Anyone eat beet greens?
I used to put those canned, diced beets on my salads (love pickled beets too, darn it!). So I was wondering if the greens have a similar taste? Can you eat them raw? I would love to have that flavor in salads again.

I LOVE beet greens!
My fave way of preparing is to chop the greens with onion then saute both in broth until limp - say, 15 minutes - add a couple shakes of ume plum vinegar and serve. YUM!I've frankly never had them raw in a salad although I don't see why slicing up the tiny beets into a green salad wouldn't work. |

I'm not sure about this but I buy prepared salad greens that I think has baby beet greens as a part of the mixture. It's the organic spring mix. I really like it for all the different greens and use it when I make my salads.
