bacon, 1 piece dark choc w/PB

Where's everyone else this morning?

I had to tell you all; I made the Bean Cake recipe this morning! IT IS EXCELLENT!!! I made the original recipe in a bread pan. The only tweak was I took about 1T of nat pb mixed with some vanilla davinci's.....nuked that so I could mix it, and threw it into the blender as well. Poured into the bread pan and baked for 35 min. It tastes like a pb bread!!!! I had already eaten bfast (2 eggs scrambled in EVOO with a slice of ww bread, toasted), but wanted to try it.....I put a little Fleishman's on it. I will take this for a snack or have for dessert tonight maybe with a little *cream cheese frosting*?

I highly recommend!!!

Basic Recipe:1 15oz. can of white or brown beans. Rinse and drain.
4 eggs (egg beaters work fine also).
1 cup of artificial sweetener ( I used Splenda).
1/4 cup dry milk (helps to make it rise)
2 tsp. baking powder
2 Tbsp. oil
a splash of DaVinci SF syrup

Put all of the above in your processor and beat the heck out of it. The recipes says 5 minutes....I found a couple of minutes was plenty. The mixture will be real thin. It amazed me how it raised and baked. I thought it might not due to how thin the mixture was.....no problem. It raised great! Bake at 350* for 35-45 minutes. (35 worked for my oven). This is so quick and easy to make. It is fun trying different ways of making it.

Different ways I have made this:
Choc. peanut butter cake. I made this with the brown beans. I added 2 tsp. of cocoa, and a splash of vanilla DaVinci to the batter. After putting it in the pan to bake I took 2 tsp. of peanut butter and mixed a little DaVinci syrup in to thin it a little. Any flavor such as vanilla, marshmallow, or peanut butter flavor will do. I dropped drops of the PB mixture over the top of the cake and baked. YUMMY!!!!!! Good warm or cold!

Pumpkin Cinnamon cake: I made this in a bread pan. It is nice to have in the mornings I think. I call this a bread . I used the brown beans. To the batter I added 2 tsp. of pumpkin pie spice and a splash of Spice syrup. After putting the batter in the pan, I sprinkled over the top a mixture of Splenda and cinnamon, along with a few toasted sliced almonds. YUMMY!!!!!

White cake: I have only made this once. You can add all kinds of DaVinci syrups. Cookie Dough, Peanut butter, Coconut,pineapple, French vanilla, Spice, etc.....I used the vanilla syrup and added some spices to the top of the cake aloong with a little peanut butter drops. . It turned out good also.
