Mmmm...Beef Jerky Recipe and SB Cole Slaw

Ingredients: Marinade One3 lbs
lean beef London
Broil1 cup soy
sauce1 tablespoon
fresh ginger1
tablespoon garlic2
tablespoons brown
sugar twin
Marinade Two1 cup
worcestershire sauce1
tablespoon fresh garlic
-- or powder1
tablespoon onion
powder1 tablespoon
Black pepper1
teaspoon liquid
Barbecue Smoke?
How To Prepare: You can increase any of
these if you want more
flavor Trim excess fat
andslice 1/8 thick
across grain. Marinade
meat in mixture for 48
hours. Rotate
frequently. Drain and
patmeat dry Place foil
in bottom of oven for
drips, stretch meat out
on oven racks
Ovenno higher than125
degree and prop door
open with a wine cork,
or something that size
Remeber we aredrying
meat not cooking it turn
meat and rotate every
hour, should be done
in 4-6

This is an awesome recipe for you jerky lovers. We left the oven on for 5 1/2 hours and I'm thinking less would have been better. Just keep an eye on how dry the meat gets. We used Marinade One. We used olive oil spray to coat the racks to make them easier to clean. We have a ton...it'll be great to grab a couple pieces while running out the door! Looks just like store-bought jerky.

This one is from the South Beach Cookbook:
Overnight Slaw

1/4 - 1/2 cup sugar substitute
1/4 cup lemon juice
1/4 cup white vinegar
1 tsp celery salt (we only had celery seed and it worked fine)
1 tsp garlic salt
1 small head cabbage, shredded
3 ribs celery, chopped
1/2 green bell pepper, chopped
1/4 cup chopped fresh chives (our chives went bad, so we just chopped up some green onions)
1/4 cup sliced radishes

In a large bowl, whisk together the sugar substitute, lemon juice, vinegar, celery salt, and garlic salt. Add the cabbage, celery, green pepper, and chives and toss lightly. Cover and refrigerate overnight. Add the radishes immediately before serving.

Makes 4 servings
Per serving: 106 calories, 1g fat, 0g sat fat, 4g protein, 25g carbs, 5g dietary fiber, 0mg cholesterol, 685mg sodium

I thought this would be nasty - I'm not really into roughage. I was going to leave it all to DH to eat, but after taking a bite, I had to get a bowl! It tasted like normal cole slaw, just healthier. This is a Phase 1 recipe, but since we are in phase two, we shredded some small carrots into it. DH also mentioned he wished it was "creamier" (kind of like KFC's) and we tried it with a little bit of Bleu Cheese Dressing and it was AWESOME. Definitely a must-try and very easy.

Steph, those look really great. I am a Jerky love, stemming from hiking the AT. Brings back fond memeries for me. I'll give it a try, but will use my dehydrator

Stephanie, thanks for posting the recipes!

I have tried the overnight slaw & I like it too. I will have to try adding the blue cheese to it!

As for the jerky, it is good to have a recommendation. I also like to have jerky around for quick snacks or on-the-go meals. I'll have to give this a try. The issue will be keeping DH from eating it all!
