Good Thursday Morning!

Check in and post your menus (if you want)!

Well, we finally got our much-needed rain last night! It always works - you water the garden, it rains... Now, if we could just have a break from this heat, I would be quite happy. Ah well, at least it makes it easier to drink all this water! Sometimes, I feel like a goldfish

Wednesday Menu:

Breakfast: 1 Carb Control yogurt cup, 1 Whole Wheat mini bagel with cream cheese.

Lunch: Chef salad, with cottage cheese instead of the meat.

Snack: 1 string cheese stick

Supper: 1 Boca burger, with LC BBQ sauce on a piece of Whole Wheat toast, with loaded cauliflower.

Dessert: 1 homemade LC-ish brownie.

Morning Glories! I'm back on the beach!

Time to go back to work today, field trips are fun, but reality is back. I'm eating my oatmeal and drinking my coffee. I'll make a salad for lunch and drink lots and lots of water.

Hmm - do I detect a chocolate lover out there??? It's a recipe based on "Real Brownies 2" from the recipe room, but tweaked around a bit. Here's the way I actually made them:

1/2 cup Splenda
1/4 cup melted butter
2 eggs
1 teaspoon vanilla
1 tablespoon water
5 tablespoons whole wheat flour
5 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chopped walnuts (optional)

1. Preheat the oven to 350. Spray a 8" square pan with cooking spray, or grease it well.

2. In a medium-size bowl, mix the Splenda, eggs, melted butter, vanilla and water, beating until well combined. Add the flour, cocoa, baking powder and salt, and mix gently until it is just combined.

3. Spread the batter in your prepared pan, and sprinkle the nuts over the top.
Bake for 15-20 minutes, until the brownies pull away from the pan and are set in the middle. Cool completely before cutting. ( )

Not, perhaps, exactly the best thing to be eating, but I was in the midst of one of those "brownies or die!" moments at the time. I put a chocolate/cream cheese frosting on top, and they were really quite good.

I wonder if they could be made with Soy flour? Anyone know?

That would be me! If I had to choose between giving up chocolate and giving up every other food in the world, it would be a tough choice.

Thanks for the recipe, I wonder how it would taste with flaxmeal instead of wheat flour.

Anyway, great news - the scale moved today! But I am going to wait til tomorrow before I 'claim' my winnings.

Soy flour can tend to make things gummy and nasty if you use too much; it also has a bitter taste. I think you could substitute about 1/4 of the flour with soy flour.

There is a very similar brownie recipe in the recipe room, using almond flour. I haven't tried it yet, but it sounds like it would be pretty good as well! I think it is the "Absolute Best" recipe, but I'm not 100% sure.

Good evening Beachers!

I think I had a good day. I was down 1/2 lb this morning and did 50 minutes on the treadmill for a total of 2.8 miles.

I'm liking having the cereal at night. I don't have to cook, I don't have to plan out another meal and I feel it's much healthier and fewer calories. We shall see how it goes for me.

Here is my menu for the day:
B: 6 deli ham slices with 2 tbs. cream cheese and a cup of 1 % milk
L: hamburger stir-fry w/ zucchini, onions, green peppers, red cabbage and chopped broccoli and spices
D: High fiber cereal w/ three sliced strawberries and Carb Countdown milk.
Dessert: SF jello with 2 tbs whipped topping and a sprinkling of walnuts.
Lots of water, 2 cups of chai tea with sugar free creamer, and a couple Diet Rites

I think the field trip is catching up with me, I’m exhausted and it isn’t even 8pm yet.

Food:

B – oatmeal made w/water, black coffee
S – Laughing Cow cheese
L – Mixed baby green salad w/ chopped celery, ff cheese shreds, turkey & ff blue cheese dressing
S – Almonds
D – Grilled chicken and asparagus, strawberries and sugar free pudding

I have decided that I really, really like asparagus. And it’s especially good with Smart Balance, garlic and parmesan cheese on it. Nummy stuff.

Rose - The brownies sound divine. This summer I'm going to have to try those!

Shelia - Nice to see you!

Amy - Thanks for the kind words, it really helps.

Pita - Sounds like you are doing good. I need to get more dairy in my diet.
