Hi everyone! I hope you are all having a great long weekend! I finally got off my butt and did some exercise today, it was such a nice day out here in Mass. A friend and I walked around a lake, it is a little over three miles and we did it in one hour exactly. She is pretty fit and kept me at quite a pace, so I was dying half way through, but I made it! I realized just how out of shape I am, but I hope to change that! I'd like to start doing it every morning before work, but it will be tough.

My meals for the day:

B - 2 sausage egg and cheese quiches
L - Roast beef and light cheese in half a low carb pita pocket
D - Chicken italian sausage with sauteed peppers, mushrooms and onions
S - Maybe 30 pistachios, maybe a NSA fudsicle

Have a great night!

Hi, Beachers,

I made the flax muffins today. I used sf maple syrup and added walnuts. They aren't too bad! The flax meal I bought worked fine! Need to get on lollicup.com and order some DaVinci's syrups so I can fool around with this recipe!

Congrats to the losers!!

I guess I am eating (still) too much of the OP foods. Too many nuts, too much cheese.... I am up, down, up, down.....

Tomorrow it's muffins for breakfast!

Have a great evening, all! You are right, Cindy. This group is getting too big for indies! It is great, though! More ideas; more variety.

Jan, Im not an expert here but I have found I can only eat one muffin per day or I am running to the bathroom frequently! So I divide mine in half and eat part in the morning and part for a snack later.

Good Afternoon Beachers,
I was MIA yesterday because we were gone from early morning til late night to the State Fair, talk about some exercise, walking all day long pushing the stroller, my legs were so sore this morning I could barely get out of bed and they still hurt right now, particulary my heels, my sister told me I probably have planter Fascitis, or however you spell it. I bought some orthotic inserts for my shoes today, maybe that will help some. I am still not losing anymore weight, its very discouraging, so needless to say I am tweaking things a bit to bet my weight moving again. I think the desserts were part of the problem. So today I am eating very clean, very low carb as well. I am not really hungry at all, here is my menu today:

B- 2 eggs and turkey ham

L- Mexicali bake over fresh spinach

S- 3 deviled eggs

D- Turkey sausage w/steamed cabbage

Hopefully the weight will start moving again, the next weigh in is on Tuesday at work, so I am trying to eat clean Sat, Sun, Mon and then maybe by Tuesday morning I will have lost several more pds for the compeitition. Sounds like everyone is having a great holiday weekend!! I will check again tomorrow morning and report if the minimal snacking and no dessert got the scales moving down again,

Evening Ladies... had a semi OP day. I'm doing fine and feelin okay.

My breakfast consisted of coffee with 2% milk and fruit... for lunch I had a mcdonald's breakfast wrap and a tea with 1 cream and 1 splenda. Went to our close friends niece's wedding at 2:30pm... it was beautiful and very touching. Was a very traditional service... but untraditional in the sense that all the bride's maids and bride grooms wore black... which is quite different. Young people have very different ideals these days. The girls were holding dark pink boutiques... and the bride grooms had dark pink rose lapels and black and white checkered runners. The bride wore the traditional veil and white dress with a black velvet sash around her wast... and the groom wore a red tie and a black suit. The wedding was almost looked like a funeral... but they all looked very stunning. It was a very toughing wedding marimony. We weren't invited to the recept... so we left soon afterwards. I didn't have any wedding cake... since there wasn't a reception at the church. So mom and I went out for dinner to white spot and I had a chicken quesedia with a small tossed salad... then went to mcdonald's and had a hot fudge sundae with a tea 1 cream/1splenda. Not a perfect OP day... but did eat in moderation. Have to splurge once in awhile... Ladies. Will be an schedule tomorrow... bright and early.

Later in the afternoon mom and I spent the evening together at white rock beach... walking along the pier. It was warm... with a slight breeze off the ocean and the tide was just going out. There were alot of people there... and we had a very quiet, serene time just walking and taking in all the breath taking scenery of the pacific ocean. It was very theraputic. I live in Surrey... which is offically a small city now... just beside the township of white rock... which is very close to the BLaine USA border crossing.

to all you Beacher Buds!!! Have a great night...

Morning Gang!

Yesterday was a good one....DH and I ended up taking the motorcycle for a long ride, stopped for lunch and then returned home. We went to Applebee's for lunch and I got a salad, altho did not eat all of it.

Came home and hung out for a while, and then he wanted pizza - I looked everywhere for someone who made ww crust! NO ONE! From now on I will keep a DiGiorno Whole Wheat Crust in the freezer for me when everyone else wants pizza. We did order and I got Brooklyn style crust, which I really like. I also only had 1.5 pieces (that size though it was probably three small) and a couple wings. I had no other *grains* for the day, so will consider myself ok......

Not sure what's up for today.....my back is really hurting from yesterday, so no boating for me today...

Tammy sounds like you had a nice day yesterday!
Tina - I am going to head to the recipe board before groceries today - I need to have some stuff around too; especially for bfasts and lunch!
Kelly - What's mexicali bake? Sounds good!
Bella - Maintenance? YAY! I sorta feel like that's where I am too - I really don't need to lose much more, if any, and this is the hardest part for me!
Amiga - that is right where my down fall can be too - too much of OP foods! Sounds like Jan is right with us too! I think we just need to pull out our portion and promise ourselves we will NOT eat more than that!

Last night for me, I ate too many dark chocolate M&M's! I was well within the portion limits, but for ME it was too many!!!

Hi's to the rest of us out there! TOMORROW IS A NEW WEEK AGAIN! And we are going to have a great one, right BEACHERS????

Off for more coffee....have a great day and I will be back later!

Good Morning Beachers

Here’s our menu for the day….

Breakfast: Flax Waffle; Blueberries; Glass of Skim Milk; 2 cups coffee each w/ ¼ c 2% milk and sweetener
Snack: V8
Lunch: Strawberry-Banana Smoothie w/ cottage cheese
Snack: Apple w/ Peanut Butter
Dinner: General A-Rod's Chicken (Chicken and Broccoli) w/ Brown Rice
Desert: Bean Brownies

We’ve been eating a lot of smoothies, they are super quick and easy and they taste great.

Fruit Smoothie
¾ cup skim milk
½ - ¾ cup LF cottage cheese
1 serving frozen fruit (raspberries, strawberries, blueberries and bananas are all good)
1 t vanilla
1-2 pkgs Splenda

Blend well in a blender and eat…. NUMMY! The ingredients are really flexible… I don’t measure anything, just eyeball it as I throw it in the blender.

General A-Rod’s Chicken is a new recipe and it looks great… I’ll let you guys know how it turns out.

Kelly, I have Plantar Fasciitis, they also call it “First Step Syndrome”… the symptoms are really distinctive. It definitely aggravates my heal to walk or stand on it for long periods of time, but the real pain comes later… after I’ve been off it for a while (first thing in the morning is the worst). When I first step on it, the pain is excruciating. It gradually gets better with each step. That is part of my motivation for losing weight. Some overweight people with PF do see some relief in the symptoms after losing weight.

Cindy, have you tried the Boboli WW pizza crusts? They are OP and actually really good… You just put your own sauce and topping on it and bake for about 15 minutes. It’s really nice to be able to control the toppings… most pizzas have sugar in the sauce and full fat toppings. A serving is very small… the package says its 1/5 the pizza; but SB grain servings are 30 grams, which is 1/8 the crust. We have our single slice with a small salad (gotta eat those veggies! ) and find it is plenty of food. Then we freeze the leftovers for a quick meal later.

Have a great day on the beach everyone!

The smoothies sound great! I was loving them a while back and never thought about cottage cheese!

And never thought of the Boboli crusts either!

Thanks!

Cindy, you can't even taste the cottage cheese in those smoothies... and since it gets blended, you don't get any cottage cheese texture either. I really like getting the added protein though. DH sometimes adds a raw egg to his... It's not the taste of it I mind, but I am concerned about bacteria... Egg Beaters would probably be a better choice. Dairy, Protein and fruit in a glass!

Morning Lady Beachers... Happy Sunday!!! I'm having my morning coffee with 2%. It looks like it rained overnight and it's overcast... but cool. I can't believe that it's the end of summer. Yesterday was a warm beautiful sunny day... and yes I have a good day.

Luvs... I never though of adding cottage cheese either. That would make sense... adding protein to the smoothie. The boboli ww pizza crusts sounds so yummy!!! I have to try them and make pizza. Ellen... I didn't know you suffered so much with PF... if losing wieght helps keep the symptoms deminish... that would be a blessing. I'll definitely for you. My mom who is 75... suffers from arthritis after being hit by a car 7 yrs ago and has trouble walking sometimes... she has good days and bad but by the grace of God... faithfully takes her walks every morning to A&W.

Cindy... sorry to hear your back is hurting... I'll put a in for you. I stand all day at work... and my legs ache alot. So I'm glad I walk home after catching the bus. It makes my legs feel much better.

to all you beachers and those I missed!!!

Good morning friends!

I hope everyone is having a great weekend. I am. I had such a great time with Wade this weekend, playing Scrabble and shopping for furniture for the home theater system. My daughter is with her dad until 5PM tonight, so I'm just kind of hanging out here at home. I need to go out and get some groceries, so after I drink my coffee, I'm going to put on my exercise clothes and stop at the gym and go get my protein shakes for today.

My weight is up on the scale (darn that scale) but that's okay. This is the month when I figure out if I'm meant to maintain around 133-135 or if I'm going to be able to realistically get lower and maintain it. I am okay with this weight BUT I'd still like to go lower for vanity reasons AND to have a little more of a cushion against gaining weight.

No matter what my results yield this month, I have decided that I am going to choose a top weight and not allow myself to go past it. That's what I'm still scared about, gaining again and pretending that I'm not until I reach a point where I'm very unhappy with myself. A "high" top weight for me will be 135. A "low" top weight for me would be the elusive 129.9. I'm within range. Just a matter of discovering what that range will be.

Have a wonderful day, my friends!! I am thinking about you all and sending you all my best South Beach vibes!!!!

Good Afternoon Beach Pals!

Just had some chicken chili for lunch! I also had a small apple w/PB. Never tried it before, but it was quite yummy! I hope everyone is having a great holiday weekend.

I've got tons of projects for the house I'm working on. I've been putting them off hopefully I will get everything on my list done!

I did get some of my cooking done. I cubed up some chicken and used taco seasing on it. I will use that to make fahitas (I NEED SPELLCHECK ). I also made another batch of chicken chili. I think I am going to make some cabbage rolls minus the rice or maybe w/brown rice. I was thinking about using ground chicken also. I'll let you all know how this one turns out.

today menu:
b - none
l - chicke chili, apple w/PB
d - depends on what time DH gets home from fishing

I hope all of you are having a fantastic Sunday....

I weighed yesterday and I was down another .8 today I was up .4....I had very little water and didn't eat much yesterday since I was busy most of the day.

I lost probably 7 or 8lbs this week but most of that was TOM weight I need to go back through my journal and figure out what my actual loss for the week was.

Need to get some house cleaning done and dh is finally going to fix our kitchen faucet which has been dripping forever and is now trickling all the time, the faucet in the tub is doing the same thing so that one will be next and hopefully soon He's not good at getting things fixed around the house which drives me crazy

TTYL.....

Hi, All,

Bella, thank you for the info on the flax muffins! Never thought of that!

I am down a little on my scale today. Man, I wish this scale were not attached to my feet! I can't seem to go one day without getting on!

Tammy, sounds like you had a nice time at the wedding. I agree with you, though, the colors were a little unusual, but I bet they were striking!

I'll be back later.

Been busy doing a buncha nothing!

Went for my walk, then showered and got ready and went and got groceries and came home and unloade - you know how long that takes....then DD20 and I went to the mall for a short time; wanted to look for a new shirt to wear for everyone's first day of school. And also wanted to do a presale for the Goodwill Sale on item I have had my eye on.

Now just doing laundry and catch up here.....promised DH to go out on boat tomorrow for most of the day, so trying to get as much done today as possible.

For today:

Bfast:
2 cups of coffee

Snack:
Iced Coffee

Late Bfast
RF Cottage cheese with roma tomato

Late Lunch:
RF provolone topped with pizza sauce, parm
grapes
South Beach Oatmeal Choco Chip Cookies

Dinner (will be):
Grilled pork chops, baked sweet potato, italian green bean salad, possibly ww garlic toast

Neesie - I got the makings for the mocha creme too today and can't wait to make it!

Good Afternoon Everyone,
Well I guess my tweaking idea yesterday still didnt pay off, I am at the same weight again today and have been for a week now. What do you guys do to break stalls and get things going again ?? Any ideas would be great. I am planning a big walk this evening doing the hills around my house, that is a major workout for me.

Radmom- The mexicali bake is a receipe that I got off this board in the recipe section. Its a mexican casserole type stuff and I eat it over salad. I used ground turkey in mine, but you basically layer the stuff and its got green chilies and ff refried beans and onion, cheese, its really good stuff. Here is what I am eating so far today:

B- 2 eggs and slice turkey ham

S- 2 deviled eggs

L- Chef Salad w/ham and cheese

D- Herb/Garlic Chicken and green beans

I have only had 1 diet soda all day, which is good for me. I am trying to push the water today, I am wondering if lack of water is part of my no loss problem I am expeirencing. I am praying I see a loss tomorrow or thats going to be really embarrassing weighing in on Tuesday with no loss for an entire week. I hope everyone has a great holiday tomorrow.

I am struggling today though..........I ate BBQ sauce....Maybe that was a no no? It was the lite version. Then I had a bad bad sweet tooth, so I ate a whole cup of redi whip lite. I guess not as bad as going off the wagon and getting a sundae..But I feel bad now!

hiya everyone,

tina your recipe plans sound good! 1oftheluvs-do let us know about A-Rod's chicken. sounds promising! And i love smoothies, too!

xbeyond, welcome! hang in there! just stay on plan and don't let the whipped cream or the bbq sauce derail you! you can do it! check out the stickies about allowed foods for the different phases of South Beach. they are really helpful!

yay Jan!

Kelly, i could share what i have been reading about and experimenting with to break a stall, and its called a "refeed." it sounds almost counterintuitive, but basically, you eat some carbs, perhaps 150-200 grams. then the next day, you get right back on plan. The aim of the refeed is to raise the leptin levels of your body, basically you try to trick your body so its as if you are no longer on a diet. on the downside, for your weigh in, the scale will be up for 4-5 days, but then, it should be down. i've done 3 "refeeds", such as rice, a little fruit, a slice of pizza, but it can be almost anything, just not a blow-out. if you are interested, check out threads under "Other Plans" and actually, there is a good thread under Kimkins called "Refeeds and Free Meals" that has alot of info too...It is not South Beach, I am not sure what Dr. A. recommends for stalls on SB.

best,
amiga

Hi everyone happy holiday weekend!

Okay - so I gained a pound back since Friday - but I am still at my pre-vacation weight so I can live with it. I've eaten completely on plan but a little too much as usual and no work out so hence the gain. I'm just hoping not to gain anymore than I have. Keeping my fingers crossed.

Tammy - I make CBC all the time - didn't know it was called that. I always call it chicken and broccoli alfredo (I add a touch of jar alfredo sauce to mine). Have fun at the wedding - and congrats on the pound!

Bella - I did Atkins in '99 and lost 25lbs and like veryone else gained it back plus some. SB is so much easier for me to stay on, I feel I can do this for the rest of my life at some level. I tend to hang toward the more cautious side so you might want to start on P2 just to ease yourself into the program. Once you've got the hang of it and it's working okay for you then move onto to P3 for maintenance.

amiga - one of my issues is also eating on plan but too much - especially on the weekends. I'm all about protion control when I pack food for work but on the weekends I tend to overfill my plate.

Rose- Me and DH spent the morning in the garden today too. I usually handle the flower beds and he does the lawn. Today he was helping me which was okay but when he's with me he tends to make me do more than what I had planned on. So instead of weeding and mulching 2 small beds, we did that plus 2 more beds, planted a tree and potted up some houseplants that I had in outside planters so they could come in for the winter. At least it was good exercise!

Which flax muffin recipe is everyone using? That's my next recipe to try. I made the: Very Berry-Orange Oat Muffins yesterday but I make like a bread - all in a meatloaf pan.
It always seems to be very crumbly - I think I might need to add another egg to bind it together more. Would that sound right to everyone?
Here's the recipe:

Very Berry-Orange Oat Muffins
1/2 cup rolled oats
1/2 cup reduced-fat buttermilk
1-1/2 cups whole-wheat flour (or pastry flour)
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of ground cinnamon
1/4 teaspoon of salt
1 medium orange, rind and the juice
1/2 cup sugar substitute
1/4 cup canola oil
1 whole egg
1 cup of blueberries (fresh or frozen)
1/2 cup dried cranberries
Cooking spray
I also add 1/2 chopped walnuts

Preheat oven to 400 F. Lightly coat 12 muffin cups (or loaf pan) with cooking spray. Stir together oats and buttermilk in a small bowl and set aside for 5 minutes.

Whisk flour, baking powder, baking soda, cinnamon, and salt together in a medium bowl. Grate rind from orange and add to large bowl; squeeze 1/2 cup of orange juice and add to rind. Whisk in sugar substitute, oil, and egg until mixture is smooth. Blend oatmeal mixture, followed by flour mixture. Stir until ingredients are just combined, then gently fold in berries.
Spoon batter into prepared muffin tin and bake for 15 minutes, or until a toothpick inserted in the center comes out clean.

1of - It's so great that we all share recipes. My problem is I never write them down and then I can't find them again - but I came up with a solution. I keep a Word document open while I'm on the board and I just copy and paste the recipes there. I'm starting to get quite collection pretty quickly too.

Kelly - try a little more fiber in the morning maybe? And watch the cheese - it can be binding if you know what I mean.

X - to the gang. I'd really watch the BBQ sauce - most have brown sugar in them. I use one from Walden Farms that is no carb - if you can find it it's pretty good. Just a suggestion - when you post include your meal plan for the day. It really helps if you plan out what you're going to eat for the day and we can help with any tweeks that might be needed. remember we're here to help - this is a great support group so post away!

Okay - today's eats:
Coffee / half & half / SF Davinici choco syrup & SF Caramel davinci syrup / 2 splendas
B: slice of Berry orange oatmeal bread grilled with butter / 1/2 an orange
L: Spring salad with roast beef / grape tomatoes / dressing
D: DH is grilling steaks as we speak & salad / 1% milk
S: SF fudgesicle

Will definately check in tomorrow.
Have a great night everyone!

Thanks Amiga,
I have heard of kinda tricking our bodies and perhaps if something doesnt happen for me in the next couple days, I just may do that. I do know that in 1 day I can gain around 2 or 3 pounds and I know it takes longer to lose though, thats the only thing I worry about. But it seems I am maintaining right now and not losing anything. I almsot gave in this evening at the grocery store and bought a kit kat, but I held back, I really need to stay OP. Tomorrow will be 1 month on SB for me, I guess I should be happy with 16 pds in 1 month, but I need to keep losing.

still on vacation

the kids are fishing and I am using the cell to post. we did some major outlet shopping yesterday. great bargain at the pottery barn for kids - new quilt sets and curtains for the girls room- to be painted soon and new furniture by october. it would be great to lose 20 by then!! we did a lot of walking yesterday and a lot of sunning today. food wise I gave a dilema- the kids want to eat what I do and they ate all of the string cheese and turkey. since we are camping it is hard to food shop . I have been pretty much on program- with the addition of pepperoni.time to walk back to the site

Hi All

The dinner recipe tonight is a keeper... it was very good. We tweeked the original recipe slightly... this is our version.

General A-Rod's Chicken - Phase 2

3-4 boneless, skinless chicken breasts, cut into 1" cubes
2-4 crowns of broccoli, cut into florets and lightly steamed
6-8 green onions, sliced
1 small package sliced almonds

For the sauce:
1/2 cup sugar-free apricot preserves
1/8 cup water
2 tbs. soy sauce
1 tbs. Dijon or hot Chinese mustard
1 tsp. black pepper
1 tsp. ground ginger
½ to 1 tsp. curry powder

Place a skillet over medium heat. Add almonds and toast, stirring/tossing frequently to prevent burning, about 5 minutes. Coarsely chop and set aside.

In a small saucepan, whisk sauce ingredients together over low heat. You may adjust quantities to taste.

In a large skillet, heat a small amount of oil. Salt and pepper the chicken cubes and add to the hot oil, sautéing until cooked through, about 5 minutes. Add broccoli and green onion to the pan and coat with the sauce. Let simmer 2-3 minutes until all is warmed through.

Serve over brown or basmati rice, sprinkled with the almonds. - 4 servings

We used 1 tsp of curry and I thought it was pretty spicy... I like spicy food and would use 1 tsp again for DH and me... If I was making it for guests, I'd probably cut it back some.
