Pickles and Pepperoncini peppers question
Hi Guys,
I switched from Atkins to South Beach recently and it never dawned on me if I should be eating pickles.... they have one carb a piece and I do enjoy eating them in my deli meat roll ups. I just thought I better ask because I have really been craving them and also pepperoncini - TOM is on the way and I think that is what is going on...I always seem to crave salty things. I tried to look in my book first to see if it said anything about pickles but it didn't at least not to my knowledge. Let me know if you guys find that these do not interfere with weight loss thanks! |

Dill pickles and pepperoncini I believe are ok. I just make sure the sugar count is low in the ingredients. If it shows 2 gms or less then I have some. It's used as a condument so don't indulge with too many because of the salt intake. Use in moderation and you should be just fine. That's what I do. Take care you are doing great!

Thanks Sharon - I allow myself no more than two dill pickles a day (the baby dills) it say's 1 carb per pickle so I try not to have too much. The brand of pepperoncini that I have are Bakers and Chefs - got them at Costco they are the restaurant quality ones. It's 3 pepperoncini for 1 carb so that is pretty good! I don't have them everyday though because of the sodium. Yesterday was crazy I stepped on the scale and was up like 6 pounds for the day but knew that my eating was clean and by this morning it was back to normal and was probably the pickles, pepperoncini and other sodium used in cooking. I am going to pick up morton's light salt when I go to the grocery store. I was using that for two years (got on it when I was pregnant and needed salt for my eggs etc) since I had problems with pre-eclampsia and then ended up getting it full blown towards the end of the pregnancy and you know the Morton's light salt once you use it really shows when you go back to table salt just how darn salty things are with regular salt. I think I saw a post of yours on a menu board for edamame as one of your snacks? I saw a recipe in a magazine I was reading and thought oh maybe Sharon would like this

Hi Sharon,
Here is the recipe - it's from my Cooking Light magazine May 2006 issue. It looks good. I am going to type it as is in the magazine and we will have to see if anything needs to be modified (ingredient wise) to make it SB safe. Edamame Dip You won't need encouragement to eat your veggies when you serve this hearty, nutty dip with a variety of crisp vegetables such as jicama, bell pepper strips, steamed sugar snap peas, and carrot sticks. 1 1/2 cups frozen shelled edamame, thawed and cooked 1/2 cup water 1/4 cup chopped red onion 3 tablespoons chopped fresh cilantro 2 tablespoons rice vinegar 1 tablespoon olive oil 1/2 teaspon salt 1 1/2 teaspoons chili garlic sauce (such as Lee Kum Kee) 1 (16 oz.) can cannellini beans or other white beans, drained. Place all ingredients in a food processor, and process until smoothe. Serve immediately, or cover and chill. Yield: 2 1/2 cups (serving size about 3 tablespoons edamame mixture) Calories: 61 , fat 2.5 g. (sat 0.4) protein 4 grams, carbs 6.1, fiber 1.2 |

Oh my that looks really good! Thanks Moni. I will have to try it for a veggie dip. The chili sauce may not be ok but you could sure stick something in there that could be!

Hi Sharon,
I was thinking the chili sauce would have to be replaced but like you said something could be swapped for that pretty easy. I was even thinking it might not even need to be replaced since I think this would be pretty flavorful even without it. I wanted to tell you that I am so inspired by your stats. That is amazing. I bet you feel so much better after losing so much weight! I want to feel better and of course look better but I think my thoughts on losing weight have changed. It's more geared towards health then looks. But the perk would be being slim and feeling more sexy Healthwise I think it's because I am seeing so many consequences of being heavy in myself, my husband and friends. |
