Back on the beach

I started back on the beach yesterday. Almost two days done, and I've done well thus far.

I do have a question about veggies. What are quick, easy to prepare and easy to get veggies, outside of the ordinary ones? I want to have more diversity in my veggie consumption.

Welcome back to the Beach! I like veggies that I can make in the microwave so I'm pretty much a broccoli and three cheese sauce kinda gal but I do enjoy making a pot of collard and turnip greens. Yummy. I also like cream spinach but try to stay away from stuff made with heavy whipping cream. Those are my favs. I'm sure you'll get other replies.

I'm not a big cook and I usually prefer raw over cooked veggies, but those are some good ideas.

Because of our erratic schedules, we use the bagged salad greens and bagged slaw mix a lot. You can also saute the cabbage for another type of taste. We use frozen broccoli for cooking and fresh broccoli crowns for broccoli salad. Frozen cauliflower for "fauxtatoes" and fresh cauliflower for "potato salad". Spaghetti squash is easy--cut it in half and bake til soft. We set the oven timer to start cooking so it is done when we get home. Boxes of grape tomatoes are ready to go. Pre-washed spinach. Snowpeas only take a couple of minutes to cook. We buy artichokes hearts and roasted red peppers in jars to add to salads. I confess to buying canned asparagus tips--that's the only canned veg. I buy. We live in a very rural area and don't have a great selection of interesting things.
