SBD Thanksgiving for one

Hi all,
The situation isn't as pathetic as the subject heading makes it seem . I have no family nearby but I've had a few offers to join friends for Thanksgiving. However, I've opted to do it on my own this year. I'm finishing up my master's degree in May and between final papers, gearing up for my master's thesis, and applying to PhD programs, I'm swamped. Since this is the only vacation time during the fall semester, I want to hole up in my apartment for 4 days getting things done.

That aside, I do want to do some kind of meal on my own, as SBD as possible. Here's some stuff I have planned but I need the help of those who are a little more saavy in the kitchen. I really want it to be a very bare bones toss-it-in-the-oven meal.

Turkey - I bought some turkey legs that I thought I'd jjust stick in the oven - but I have no clue what temperature to cook them and for how long - the package doesn't say anything - any suggestions???
Sweet potato - I bought some baby ones that I figured I'd bake in the oven and just eat with a little low fat sour cream and salt and pepper
veggie side - ??? I know there's some kind of traditional green bean casserole - is there a low carb SBD version of this?
cranberry sauce - I bought fresh cranberries but I have no idea how to prepare them for a low carb sauce. The pacage does have a pretty no brainer recipe for whole cranberry sauce that calls for boiling them in water and sugar and I figured I could substitute sweetener for the sugar (powder splenda and xylitol combined). But if there's another easy low carb way to make this, I'd love to get the recipe - I love cranberry sauce with my turkey!
Pumpkin pie - I'm not a big pumpkin lover, so I'm forgoing this. I'll probably just make Linda Sue's 3 minute cake with almond flour and some wheat germ

Any suggestions would be great!

And now that I've got your attention...

Just to introduce myself - I've been on these boards for quite a while and they've always been great. I reached goal (123) a few months ago but I've been having a hard time finding a maintenance plan I can live with. I did SBD for weight loss for a short time a few years ago and I liked it overall except at the time I was eating a lot of dairy and was too spoiled to give up my full fat dairy. Now I cut down on dairy a lot and actually enjoy the low fat cheeses and sour cream and yogurt (all except for the fat free half and half - that I just can't stand ) Right now, I'm really focused on maintaining what I have even though I gained 5 pounds. I figure if I continue to do SBD (Phase 2) then I'll eventually lose those on my own time and I'm in no hurry, as long as I don't go over 130. So far I'm loving SBD - adding beans and low fat yogurt seems to be satisfying me a lot more than what I was doing. I also love the option of fruit - I don't eat it often and only a serving a day when I do, but I like being able to have a small orange or apple if I need to grab a quick snack.

Anyway, I don't post too often because I'm so limited with time but I do lurk and I love reading everything on this board. .

mommymustdoit - thank you, this is a great link!

However, I'm still clueless about the turkey legs. Anyone have any suggestions for seasonings and cooking time/temperature?

This recipe sounds good. It will give you a general idea of the cooking time and temp, hope that helps.

4 turkey legs (about 12 oz. each)
1/4 c. lemon juice
2 tbsp. oil
1 tsp. dried oregano
1 tsp. dried basil
1 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper


Place turkey legs in a roasting pan. In a small bowl, combine lemon juice, oil and seasonings. Pour over turkey legs. Bake uncovered, at 375 degrees for 45 minutes or until lightly browned. Turn legs twice and baste occasionally. Remove from the oven

you know..I eat turkey legs all the time..I boil them for like 15 minutes & then season & bake in a pan for 30 to 45 minutes depending on how they look & keep turning them during the baking process..love them every time!!

Here is a recipe I love for cranberries. You can leave out the apple and/or orange.

Cranberry Relish
1 bag cranberries (wash, remove any that are soft)
3/4 c Splenda
1 box SF Jello Raspberry or Cherry
2 stalks celery, chopped small
1/4 c chopped walnuts
1 small apple
1 small orange

Put cranberries in food processor, or grinder. Chop fine. Chop apple and orange as well. Mix all fruits with the Splenda. In a separate bowl, mix Jello with the amount of hot water listed on box. Do NOT add the cold water. Mix in with the fruit. Add nuts and celery, and refridgerate till set. Enjoy!
